Hi friends!

I’ve been making these Graham Cracker Toffee Squares for as long as I can remember. They are a staple on every tray of Christmas cookie tray I make and I have a tin of them in my fridge for most of the month of December as I can’t resist making a new batch as soon as I run out.

This dessert is really nothing new. I’m sure a lot of you have made your own versions but over the years I feel like I’ve perfected mine and it seemed like it was worth sharing!

While I definitely wouldn’t call this healthy, it does use significantly less butter and sugar than most similar recipes and tastes just as good (in my opinion!).

Depending on who you ask, Christmas crack is actually a similar recipe made with Saltine crackers instead of graham crackers so if you think you’d prefer those as a base, you could swap them out in this recipe.

What toffee for graham cracker toffee bars?

I get a lot of questions about what toffee I use in this recipe and here’s what I buy: Heath Bits O’Brickle English Toffee Bits. They have them in the baking aisle at most grocery stores. You can pretty much use the whole bag for this recipe. Use one heaping cup on top of the graham crackers and sprinkle the rest on top once you add the chocolate.

I love topping mine with Christmas m&ms to make it festive but really you could top it with whatever you want. When my mom used to make it she would top it with slivered almonds and extra chocolate chips. I’ve also made with topped with extra toffee and chopped pecans!

This recipe is super easy to make nut-free. Just choose nut-free toppings like m&m’s, chocolate chips and extra toffee.

If my kids had their way, ours would also have Christmas sprinkles on it!

Speaking of kids….this recipe is so easy even toddlers can make it! So you’ve got no excuse not to try!

Ingredients

Scale
  • 12 – 14 graham cracker squares
  • 8 Tbsp butter
  • 1/4 cup sugar
  • 1 cup toffee pieces + extra for topping (I use the Heath Bits O’ Brickle Toffee Pieces in the baking aisle)
  • 2 cups dark chocolate chips
  • m&ms for topping

Instructions

  1. Melt butter in a microwave-safe bowl.
  2. Add sugar and mix well.
  3. Line a foil-lined large rimmed baking sheet with squares of graham crackers.
  4. Top with butter & sugar mixture and use a brush to coat all of the crackers.
  5. Sprinkle with toffee piece and bake at 350 degrees F for 8 mins.
  6. Remove from oven, sprinkle chocolate chips all over the top and eturn to oven for 2 minutes.
  7. Remove from oven and spread melted chocolate chips into an even layer over top of crackers.
  8. Sprinkle with extra toffee pieces and chopped m&ms.
  9. Let cool completely and break or cut into pieces and store in the fridge.

Try using different colors of candy to make this a treat for other holidays, too!

These Gingerbread Protein Balls are set to become your new favorite winter snack. There’s something so cozy about gingerbread and these snack balls will remind you of the best gingerbread cookie dough!

This recipe was originally shared on my blog several years ago by my friend Deryn from Running on Real Food and it’s one that I find myself coming back to every year or two in the winter months.

Healthy Gingerbread Energy Bites

These gingerbread energy bites are simple and delicious but also packed with nutrients! The best kind of snack if I do say so myself.

The molasses and ground ginger give them that classic gingerbread flavor and the cashew butter, protein powder and ground flax add some fiber, protein and healthy fats. They taste just like gingerbread cookie dough!

Gingerbread Protein Bites Ingredients

These protein bites require just a few ingredients so let’s review what you need:

  • Cashew butter – I like cashew butter for it’s mild flavor but you could also try these with almond butter or even peanut butter although the flavor profile might change a bit.
  • Protein powder – I use unflavored unsweetened Whey Protein Isolate from Promix but you could also make these with any vanilla protein powder.
  • Ground flax – this adds some fiber and healthy fats without changing the flavor.
  • Molasses – for that classic gingerbread flavor
  • Ground ginger
  • Cinnamon
  • Pinch of salt
  • Optional toppings to roll in – chopped pecans or walnuts, shredded coconut, mini chocolate chips

Making these energy balls could not be easier.

Just put all the ingredients in a bowl and stir until well combined.

Then use a Tablespoon to scoop, roll in to balls and roll in desired toppings.

If you don’t have or don’t want to use cashew butter, I would try almond butter. Cashew butter has a mild flavor so it doesn’t overwhelm the other gingerbread flavors. Almond butter and peanut butter have slightly stronger flavors but could still be used.

These energy bites are best stored in an airtight container in the fridge for up to week.

Hi Friends!

This recipe for homemade soft pretzels has been a favorite of ours since way back in 2013. I tend to make them a few times a year and now I’ve taught my kids how to make them as well.

They’re perfect for tailgating, parties, etc! They’re also mildly addicting so be prepared.

When I make them, I use either all-purpose flour, or half bread flour/half all-purpose flour. I’ve tried using some white whole wheat flour but don’t like them as much.

Soft Pretzel Recipe Ingredients

You don’t really need any fancy ingredients to make these! Just gather up:

  • Water
  • Sugar
  • Salt
  • Active dry yeast
  • Flour
  • Butter
  • Baking Soda
  • Egg

How To Make Easy Homemade Soft Pretzels

To make these pretzels, just follow a few simple steps:

  • Activate the yeast by mixing it with sugar and warm water and letting it sit.
  • Add salt, flour and melted butter until a dough forms.
  • Let the dough rest.
  • Divide the dough and roll into long ropes. Then shape into pretzels or cut into pretzel bites.
  • Boil the pretzels in a mix of baking soda and water.
  • Brush with an egg wash and bake in the oven.

Ingredients

Scale
  • 1½ cups warm (110 to 115 degrees F) water
  • 2 tsp sugar
  • 1 teaspoons kosher salt
  • 2¾ tsp active dry yeast
  • 22 ounces flour, approximately 4½ cups*
  • 2 Tbsp unsalted butter, melted
  • 10 cups water
  • ⅔ cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water

Instructions

  1. Combine the water, sugar and salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam.
  2. Add the flour and butter knead using the dough hook for about 5 minutes.
  3. Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 minutes or until the dough has doubled in size.
  4. Preheat the oven to 425 degrees F.
  5. Bring the 10 cups of water and the baking soda to a boil in a large pan.
  6. Divide into 8 equal pieces. Roll out each piece of dough into a long rope. Form into pretzels or cut into bite-sized pieces for a pretzel bites.
  7. Drop pretzels into the boiling water, a few at a time, for 30 seconds. Remove them from the water using a large flat spatula or a slotted spoon.
  8. Plan on a baking sheet, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle with salt or cinnamon & sugar if desired.
  9. Bake 12 minutes.

I use either all All Purpose flour or half AP/half bread flour.

No. The baking soda bath is a crucial step. Substituting baking powder will not give you the same results.

It’s the baking soda bath! This helps form a soft crust/exterior instead of them getting hard and crunchy when they bake in the often. The baking soda bath before hand keeps them soft and deliciously chewy.

Can you freeze homemade soft pretzels?

Yes. Let them cool completely, then wrap in saran wrap and place in a Ziploc bag. When you’re ready to eat them, let them defrost on the counter.

Can I freeze raw pretzel dough?

