So I kinda took the past couple weeks off Bean Bytes. This seems to happen every year because I’m not really a fan of all of the 2015 recap and 2016 goal posts. It’s nothing personal….I just tend to skip over most of them.

Happy New Year. It’s good to be back! I took the past couple of weeks off and it was AMAZING. It’s the longest true break I’ve taken since I started blogging 5.5 years ago and I didn’t realize how much I needed it. I did pop in a couple of times – I shared my new favorite way to use leftover pork in this Pulled Pork and Apple Tostada, I recapped our trip to Chicago for Christmas, I shared what Squish has been up to since his birthday in this Dear Chase – Months 13 & 14 letter and I suggested 5 Things To Add To Your Diet in 2016. So, be sure to check those out if you missed any of them. Since I had some time off from my work for Regan and I wasn’t spending time blogging or social media sharing, etc., I actually had a blast in the kitchen! I tested and photographed all sorts of delicious recipes to share with you guys over the next few weeks!

To kick things off, I thought I’d share this Paleo Breakfast Casserole that Squish and I have been eating for breakfast for the past several days. Squish is in a phase where he needs breakfast IMMEDIATELY when he decides he’s hungry in the morning so it’s nice to have something like this on hand that I can quickly slice, reheat and serve in about 2 minutes.

Packed with vegetables, this Paleo Breakfast Casserole with Chicken is a simple and delicious recipe. Serve it for brunch or make it on Sunday and reheat a slice every day for breakfast during the week.

I usually gravitate towards sausage for breakfast but this time, I opted to use chicken. I threw in lots of veggies, included a spiralized sweet potato, which cooks a lot faster than chunks of sweet potato. It’s naturally paleo and gluten-free and you could easily customize it with your favorite veggies.

If you’re not worried about keeping this paleo, feel free to add some cheese! I’ve been topping mine with avocado and sweet potato (#whatelseisnew?).

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: serves 6

Ingredients

Scale
  • 2 cloves garlic, minced
  • 1/2 cup onion, diced
  • 1 red pepper, diced
  • 2 strips bacon, diced
  • 1 pound chicken, diced
  • 1 large sweet potato, spiralized (2–3 cups)
  • 2 cups spinach
  • 1/2 cup water or broth
  • 1 tsp paprika
  • 1/2 tsp cayenne (optional)
  • 1 tsp salt-free all-purpose seasoning
  • 6 eggs

Instructions

  1. In a large pan, saute garlic, onion, peppers, bacon, chicken and sweet potato until chicken is cooked through. Add spinach, water and seasonings and cook another 3-5 minutes.
  2. Transfer mixture to a greased 9×9 pan.
  3. Whisk eggs together in a bowl and pour over mixture in pan.
  4. Bake at 375 degrees F. Check after 20 minutes and cover with foil if necessary. Cook an additional 10 minutes or until eggs are set.

You could also make this as individual egg muffins. Just divide the veggie/chicken mixture into greased muffin tins, pour eggs over top, and reduce the cooking time.

This is a super easy, protein-packed breakfast that makes it easy to get a few veggies in to start your day! The fact that it can be made ahead of time is an added bonus!

Christmas 2015

Hi Friends!

Remember me? I used to blog here 🙂 Turns out I decided to take a little holiday break. I’ve barely opened my computer since last Tuesday and it’s been glorious. So glorious in fact, that I’ve decided to keep it up this week.

Don’t worry, I”ll be busy in the kitchen making some delicious recipes, I’m just enjoying a little break from all the sharing groups, social media, blog post writing, etc! I’ll be back soon.

Today I thought I’d pop in and share a photo dump from our Christmas in Chicago with my family. And if I can get my act together tonight, tomorrow I”ll share a Dear Chase letter recapping months 13 & 14!

So we spent 3 1/2 days in Chicago for the holidays and it was such a great time. We decided to drive at night hoping Squish would sleep most of the way and it worked pretty well. We left Columbus around 6pm on Tuesday night and arrived at my parent’s place at 10:30 Chicago time. Squish slept all but about an hour of the trip. He was up for a little while once we got there, but went to bed without much trouble.

On our first day there hubby and I went to a Crossfit class at Brick Chicago. The class was taught by Elizabeth Akinwale who is one of my Crossfit idols and has been to the games several times. It was amazing!! We hung out around the house for most of the day and then went out to dinner at Volare. DELISH italian food! We even got a great family picture!

