Hi friends!

Today we’re setting aside the Instant Pot and slow cooker and diving face first into a super simple oven-baked sheet pan meal! If you want to get technical, this actually requires two sheet pans – one for the meatballs and one for the sweet potatoes, but you bake them at the same time so it’s really easy.

Meatballs are one of my favorite dinner options. My husband likes them, my kids devour them and there are so many different flavor options – I make these Slow Cooker Meatballs (or Instant Pot) all the time and these Thai Chicken Meatballs are one of my favorites for food prep.

Best of all the basic recipe is just so simple. Today’s version is a pork meatball that then dipped in bbq sauce and baked. I paired them with roasted sweet potato rounds because I love that flavor combo and added some steamed broccoli but you could certainly change things up and skip the potatoes, serve with rice or cauliflower rice and throw some broccoli in to roast halfway through. The possibilities are endless!

I chose sweet potatoes because I knew if I sliced them fairly thin, they would cook in about the same amount of time as the meatballs.

So that’s basically all there is to it. Mix up the meatballs, dunk them in some sauce, slice a couple sweet potatoes and boom! Dinner is served. My kinda meal 🙂

Ingredients

Scale

Meatballs:

  • 1.25 pounds ground pork (or any ground meat)
  • 1/2 cup finely diced onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 cup bbq sauce

Sweet Potatoes:

  • 2 medium sweet potatoes
  • 1 Tbsp oil
  • paprika
  • cayenne pepper (optional)

Instructions

In a large bowl, combine ground meat, onion, garlic, egg and breadcrumbs and mix with hands until well combined. 

Form into balls. (I usually make 12-14). 

Place bbq sauce in a small bowl. One at a time, dip meatballs in bbq sauce and turn until well coated. Place on greased, foil-lined baking sheet. 

Slice sweet potatoes fairly thin. I usually aim for about 1/4 inch slices. Place in a large bowl, add oil and toss to coat. Spread in a single layer on a foil-lined baking sheet. Sprinkle on both sides with paprika (and optional cayenne pepper). 

Place both baking sheets in oven and bake at 400 degrees for 10 minutes. Remove trays one at a time and flip sweet potatoes and meatballs. Bake another 10 minutes or until meatballs reach 165 degrees. 

If desired, you can bake the sweet potatoes an additional 5 minutes to get them a little more “roasted” but they should be fine either way. 

Serve with additional bbq sauce for dipping!

Notes

If you like curry powder, the sweet potatoes also taste great sprinkled with curry powder before roasting.

If you don’t like rounds, you could dice the sweet potatoes instead and just stir them halfway through.

My ground pork comes in 1.25 pound packages. You could easily use 1 pound or up to 1.5 pounds depending on your package size.

Piece of cake, right? As mentioned in the notes, you could easily swap in other veggies if desired. And I used 1.25 pounds of meat because that’s how my pork came packaged. Any package from 1-1.5 pounds should work just fine.

Another note, I often add a couple Tbsp of chia or hemp seeds to my meatballs to boost nutrition. Totally optional but you don’t taste them so I think it’s worth trying if you have them on hand!