Yes! Just like you can freeze pizza dough before baking, you can do the same with pretzels. When you’re ready to use the dough, just thaw it out, divide and roll or cut into shapes and then do the baking soda bath and bake in the oven.

How do I store homemade soft pretzels?

If your house is anything like mine, you won’t have any left to store! But if you do, store in an airtight container for up to 3 days.

It has officially been almost 10 years since I first shared my family’s homemade fresh cranberry sauce recipe on the blog. It seems there are two camps of people when it comes to cranberry sauce – canned or fresh.

What Do I Need To Make Cranberry Sauce?

All you need to make this recipe is a few simple ingredients:

  • Combine sugar, water and white wine vinegar in a sauce pan and bring to a boil.

This sauce should stay good in the fridge for up to 2 weeks.

Does homemade cranberry sauce need to be refrigerated?

Yes. This sauce can be kept at room temperature up to 2 hours but after that it needs to be refrigerated and kept in the fridge when you’re not using it.

Can I use frozen cranberries?

Yes! This is one of my best tricks for enjoying this fresh cranberry sauce all year long. Stock up on cranberries when they go on sale around Thanksgiving and throw them in your freezer.

When you’re ready to make this sauce, you can thaw them before using or just throw them in frozen. If you use them straight from frozen it just may add a few more minutes to your cooking time.

Hi Friends-

Would you believe me if I told you that this sausage stuffing recipe used to be my least favorite part of Thanksgiving?

I avoided it for years for no good reason other than I wasn’t a very adventurous eater and it wasn’t until I was an adult that I discovered how delicious my mom’s Sausage and Wild Rice Stuffing actually is.

In the photos for this post and when I make this recipe, I use chicken sausage because it’s what I almost always have on hand.

However, the original recipe calls for regular pork sausage so you can definitely use that. Just sub 1 pound of pork sausage for the chicken sausage and make sure to cook it all the way through.

This stuffing is a bit non-traditional and it may seem intimidating if you’re not familiar with wild rice but I promise it’s worth a try.   • 4 chicken sausages, halved & sliced (or sub 1 pound ground pork sausage)
  • 1 tsp McCormick’s grill seasoning
  • salt & pepper to taste
  • 1/2 cup Craisins
  • 1/2 cup uncooked wild rice
  • 2 Tbsp fresh parsley, minced
  • 3–4 cup stale bread, cubed
  • 1/2 – 2/3 cup chicken broth

Instructions

  1. Cook rice according to package directions.
  2. Saute the leeks in the butter until soft.
  3. Add the apple, sausage, Craisins and seasonings and saute 5 minutes more. (If using ground sausage, cook until sausage is cooked all the way through)
  4. Stir in the cooked rice, parsley and bread cubes until well combined.
  5. Slowly add broth until all of the bread is moistened.
  6. Cook until heated through and serve warm.

Is this sausage and wild rice stuffing for turkey?

I do not cook this stuffing inside the turkey but you could if you want to. Just make sure if you’re using pork sausage that you cook that first before putting it into the turkey so that you’re certain it cooks all the way.

How to make wild rice stuffing with sausage and mushrooms?

This recipe does not call for mushrooms but you could certainly add them. Just slice them up and saute them when you add the sausage, apples and cranberries!

To make this stuffing recipe gluten-free, you have a few options. Either use gluten-free bread, or sub the bread for something like roasted sweet potatoes. And make sure your sausage is gluten-free if necessary.

This week we’ve been chatting a lot about lunch ideas because we’ve hit the point in the school year when the novelty of packing wears off and you might find yourself in a little bit of a packing rut! I already have several great resources for you if you need new ideas.

Why is protein important for kids?

Today we’re talking specifically about high protein lunches. If you’ve been around for a while, you know I often talk, as a Registered Dietitian and mom, about the importance of protein at meals and snacks.

Protein is important because it provides amino acids that help the body grow and develop. It helps repair and build muscle tissue. They also work as and build hormones, enzymes and more.

When kids don’t get enough protein it can lead to fatigue, decreased immune response, delayed growth and wound healing and more.

How much protein do kids need?

The good news is, in most cases, your child is probably getting more than enough protein to meet their daily needs.

Protein needs by age are the same for boys and girls through age 13:

  • Ages 2-3: 14 grams per day
  • Ages 4-8: 19 grams per day
  • Ages 9-13: 34 grams per day

So, for example, a toddler who needs 14g of protein per day could have a slice of toast (4 gram of protein), plus one scrambled egg (6 grams of protein) and half a glass of milk (4 grams of protein) for breakfast and they’ve already met their protein needs for the day.


High Protein Kids Lunch Ideas

So while it seems easy in theory, I am also a mom of 3 and know how challenging it can be to get kids to eat sometimes. Some kids don’t like breakfast. Lots of kids don’t eat well at dinner. Some kids are more selective than others.

I’m often asked for high protein lunch ideas. For my kids specifically, lunch is a great time for me to get a lot of protein and nutrients into their daily diet. Not all of them love breakfast and they’re usually starving at school so they tend to eat most of what I pack in their lunch box.

I’ve got 8 high-protein lunch ideas to share today. They each have at least 25 grams of protein. I’ve tried to give you the protein counts for some of the higher protein items so you can see the breakdown. And with protein totals this high, even if your child only eats half their lunch, they’re still getting a good amount of protein.

#1 Toddler Lunch Ideas – Waffles & Yogurt

  • Kodiak Cakes Waffles- I make these by mixing 1 cup Kodiak Cakes Pancake and Waffle mix with 1/2 cup plain Greek yogurt, 1/2 cup milk and 1 egg. It makes 4 waffles which means each one has about 13 grams of protein. You could put peanut butter between two waffle triangles to make a sandwich and add more protein
  • Greek yogurt – most Greek yogurt has about 12 grams of protein per 1/2 cup. Top it with some granola for even more protein
  • Blackberries – aprrox 1 gram protein
  • Cheerios- approx 2 grams protein

This lunch gives you about 28 grams of protein.

#2 – High Protein Cold Lunch Ideas – Sandwich, Egg & Cheese

  • Most brands of string cheese have 6 grams of protein
  • Hard-boiled eggs have 6 grams of protein so 1.5 eggs = 9 grams
  • Peanut butter and jelly sandwich – We use Brownberry Oat Nut Bread which has 4 grams of protein per slice. Peanut butter has 8 grams of protein in 2 Tablespoons so a sandwich with 2 slices of bread and 2 Tbsp peanut butter gives you 16 grams of protein.
  • Strawberries

This lunch provides about 31 grams of protein.

#3 Meal Prep Lunch Ideas – Pasta Salad

  • Pasta salad – There are lots of protein pasta options out there. This is Barilla Protein Plus which has 10 grams of protein in about 1 cup (but even regular pasta has 5-7grams). Plus an Al Fresco chicken sausage which has 9 grams and a chopped up cheese stick which has 6 grams. Finish it off with some cherry tomatoes and Italian dressing if you want and you have 25 grams of protein.
  • Clementine
  • Mini Larabar – This flavor and size has 3 grams of protein

This lunch provides about 28 grams of protein.