Squish and I had some early mornings thanks to the time change and the fact that it’s a lot noisier in the city than he’s used to, but other than that he slept fairly well. He also went to bed an hour earlier so mama was able to enjoy some Squish-free dinners 🙂 What a treat! On Christmas Eve morning we went to River North Crossfit to do a 12 Days of Christmas wod. We worked up quite a sweat! Squish had fun hanging with Mimi and Grandpa and Aunt Katie. He loved vacuuming and chasing the kitty around. We made Honey Sesame Chicken and green beans for Christmas Eve dinner.

We had a lazy Christmas morning opening presents with Squish and then opening our own presents once he went down for a nap. Squish went for a walk along the river and took a swim in the pool. He also spent a lot of time looking for kitty and throwing his ball around. Hubby and I went for a walk to see The Bean and explore Michigan Ave a little bit. Christmas dinner was salmon & crabcakes – my fav 🙂

We left Chase with Mimi and Grandpa for the morning of our last day and hit some of the day after Christmas sales…then met up for a quick lunch. After a quick nap, we headed over to the mall because it was raining to try to get Squish to run around and burn off some energy. He wasn’t having it and just wanted to be held….so we ended up leaving a little earlier than planned, around 4pm Chicago time. It rained the entire drive home which was pretty miserable, but Squish fell asleep after about 45 minutes and slept until Dayton. We got home around 11:00 Columbus time and he was up for quite a while running around, but I was fine with that – easier than entertaining him in the car 🙂

Overall it was a great trip that went much too quickly and we’re already planning our return!

Just popping in with a quick lunch idea for you guys. As you know, I love making a big batch of pulled pork during Sunday Food Prep. You must try this Beer Braised Pulled Pork if you haven’t already!

It’s so convenient to have on hand for quick meals throughout the week. I have my go-to meals that I make using it – pulled pork quesadillas are my fav – but i’m always looking for new ways to use it as well! I actually made these Pulled Pork and Apple Tostadas a couple months ago and completely forgot to share!

These Pulled Pork and Apple Tostadas are a simple, flavorful way to use up leftover pork. Perfect for lunch, dinner or a quick snack!

There’s something about the combination of pork and apples that I just love. Add some cheese and bbq sauce and I’m sold! Come to think of it, this is pretty much just like an open-faced quesadilla…but it felt new and different! Make a batch of my Homemade Whole Wheat Tortillas to eat them on if you’re feeling extra motivated during your food prep!

So here’s how you make this lovely little creation. I didn’t include quantities because you can make as many or as few as you want!

An easy way to transform leftover pulled pork into a new meal.

  • Prep Time: 2 minutes
  • Cook Time: 5 minutes
  • Total Time: 7 minutes

Ingredients

  • Pulled pork
  • Chopped apples
  • Shredded cheese
  • BBQ sauce
  • Whole wheat tortillas
  • Guacamole (or chopped avocado)

Instructions

  1. Spread pork onto tortillas and place on a baking sheet.
  2. Top with apples, cheese and bbq sauce.
  3. Turn on the broiler and broiler for 3-5 minutes or until cheese is melted and the tortilla edges are crispy.
  4. Remove, top with guacamole and enjoy.

So there you have it! You could also make this with leftover chicken. The meat doesn’t have to be pulled. You could use diced chicken or pork, rotisserie-style or whatever you have on hand.

Time for another fun recipe group post. Today we’re sharing our love for cranberries. Fresh, dried, doesn’t matter- all delicoius. Wait til you see some of the deliciousness my blogging pals came up with!

But first, let’s talk about this salsa. It’s a bit non-traditional, but I promise you it’s worth a try. It’s the perfect balance of tart. sweet and spicy. The fresh cranberries are definitely tart, but the other fruit helps add sweetness and the combination works really well together.

This Cranberry Clementine Salsa, paired with smashed avocado and a sliced baguette makes a simple, festive holiday appetizer!

I served mine on little avocado toasts but you could also serve with chips or even use it as a topping for meat or fish! Take advantage of the red and green color combo and serve this at your next holiday party!

  • Prep Time: 10 minutes
  • Total Time: 10 minutes

Ingredients

Scale
  • 1.5 cups fresh cranberries
  • 1/2 cup apple slices
  • 6–8 clementines, peeled & segments cut in half or thirds
  • 1/2 cup onion, diced
  • 1–2 jalapeno or serrano peppers, minced (based on spice preference)
  • 3 Tbsp fresh cilantro, minced
  • 1/2 cup pomegranate arils
  • 1–2 Tbsp sugar (optional, depending on desired sweetness)
  • avocado + baguette for serving, optional

Instructions

  1. In a food processor, pulse cranberries and apples until chopped, then transfer to a bowl.
  2. Add remaining ingredients, except sugar, and mix well.
  3. Taste and add sugar if desired to sweeten.
  4. Slice baguette into thin slices. Toast slices if desired.
  5. Spread with mashed avocado and top with salsa.