Easy Lunch Ideas for Kids – Turkey sandwich & cottage cheese

  • Half a turkey sandwich – This gives you about 9 grams from 2 slices of turkey + 4 grams from a slice bread + 6 grams from a slice cheese for a total of 19g
  • Cottage cheese – Most cottage cheese has about 13 grams of protein per 1/2 cup serving
  • Grapes
  • Animal crackers

This lunch provides about 32 grams of protein.

#5 – Cold Lunch Ideas for Kids – Tortellini

  • Cheese tortellini – 1 cup of cheese tortellini has 10 grams of protein
  • Trail mix – I used a mix of crunchy edamame (approx 5g protein) + a mini beef stick with 4 grams + cereal, goldfish raisins for another 2g which means this trail mix has about 11 grams of protein.
  • Ants on a log with 1 Tablespoon of peanut butter – 4 grams of protein
  • Peaches

This lunch provides approximately 25 grams of protein.


Cold Lunch Ideas for Kids - Tortellini

#6 – Protein lunch ideas – Egg wrap

  • Pepperoni and cheese egg wrap – You get 6 grams from the egg + 7 grams from 1/4c shredded cheese + some pepperoni for a total of 13 grams.
  • Mini bagel – This mini bagel has 8 grams of protein.
  • Carrots + 2 Tbsp hummus is about 2 grams of protein
  • Go Macro Kids bar has 4 grams.

This lunch provides approximately 27 grams of protein.

#7 – Kids Lunch Ideas For School – Chicken Nuggets

  • Chicken nuggets – There are 16 grams of protein in 5 chicken nuggets.
  • Lentil banana muffin – Approximately 4 grams of protein
  • Yogurt tube- This Stonyfield yogurt tube has 7 grams.
  • Wheat thins – 2 grams

This lunch provides approximately 29 grams of protein.

#8 – Protein Lunch Ideas – Overnight Oats

Today we’re talking specifically about sandwich ideas for lunch boxes. This is a highly requested topic and people are always looking for new ideas.

I think one of the most important things to remember is that a sandwich doesn’t have to be just two pieces of bread with peanut butter and jelly in the middle! Don’t get me wrong, there are tons of great things you can put in a sandwich to help introduce new foods to your kids but you can also expand to some sandwich alternatives.

Sandwich alternatives are similar to sandwiches but use things like:

School is back in session and for us that tends to mean a fair number of birthday party invites. Now that my kids are in elementary school and we’ve been to a few years of parties, I wanted to round up a list of some of our go-to present ideas.

I know the amount of money spent on gifts varies by family so I’ve tried to include a varitey of price points. Some gifts are up to $30 – maybe something you would gift a close friend, while others are under $10 and a great choice for a school classmate you may not know all that well. Most are around $15 – $20.

I’ve tried to provide a link for each option but remember that there are tons of different brands out there and that often things go on sale throughout the year. If you find a gift you like and are able to, stocking up on a couple of them when they go on sale can be a great option!

A few years ago I shared a post called 20 Easy Pumpkin Dessert Recipes {That Are Not Pumpkin Pie} and today I’ve got a new recipe to add to that list.

My mom has been making these Pumpkin Pie Bars for years and I will take them over pumpkin pie every time. She originally got the recipe from our neighborhood cookbook while I was growing up and I’ve made some tweaks and changes over the years to turn them into what I consider to be the perfect recipe.

The best thing about these pumpkin pie squares is the topping. The reason I don’t like pumpkin pie is because it’s too much pumpkin filling and not enough crust. These bars solve that problem by making a bit of a thicker crust and then adding a delicious top layer that pairs perfectly with the pumpkin pie filling in the middle.

Pumpkin Pie Bars Recipe Ingredients

The nice thing about this recipe is that the base of it is a box of yellow cake mix! Beyond that you just need a few simple ingredients. Here’s what you’ll need:

  • Boxed yellow cake mix – use whatever brand you want. I use King Arthur Gluten-Free Yellow Cake Mix to make these gluten-free
  • Eggs
  • Butter – you’ll need 1.5 sticks
  • Canned pumpkin – yes this recipe uses the whole can!
  • Sugar – both brown and white sugar
  • Evaporated milk – yes evaporated, NOT sweetened condensed milk
  • Cinnamon
  • Pecans – buy them chopped or chop them yourself. You could sub walnuts if you prefer

How To Make Pumpkin Pie Bars

There are three layers to these bars but they come together pretty quickly.

To start you’ll put your box of cake mix in a bowl, reserving one cup to set aside for the topping. Add some melted butter and an egg and then press the dough into a 9×13 pan lined with parchment paper.

Then, you can use the same bowl, combine pumpkin, eggs, brown sugar, evaporated milk and cinnamon. Mix it up and spread it on top of the crust.

Finally, mix the cup of reserved cake mix with sugar, nuts and softened butter and sprinkle on top.

Bake and let cool before cutting! You can serve these room temperature but my favorite way is to make them a day early, put them in an airtight container in the fridge overnight and then eat them cold. So good.

Ingredients

  • 1 box yellow cake mix (any brand)
  • 3 eggs
  • 1.5 sticks butter
  • 1 (15oz) can pumpkin
  • 1/2 cup brown sugar
  • 2/3 cup evaporated milk
  • 2 tsp cinnamon
  • 1/3 cup white sugar
  • 1/2 cup chopped pecans

Instructions

  1. Reserve one cup of the cake mix and set it aside.
  2. In a large bowl, combine remaining cake mix with one stick of melted butter and one egg.
  3. Stir until well combined, then press into the bottom of a 9×13 pan lined with parchment paper.
  4. In a bowl combine pumpkin, 2 eggs, brown sugar, evaporated milk and cinnamon. Stir until well combined.
  5. Spread in an even layer over the crust.
  6. In a small bowl combine 1/4 cup softened butter with remaining 1 cup cake mix, 1/3 cup white sugar and chopped pecans. Mix with a fork until crumbly. (It might look a little dry, that’s ok)
  7. Spread the topping evenly over the pumpkin pie filling layer in the pan.
  8. Bake at 350 degrees for 50 minutes.
  9. Let cool completely before cutting.
  10. Serve room temperature or refrigerate overnight and serve cold.
  11. Store in the fridge.

Easy Pumpkin Pie Bars FAQs

Are these gluten-free pumpkin pie bars?

If you use a gluten-free yellow cake mix, these bars will be gluten-free.

Can I substitute pumpkin pie filling for 100% canned pumpkin?

No, I would not recommend using pumpkin pie filling as it’s sweeter than canned pumpkin and might make this recipe overly sweet.

What’s the difference between canned pumpkin and pumpkin puree?

It’s the same. Canned pumpkin is pumpkin that has been pureed and canned.

Can I use sweetened condensed milk instead of evaporated milk?

No, I wouldn’t recommend it. Evaporated milk is just milk that has been heated to remove some of the water so it’s more concentrated. Sweetened condensed milk has sugar added to it and again it might make this dessert too sweet.

How to store pumpkin pie bars?

These bars should be stored in the refrigerator when they’re not being eaten.

Pumpkin pie bars warm or cold?

The temperature you eat these is your preference but I would recommend room temperature or cold – straight from the fridge is my favorite!

Hi friends!

I first wrote this post back in 2017 when instant pots were all the rage and honestly, I wasn’t sure how long the trend would last. But here we are years later and I can still honestly say that I use mine every single week. It’s great for cooking things like rice, hard-boiled eggs and shredded chicken but it’s also great for making full meals!

I know a lot of people are intimidated by their instant pot so I wanted to round up some recipe ideas for you to try!

The list below is a mix of both meat-based and vegetarian options – a list of instant pot dinner recipes healthy and flavorful – and I’m sure there is something for everyone. Hi friends!

This homemade pepperoni bread has been a big hit at our house so I wanted to share it with you today. This summer we perfected our favorite homemade pizza dough recipe and we discovered that we can use that recipe to make homemade pepperoni bread as well.

With tailgate season coming, this is an easy appetizer you can serve at parties and gatherings that’s guaranteed to be a hit with the whole crowd.

How Long Does It Take To Make Homemade Pepperoni Bread

The most time-consuming part of this recipe is making the homemade dough and even that doesn’t take that long because you don’t have to wait for the dough to rise.

But if you’re really short on time, you can grab some refrigerated pizza dough and use that.

Easy Homemade Pepperoni Bread Dough

When we make our dough we use bread flour, but you can use regular all-purpose flour as well.

To make the dough we just combine sugar and warm water, sprinkle some yeast on top and let it sit for 5 minutes.

Then mix in salt, oil and flour and let the mixer knead it up for a few minutes. This recipe makes 2 loaves so divide the dough in half. You can always freeze half for later!

Stretch your dough into a rectangle, layer on provolone cheese and pepperoni, brush with melted butter, sprinkle with herbs, bake and slice!

This homemade pepperoni bread is so delicious it’s guaranteed to be a hit at your next tailgate or party! If you’re short on time, use store-bought refrigerated pizza dough.

Ingredients

Scale
  • 1 cup warm water
  • 2 tsp sugar
  • 1 tsp active dry yeast
  • 1 tsp kosher salt
  • 2 Tbsp oil (I use avocado oil)
  • 3 – 3.5 cups bread flour (or AP flour)
  • 6 oz package of pepperoni
  • 20– 25 slices provolone cheese
  • 2 Tbsp melted butter
  • garlic powder and oregano for sprinkling

Instructions

  1. In the bowl of a stand mixer, combine sugar and warm water.
  2. Sprinkle yeast on top and let it sit 5 minutes.
  3. Add salt, oil and 3 cups of flour.
  4. Let the mixer mix for 3-5 minutes. Add flour 2 Tbsp at a time until dough is tacky but not sticky.
  5. Divide dough in half
  6. Spread one half of the dough into a large rectangle (10-12 inches wide).
  7. Starting on the short end of the rectangle, lay 2-3 pieces of provolone cheese and top with pepperoni.
  8. Fold the dough over and repeat on top of the layer you just folded over.
  9. Repeat 2-3 more times until you run out of dough, making sure to end seam side down.
  10. Repeat with the other half of the dough.
  11. Place loaves on a baking sheet, brush with melted butter and sprinkle with garlic powder and oregano.
  12. Bake at 400 degrees F for 20-25 minutes.
  13. Let cool 10 minutes, then slice and serve.

Can you freeze homemade pepperoni bread?

Yes, you have two options. You could make the pepperoni bread, let it cool, slice it and freeze wrapped in aluminum foil and placed in a Ziploc bag. Or you could make the dough, freeze half of it and just pull the dough out of the freezer when you’re ready to make a loaf of pepperoni bread.

Best cheese for homemade cheesy pepperoni bread?

This is going to depend on personal preference. For most people, the top choice is provolone. It has a smoky flavor that pairs well with pepperoni. We’ve also made it with havarti. Or you could try pepperjack to add a little kick!

Homemade pepperoni bread with crescent rolls

If you’re looking for an option using crescent rolls, try my Turkey and Cheese Roll-ups but swap pepperoni for the turkey.

Could you make homemade pepperoni bread sticks?

If you prefer, you could split the dough in half and then into 6-8 smaller balls, spread into a smaller rectangle and add a layer or two of pepperoni and cheese and then fold the dough over, ending seam side down so the shape looks more like individual bread sticks.

Hi Friends!

Everyone needs a pumpkin bread recipe easy enough to make quickly in one bowl. I first created this recipe when I was almost 41 weeks pregnant with my son because believe me, if there’s ever a time you need easy recipes, that is it.

How do I make chocolate chip pumpkin bread?

This recipe uses basic ingredients and comes out great every time. You need:

  • Melted butter – You can experiment with swapping some of the butter for oil or Greek yogurt.
  • Pumpkin puree – Be sure to use 100% pumpkin, not pumpkin pie filling
  • Eggs
  • Brown sugar – White sugar would also work
  • Cinnamon and vanilla – for flavor! You can also add some ground ginger if you like the taste.
  • White Whole Wheat Flour – you can sub a 1:1 gluten-free blend if needed

Just mix the wet ingredients in a bowl, add the dry ingredients until just mixed and bake!

What size loaf pan is recommended?

A standard loaf pan is typically 9x5x2 inches. Or slightly smaller at 8.5×4.5×2 inches. However, I personally like making mini loaves because they’re just so much more fun to eat. You can also give the second one away to a friend or stick it in the freezer! A standard mini loaf size is 5 x 3 inches. You can also use this bread batter and bake it as muffins for about 17-18 minutes at 375.

Are chocolate chips good in pumpkin bread?

How do you store pumpkin bread?

Let it cool completely before transferring to any sort of storage container. I store mine in a Ziploc bag but you can also wrap it in plastic wrap. Store on the counter for up to 5 days. However, since this bread is moist, I typically move mine to the fridge after about 3 days (if there’s any left!)

Can you freeze pumpkin bread? Is this a pumpkin bread that can be frozen?

Yes! It freezes great. You could easily double the recipe and freeze one for later. Let cool completely before freezing. I like to slice mine before freezing so I can pull out just a couple of slices at a time, but you can also freeze the full loaf intact. Cool, then wrap in plastic wrap and place in a freezer-safe bag to freeze.

What spices are in pumpkin bread? Can I use pumpkin pie spice?

I typically just use cinnamon but ginger also pairs really well. Or you could definitely try adding some pre-mixed pumpkin pie spice!

Why did my pumpkin bread fall in the middle after baking?

Typically this is either from filling your pan too full or letting your batter sit too long after mixing before you bake it. Make sure you wait to mix your ingredients until you can put the loaf in the oven right away!

How do you know when pumpkin bread is done?

Use a toothpick! Insert a toothpick into the highest part of the loaf and pull it out. If it comes out clean, the bread is done. If there is wet better or a lot of crumbs on the toothpick, it needs more time to cook.

Can these be pumpkin chocolate chip muffins?

Yes. You can easily use this recipe, make as directed and portion into muffin tins to bake. I would start checking them around 16 minutes and they will likely be done around 18 minutes.

How to store moist pumpkin bread?

I store mine in a Ziploc bag on the counter for a day or two. If you have any left after that, I would move it to the fridge so that it will not spoil as quickly.

Best Easy Pumpkin Bread Variations

Pumpkin Bread Cream Cheese

The pumpkin bread cream cheese pairing seems to be very popular. While I haven’t tried this myself, I’d imagine this is the perfect recipe to add a cream cheese swirl to! Just take a packaged of room temperature cream cheese and beat until smooth, then add 1/2 cup powdered sugar and beat again. Swirl into loaf before baking. Pumpkin Bread Vegan

This is likely not the best recipe to try to make vegan. If you really wanted to try, you could swap the butter for oil  or an oil/applesuace combo and use flax eggs but I think it would make it much denser. If you’re looking for a pumpkin bread vegan recipe, I would try this Vegan Pumpkin Bread from Well Plated.

Pumpkin Bread Gluten Free

You could easily make this recipe gluten-free by swapping King Arthur’s Measure for Measure Gluten-Free mix for the white whole wheat flour. I’ve done it myself and it’s great! Pumpkin Bread Healthy

This may not be the very best pumpkin bread healthy recipe you can find, it’s certainly not the worst. When I make it, I reduce the sugar from 2/3 cup to 1/2 cup. You can also experiment with replacing some of the butter with oil or Greek yogurt. I also always use white whole wheat flour vs regular white flour.

Pumpkin Bread Dairy Free

To make this bread dairy-free just swap the melted butter for 1/3 cup oil. Or try these Dairy-Free Pumpkin Bars!

I don’t have a recipe for pumpkin bread pudding specifically, but I do have this Instant Pot Gingerbread Bread Pudding (with an oven option) and you could easily add some pumpkin and take away the molasses and ginger!

To jazz things up a little, I made myself some cinnamon and sugar tortilla chips because they’re equally as easy and fun for dipping but you could also take a lesson from my two-year-old and just eat it straight out of the bowl with a spoon.

Ingredients

Scale
  • 1 cup plain yogurt (Greek or regular)
  • 3/4 cup pumpkin puree
  • 1/2 – 1 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 – 1/2 tsp ginger (ground,dried)
  • 1 – 2 Tbsp maple syrup

Instructions

  1. Combine ingredients in a small bowl.
  2. Stir to combine.
  3. Taste and adjust spices and sweetener if needed.

Notes

To make the Cinnamon and Sugar tortilla chips, cut whole wheat tortillas into triangles. Spray with oil or brush lightly with oil or melted butter. Sprinkle with cinnamon and sugar and bake at 350 for 12 min, flipping once.

To make this even easier, start with vanilla yogurt and skip the vanilla extract and maple syrup.

Be sure to use two baking sheets if necessary for the chips so you don’t crowd the pan. I only put the cinnamon and sugar on one side but you could certainly repeat the process once you flip them over if desired.


Pumpkin Yogurt Dip FAQs

Can I use pumpkin pie spice in this yogurt dip? What is a substitute for pumpkin pie spice?

Yes! Pumpkin pie spice is typically a mix of cinnamon, nutmeg, cloves and ginger. If you like those flavors, you could definitely swap the cinnamon and ginger for pumpkin pie spice!

To make your own pumpkin pie spice, try a ratio of 1/2 tsp cinnamon and 1/4 tsp ginger and nutmeg.

Can I make this a Greek yogurt pumpkin dip?

Yes! You can use whatever yogurt you want, whether that’s regular yogurt, Greek yogurt or a dairy-free alternative yogurt.

Can I use vanilla yogurt? Can I substitute cool whip?

Yes! My kids love when I swap plain yogurt for vanilla to add a little extra sweetness. If you do use vanilla, you can reduce or eliminate the maple syrup to cut back on the added sugar if you want to.

You could also try thawing coolwhip in the fridge and using that in place of yogurt!

If I use vanilla yogurt, do I still add vanilla?

It’s up to you! I love vanilla so I do still add vanilla extract when I use vanilla yogurt but you could try leaving it out, tasting it and then adding a little if you want to.

How to make this without the yogurt or cool whip?

If yogurt and cool whip are not available, you could try cream cheese. You could also blending in silken tofu.

Or you could go a different direction and try a mix of pumpkin puree, peanut butter and a chickpea base like this Peanut Butter Cookie Dough Dip.

Do you use pumpkin puree? Is it pumpkin puree or pumpkin pie filling?

This recipe uses 100% pumpkin puree, not pumpkin pie filling. Pumpkin pie filling has spices and sugar already mixed in. For a shortcut, you could try just mixing

Can you freeze pumpkin dip?

I would not recommend freezing this dip since it’s yogurt-based and then yogurt might crystalize and get watery when thawing.

Let’s talk about a super easy 20-minute dinner you can add to your repertoire this week.

Did you know one of the easiest ways to cook gnocchi is…baked on a sheet pan?

It’s true. Gnocchi isn’t just for boiling in water and this Sheet Pan Gnocchi with Sausage and Green Beans just might become your new favorite dinner. When I first tested it, I made it 4 times in two weeks. And it is so so easy. Literally, all you have to do is spend two minutes slicing up a few chicken sausages and green beans, throw it all on a pan and stick it in the oven.

What vegetables to use for sheet pan gnocchi?

I chose to use green beans but you could easily sub broccoli or even add a few extra veggies. If you’re a tomato fan, I’d suggest tossing some cherry tomatoes on the sheet as well. They burst open and add some juiciness.

Should I use store-bought gnocchi or frozen gnocchi?

I tested this with both shelf-stable and frozen gnocchi and both worked just fine and there’s no need to change the cooking time. Just be sure to add the green beans halfway through so they don’t get over-roasted and stay crisp-tender.

Should I use potato gnocchi or cauliflower gnocchi?

I would not recommend using cauliflower gnocchi with this recipe. I don’t have much experience with it, but from what I understand, you need to cook it a little differently than regular gnocchi and I’m not sure how well it would work with the sheet pan method.

What sauce for sheet pan gnocchi?

I tried this recipe with a couple of sauces. My favorite was drizzling everything with balsamic vinegar after it was done and sprinkling with parmesan. You could also toss it in some marinara when it comes out of the oven, or serve marinara on the side for dipping. If you want to trend away from the Italian version, try using spicy chicken sausage and top your bowl with some of my spicy green sauce.

Ingredients

Scale

1 pound gnocchi (shelf stable or frozen)
4 fully cooked chicken sausages, sliced
1/2 pound (about 2 cups) green beans, cut to bite-sized pieces
3 Tbsp oil (i use avocado oil)
salt and pepper to taste
optional- sprinkle of oregano or italian seasoning
Balsamic vinegar and parmesan cheese, to taste

Instructions

  1. Put gnocchi and chicken sausage on a large sheet pan. Drizzle with oil and stir until well coated. Sprinke with seasonings.
  2. Bake at 425 degrees F for 10 minutes.
  3. Remove sheet pan and add green beans to the pan. Stir everything and add a little extra oil if desired.
  4. Return to oven for another 10 minutes.
  5. Plate, drizzle with balsamic vinegar and top with parmesan (or desired sauce) and serve.

Notes

You could sub broccoli for green beans or add cherry tomatoes. If using tomatoes, add them to the pan at the beginning.

For additional sauce options, try tossing or dipping in marinara or going with a spicy sausage and adding a spicy green sauce before serving.

Sheet Pan Gnocchi FAQs

What kind of gnocchi goes into sheet pan gnocchi?

I use traditional potato-based gnocchi for this recipe. Any shelf-stable or frozen brand you can find at your local grocery store should work. I’ve also made it with gluten-free varities – I like this Gluten-Free Gnocchi from DeLallo.

Can I bake gnocchi without boiling it first? {AKA Do you have to boil dried gnocchi?}

Yes you can add this straight from the box onto the sheet pan! You do not need to boil it first. I know it seems weird to think that this pasta-type food will cook in the oven without boiling it in water but I promise it works!

What’s the difference between gnocchi and pasta?

Gnocchi is usually made with mashed potatos, flour and eggs (and sometimes cheese). Pasta is usually made with just flour and water.

Do I need homemade gnocchi or will using shelf stable or store-bought gnocchi work well also?

You do not need homemade gnocchi for this recipe. I always use store-bought. But if you’re looking for a homemade recipe, here are a few to try:

Would you use hot or sweet Italian sausage?

For this recipe, you need sausage that’s already fully cooked. So if you’re buying traditional italian sausage, you may need to cook it first and then slice it up and put it on the sheet pan. Either hot or sweet would work depending on your preference!

Sheet Pan gnocchi with chicken?

If you wanted to make this with regular chicken, I would probably cook the chicken separately or use leftover chicken and just mix it with the gnocchi and vegetables after they’re cooked.

I first shared these Egg Waffles almost 10 years ago and they’re still just as fun and clever as they were back then. It’s like all the goodness of an omelet, in a form of an egg waffle that you could eat with your hands if you really wanted to….and you don’t have to fight the never-ending battle with eggs sticking to a pan. 

I mean, does it get much better?

When I make mine I usually include:

  • Chicken sausage – but any kind of breakfast sausage will do. 
  • Chopped veggies – peppers and onions are my go-to.
  • Cheese – totally optional

How To Make Cheese and Egg Waffles Easy

These egg waffles are SO easy. They’re ready in under a minute. Just quickly spray your waffle maker with oil or rub a stick of butter across the top and bottom and there’s no messy pan to clean up!

Here’s how you make them:

  • Whisk 2 eggs in a bowl until well mixed.
  • Heat your waffle iron and grease with spray or butter.
  • Pour eggs onto waffle iron.
  • Add any toppings – sausage, chopped veggies, pepperoni, cheese etc.
  • Close the waffle iron. Cook 1 minute and remove.

Instructions

  1. Grease waffle iron and heat to medium setting.
  2. Crack 2 eggs in a bowl and whisk to combine.
  3. Pour eggs into waffle iron.
  4. Top with sausage, veggies and cheese.
  5. Shut waffle iron and hold firmly closed for about 15 seconds.
  6. Let go and let cook for another 30-45 seconds.
  7. Open and remove with a fork.
  8. Repeat as many times as desired.

I didn’t include quantities because you can make as many as you’d like. Just use two eggs per “waffle”, add whatever mix-ins you want and cook for a minute or so.

Make sure your waffle iron is clean so there aren’t crumbs for the eggs to stick to and make sure to oil it beforehand like you would if you were making regular waffles.

As long as I lightly oiled the waffle maker beforehand, these didn’t stick at all, making cleanup a breeze!

Can you make egg waffles ahead of time?

If you don’t mind reheated eggs – ie if you’re someone who could make an egg casserole and eat it all week long, you could change things up and make a big batch of these and reheat all week long for breakfast!


Egg Waffles/Eggs Cooked in a Waffle Iron FAQs

What is an egg waffle vs regular waffle? {Aka What are egg waffles?}

Traditional waffles are usually made with some type of flour. Similar to pancakes, they are made with batter but instead of being cooked on a flat griddle, they are cooked in a waffle iron to give them their traditional shape, size and texture.

Egg waffles are made using a waffle iron to cook eggs instead of cooking them in a pan or in the oven. This transforms eggs into a traditional waffle shape without requiring any hands on cooking time (ie when you scramble eggs or cook an omelet in a pan.

What are egg waffles made of?

Egg waffles are naturally gluten-free because they are made with just eggs. The batter is not made with flour, etc like traditional waffles. Using eggs as your base, you can add additional mix-ins, similar to the way you add things to an omelet.

What do egg waffles taste like?

To me, egg waffles taste similar to an omelet, especially if you add things like cheese, sausage and vegetables like you would traditionally see in an omelet.

What is the difference between egg and Belgian waffles?

Egg waffles are made with just eggs. Belgian waffles are a type of traditional waffle made with extra deep pockets. They often require a specific Belgian waffle maker to make.

What kind of waffle maker do you need for this egg waffle recipe?

For egg waffles, I would not recommend a Belgian waffle maker. Any standard waffle maker should be fine for making egg waffles.

What is the best temperature for making this waffle?

I typically set my waffle iron to a 3 or 4 (out of 5) on the temperature options. You don’t want to set it on the very highest heat as it will make the eggs too crispy and they may burn, especially if you add cheese.

Can I use egg waffles for baby led weaning?

Yes! These would be a great option for baby led weaning. Pair them with my Sweet Potato Banana Muffins or my Carrot Oat Bars for an easy, baby-friendly meal.

Adding egg to waffle mix adds a bit more protein, imparts a chewier texture and helps with browning.

What is the secret of making good waffles/crispy waffles?

Try adding some cornstarch! This can help you get waffles that are crispier on the outside and soft on the inside. You can also try whipping egg whites with a hand mixer and adding those to the batter. This adds extra air and helps make them fluffy!

After School Afternoon Snacks FAQs

Should kids have a snack after school? Why are after school snacks important?

Yes! In most cases, kids should have a snack after school. Especially since my kids have started elementary school, I’ve realized just how early some kids are eating lunch? In our schools, lunch periods start as early as 10:45am and they don’t get home from school until almost 4:00pm.

If your child has an early lunch period, they’ll likely be very hungry when they get home. This can also lead to a tricky situtation depending on when you eat dinner. If you eat on the early side, around 5:00pm, there’s really not that much time before dinner, but it’s likely that your kids will be too hungry to make it even one more hour until dinner time without eating something.

What can you give them that won’t ruin their dinner? Aim for a small snack that has a mix of protein and carbs- half a sandwich, a cheese stick and an apple with peanut butter etc. This is also an excellent time to set out vegetables! Kids are most likely to eat them when they’re truly hungry 🙂

If you eat dinner later, I would aim for a bigger snack – perhaps a whole sandwich, a smoothie or muffin with yogurt.

What is the healthiest after school snack?

You can serve the healthiest snacks possible after school but if your kid refuses to eat it, it’s not really doing anyone any good. Part of being a parent is striking a balance between serving healthy options and serving foods your kids will actually eat so they’re getting the nutritional benefits.

My best advice is to aim for variety. Don’t serve the same after school snack every day. Aim to include vegetables but don’t serve just vegetables all the time. Aim for a balance of protein, healthy carbs and some fat or fiber to keep them happy and satisfied until their next meal.

How big should an after school snack be?

This will vary based on a lot of individual factors – when they ate lunch, how old they are, when dinner is being served, whether or not they have a sports practice or other activity to go to before dinner so it may take some experimenting to find what works for your family.

Smoothies can be whipped up in just a minute or two in a blender. Grabbing a slice of turkey and cheese and pairing with crackers makes a quick, well-balanced snack. A bowl of cereal with milk can be a great quick option as well.

This list of healthy store-bought granola bars for kids comes highly requested as a lot of people are looking for healthy granola bars for kids and quite honestly has really been a labor of love. I spent hours looking at the nutrition labels of various granola and snack bars on the market, analyzing the label, reading the ingredients and researching all the options. And believe me, there are A LOT of bar options out there.

While I typically don’t recommend a bar every single day, I recognize that they’re convenient and that there are some nutritious options out there that can fit nicely into a child’s diet. So I did my research and wanted to help cut through the clutter and give you some good options.

Healthy Snack Bars For Kids

Similar to what I discussed in my Lower Sugar Cereals for Kids guide, for posts like this, there has to be a cutoff. Otherwise, the list would be too large and overwhelming. Similarly, this is not an all-inclusive list. There are just too many options out there to cover them all.

Are granola bars healthy? Are there any healthy granola bars?

So what are the best granola bars for kids? Are there any out there that aren’t just glorified desserts? I think so! Here are the criteria I used for my list:

Grams of sugar per granola bar:
7g or less added sugar

Previously, companies didn’t have to indicate how much of the sugar on the label was added so it was sometimes hard to tell how much was sugar was naturally occurring from things like fruit versus added sugar.

Updated nutrition labels break out the amount of added sugar so that’s what I focus on instead of total sugar. In addition, you can look at the order of ingredients in the ingredient list. If sugar is listed before fruit, you can assume that more of the sugar is added.

At least 2 grams of each

Note that fiber can come from oats, fruit, nuts/seeds, but in some bars, it is added in the form of inulin, chicory root etc. Similarly, protein can come from whole ingredients or it can be added in the form of whey protein, egg powder, etc.

I did my best to choose bars with ingredients I think are wholesome. Is every single ingredient in each bar on this list perfect? No. But overall, I feel like the ingredient lists are good. If you’re overly concerned with ingredients, you may be better off making your own bars at home!

Many of the bars on the list come in multiple flavors. For this list, I’ve picked one flavor of each. Remember that sometimes other flavors might have differences in ingredients, amount of sugar, etc. You can compare nutrition labels and ingredients between flavors on the websites.

If you like a brand or bar that’s not on my list, it might be because it has more than 7g added sugar per serving. Those bars are fine to eat, I would just recommend treating them a little more like sweet treat due to the amount of added sugar. 


Here are a few where the ingredients are fine for the most part but I don’t really feel like they’re worth eating. They’re quite low in calories and don’t really offer anything in the way of fiber or protein so they won’t be very satisfying or have a lot of staying power unless paired with another protein source:

Are granola bars good for you? What are the benefits of granola bars?

There are certainly granola bars out there that can be good for you. Like anything else, a lot depends on the ingredients. Granola bars can often be marketed as a healthy choice, especially for kids, but if you look at the nutrition facts and ingredients you’ll see that they’re often fairly low in protein and fiber and high in added sugar.

In my opinion, many granola bars on the market are more of a dessert-like treat than a filling and nutritious snack but there are some good options for you especially those that contain oats for fiber, nuts and seeds for healthy fats/protein and are sweetened more with fruit than added sugar.

Is it ok to eat granola bars every day?

Again it depends which bars you’re choosing. If you can find one with a solid nutritional profile, it can be a great snack but just like anything else I recommend focusing on a varied diet and trying to incorporate a variety of healthy snack options throughout each week.

Is it ok to eat granola bars for breakfast? Can granola bars replace a meal?

For most people, especially kids, a granola bar is not enough to be a complete breakfast. However, you could pair a healthy granola bar with a cheese stick or cup of yogurt and a piece of fresh fruit to make a balanced breakfast or light meal!

How long can you store granola bars?

Granola bars are a great shelf-stable option to keep in your pantry. They last for months and don’t need to be refrigerated. Store them in a cool, dry pantry until the expiration date on the package.

Are KIND bars healthy?

KIND bars are some of my favorite granola bars to recommend for adults. They have some great low sugar options but some also have large pieces of nuts that can be hard for younger children to eat. But they also have some options that are more grain-based and chewy options that are easier for kids – as recommended above. They also have some great gluten-free options if that’s something you need.

Are oat bars healthy? Are oat bars good for digestion?

Oats are a nutrition powerhouse and can be a great addition to your diet. They’re a whole grain protein, source and also contain vitamins, minerals and soluble fiber which can help with digestion.

Is a granola bar a healthy late-night snack?

In most cases, I would recommend pairing a granola bar with a protein source to help keep blood sugar from spiking, especially before bed. Have one with a glass of milk, slice of turkey or a cheese stick for a more balanced late night snack.

Cottage cheese is having a moment right now if you haven’t noticed and lately, I’ve been making these cottage cheese egg muffins that I first developed back in 2013. They’re still just as good as I remember.

Cottage Cheese Egg Muffins

These are similar to traditional egg muffins, but instead of being all egg, I mixed in some cottage cheese to change things up! You can just mix the cottage cheese in as is, but I’ve also discovered that if you don’t love cottage cheese, blending it up first to make it smooth it an easy trick. I actually use an immersion blender to to blend my cottage cheese and eggs together.

How To Make Egg Muffins with Cottage Cheese

The nice thing about these muffins is that they’re super easy to customize so here’s how I make them:

  • Mix or blend cottage cheese and eggs together until well-blended.
  • Add mix-ins. I like to use leftover chicken, chicken sausage or bacon or even beans and then add cheese and whatever veggies I have on hand. Peppers, onions, chopped kale, mushrooms etc work well.
  • Pour the mixture into silicone muffin tins and top with more cheese if desired.
  • Reheat as needed.

Ingredients

Scale
  • 1 cup diced vegetables (peppers, mushrooms, green onions, etc.)
  • 1/2 cup cooked chicken, bacon, chicken sausage or beans
  • 1 c kale, finely chopped
  • 6 eggs
  • 3/4 cup cottage cheese
  • 1/2 c cheese, optional
  • Optional seasonings- salt, pepper, paprika, cayenne pepper, Montreal Chicken Seasoning, etc.

Instructions

  1. Combine eggs, cottage cheese and cheese in a large bowl. Blend the eggs and cottage cheese first if you want to.
  2. Stir in meat/beans and veggies and season as desired.
  3. Spoon into a well-greased muffin tin. I fill my tins pretty full and usually make about 9 muffins.
  4. Bake at 375 degrees for 25- 30 minutes or until eggs are set.

These are really easy to make and keep well in the fridge so they can be reheated throughout the week. To make these Cottage Cheese Egg Muffins kid-friendly, ie something my kids might consider eating, I’d leave out the kale, replace chicken with chicken sausage and add just a few pieces of red pepper and maybe some peas.

Can I just do egg whites?

I wouldn’t recommend doing just egg whites since that yolks add some healthy fats and flavor but you could do a mix of a couple whole eggs and some additional egg whites.

Are cottage cheese egg muffins low-carb?

Yes, these muffins would be considered low carb. Cottage cheese has about 5g of carbs per 1/2 cup serving.

Does the kind of cottage cheese you use matter?

You’re welcome to use full-fat, low-fat or fat-free cottage cheese. I always recommend looking for a lower-sodium brand out of the ones that are available to you.

Can I make mini egg muffins?

Absolutely! Feel free to make your egg muffins mini-sized. You’ll just need to reduce the cooking size.

Is it safe to reheat egg muffins?

Yes! You can prep a batch of these ahead of time and microwave a couple of egg muffins each morning.

Could you use ricotta instead of cottage cheese?

I haven’t tried it myself but yes, you should be able to sub ricotta cheese for cottage cheese.

Since it’s summer, more and more questions are coming in about popsicles. Which ones are best? Do they have too much sugar? What should I be looking for?

So I figured now was the perfect time to share some of my favorite popsicle brands for the next post in our best of store-bought series.

So, let’s talk about popsicles. Most traditional popsicles contain very little real fruit and often have 20+ grams of added sugar, which is a lot.

One of my favorite recommendations to make is to tell people to grab some popsicle molds and make their own using 100% fruit juice. That’s what I usually give my kids and they love them!

You can also look for lower-sugar yogurt tubes like Stonyfield or Siggis and freeze them for an easy frozen treat! We always have these in our freezer as well!

While these are both great options, I’m also a realist and know that often store-bought popsicles can be more convenient for people so here are some of my favorites that you can find at the store.

I often get asked why there are gums like guar gum and xantham gum in popsicles. This isn’t something I worry too much about. They’re used as stabilizers and they help make the texture of popsicles a little less icy and more creamy by preventing the formation of ice crystals.

While there’s nothing wrong with a good old-fashioned popsicle every once and a while, if you’re looking for an option to eat more frequently, here are a few options you can find at the store that contain no added sugar.

Deebees Organic SuperFruit Freezies – These are made with just juice, fruit puree and guar gum. They contain no added sugar. Deebees also makes gelato pops with coconut milk and fruit juice that contain just a few grams of added sugar and are also a great choice!

Goodpop

Goodpop Freezer Pops – Goodpop has several options (shown above) made with 100% fruit juice and guar gum. They use things like spirulina and carrot juice for color and contain no added sugar. Be sure to check the label because they also have some options with added sugar.

Most store-bought popsicle brands contain 21-23 grams of added sugar. Here are a few with less than 12 grams of added sugar that don’t contain stevia, artificial sweeteners etc. While these should still be treated like dessert, they do contain less added sugar which I love and are made with fruit, fruit puree and fruit juices.

Jonny Pops Strawberries & Cream Frozen Fruit Bars – made with fruit, heavy cream, cane sugar, water and salt, these have 9g added sugar and come in several flavors. They also make a dairy-free version with oat milk. They also have some more traditional varieties that don’t contain cream and have 10-13 grams of added sugar.

**They also make freezer pops with 5g of added sugar but they are sweetened with stevia which is personally not my first choice.

Outshine Fruit Bars – These are made with fruit purees, water, sugar, fruit juice, malic acid, guar gum, natural flavor, vit C, carob bean gum. The single pop variety shown above has 8g of added sugar, while the rectangular ones have 10-12g of added sugar.

**Their no-added-sugar variety is not my first choice because it is sweetened with things like sucralose.

Deli Meat FAQs

Before I get to brand recommendations, let’s address some of the most common questions I get related to deli meat:

What are processed meats?

Processed meats include things like deli meat, sausage, hot dogs, pepperoni, beef jerky etc.

Reasons to limit deli meat consumption:

  • Links to cancer: High consumption of processed meats has been associated with increased risk for some types of cancers such as stomach and colorectal cancers
    • The preservatives often used in processed meats contain cancer-causing substances such as nitrates and nitrites, heterocyclic and polycyclic amines which are produced when meat is cooked at very high temperatures
  • Saturated fat: Many deli meats, especially ham, salami, roast beef and bologna, are high in saturated fat which is linked to increased risk of types of cancer, heart disease, diabetes, and obesity
    • You can help limit saturated fat content by choosing lean cuts of deli meat like turkey breast, chicken breast, and some hams.
  • High sodium: Deli meats can be very high in sodium which can increase the risk of high blood pressure/heart disease, diabetes, cancer, and obesity
    • Aim to choose low/lower sodium deli meats when possible. You can also seek out fresh deli meats at your local grocery store deli counter. They’re often lower in sodium and don’t contain nitrates/nitrites often found in packaged deli meats. 

This doesn’t mean you have to eliminate deli meat from your diet but my best recommendation is to limit consumption to a couple of times a week or less!

Ingredients to avoid in deli meat:

  • Nitrates/Nitrates– While these are not carcinogenic themselves, they can create compounds (like nitrosamine compounds) that are carcinogenic, especially when deli meats are heated.
    • Sodium nitrate is an ingredient commonly used in deli meat.
  • Excess sodium – This typically means greater than ~450mg per serving

How To Approach Eating Processed Meats

  • Aim for less than 5 ounces of processed/deli meats per week
    • Deli meat slices typically vary from 1-3 ounces depending on how thinly they’re sliced
  • Try to choose fresh deli meat instead of pre-packaged when you can
    • Local grocery stores have fresh deli meat available which is typically less processed and lower in nitrates and sodium 
  • Choose low-sodium deli meats when possible
    • And be sure to note the portion size when eating!
    • Pairing high-sodium foods with plenty of water and potassium-rich foods helps too
      • Ex: add avocado to your sandwich, add fruits such as banana, cantaloupe, or oranges with your meal or have a side of potatoes (try some roasted potatoes or a baked potato)
  • Chose Nitrate/nitrite-free deli meat
    • Usually labeled  “Uncured”

So let’s review some of my favorite brands of deli meat to choose from when you’re out shopping:

Chicken Breast is a great lean meat that is low in saturated fat and typically lower in sodium. A couple of my favorite brands are: 

  • Plainville Farms Oven Roasted Chicken Breast (10g protein, 0.5 g fat, 470mg Sodium)
  • Dietz & Watson Chicken Breast (10g protein, 1.5g fat, 340mg Sodium)
  • Applegate Naturals Oven Roasted Chicken Breast (10g protein, 1g fat, 290mg Sodium)

Turkey, like chicken, is also a lean deli meat, low in saturated fat, and often lower in sodium. These are just a few of our favorite brands that are sure to be a hit for your next sandwich! 

  • Dietz & Watson Presliced Organic Roasted Turkey Breast (12g protein, 0.5 g fat, 390mg Sodium)
  • Plainville Organic Pre-Sliced Oven Roasted Turkey Breast (13g protein, 0g fat, 300mg sodium)
  • Good & Gather All Natural Turkey Breast (10g protein, 1.5g fat, 350mg Sodium)
  • Applegate Naturals Oven Roasted Turkey Breast (11g protein, 0g fat, 250mg Sodium)

Deli Meat Ham

These brands are a great option if ham is your sandwich meat of choice. These are low in saturated fat and high in protein. Ham does tend to be higher in sodium than turkey or chicken so just be sure to check your nutrition label if have a sodium-restricted diet.