Notes

Feel free to leave out pomegranate or apple if desired.

This salsa is pretty easy to customize. You can leave out the peppers if you don’t want it spicy. You can also leave out the pomegranate or apples if you want! I left the apples out the first time but liked the addition the second time! You can also choose to toast the baguette slices or not. It’s great either way!

Super easy recipe alert! In fact, I hesitate to even call this a recipe because it’s just so darn simple! It’s literally just 3 ingredients. Chop, shake, roast, eat. That’s all there is to it.

I made these to go with the Crockpot Cheesy Chicken and Potatoes we ate the other night. They’re great straight out of the oven but they also reheat well. I love the subtle sweetness from the maple syrup…and we all know everything tastes better with bacon! Next time, I might add a little cayenne pepper to give them a little sweet & spicy kick!

I’ve been putting my crockpot to work this week! On Sunday, I made some pulled pork for lunches and then yesterday I whipped up the deliciousness pictured above for us to enjoy for dinner.

I’m usually more of a sweet potato girl, but my mom bought some white potatoes while she was in town so I was on a mission to use them up! That being said, you could make this with sweet potatoes if you prefer!

This recipe for Slow Cooker Cheesy Chicken and Potatoes is a perfect weeknight dinner. Let the crockpot do all the work and enjoy a flavorful meal after a busy day.

This is a super simple meal that’s full of flavor and it pairs perfectly with your favorite veggies! We enjoyed ours with green beans and roasted carrots. Maple Bacon Roasted Carrots. (Recipe coming soon!!)

I topped mine with avocado, salsa and a little extra cheese and it was delicious.

  • Yield: serves 3-4 1x

Ingredients

Scale
  • 1 pound potatoes, peeled
  • 1 tsp garlic powder
  • freshly cracked black pepper, to taste
  • 2 strips bacon, chopped
  • 1.5 pounds chicken
  • 1 tsp paprika
  • 1/3 cup chicken broth
  • 2/3 cup shredded cheese (I used colby jack)
  • Optional toppings: cheese, avocado, salsa

Instructions

  1. Chop potatoes into fairly large chunks and spread over bottom of slow cooker.
  2. Top with garlic powder, black pepper and bacon.
  3. Cut chicken into chunks and place on top of potatoes.
  4. Sprinkle with paprika.
  5. Add chicken broth.
  6. Top with cheese.
  7. Cook on low for 4-6 hours.
  8. Serve with a slotted spoon and top as desired.

I used thin-sliced chicken breasts so mine took a little less than 4 hours. With regular chicken breasts, 4-6 hours should be fine! There will be a little liquid at the bottom of the crockpot so just use a slotted spoon  when serving.

You could easily add some black beans or other veggies to this if you wanted to! And feel free to change up the spices to fit your tastes. You could add cayenne or chili powder for some spice, cumin for a Mexican spin, etc!

Anything in this post would be appreciated by new parents, pregnant mamas or your favorite baby! This post was originally published when my first baby turned one year old. Since then I’ve had two more kids and my youngest is about to turn one. I’ve done my best to update links that were outdated and provide alternatives as well as add a few new favorites!

So here they are in no particular order. These are all affiliate links. Thanks for helping to support the brands and items I use and love!

Gift ideas for new parents, moms and babies

  1. Tiny Love Light Activity Gym – Perfect for tummy time and the first few months. They don’t make this one so I’ve linked to a similar one.
  2. North States Superyard – Hands down the best thing I bought once he started crawling.
  3. Summer Infant Pop ‘n Play Portable Playard – Small but perfect for short periods of time (ie while working out).
  4. Bob Revolution SE Stroller – We bought the infant carseat adapter and have used this stroller since he was a few days old. It’s fabulous and super easy to collapse for storage. This is an EXPENSIVE stroller, but three kids later we’re still using it daily so it’s worth the money. Check for gently used one on marketplae.
  5. Dutailier Glider – Love ours in the nursery, especially for the first few months of long nights.
  6. Infant Bath Support – We never used the sink as a bath so this was perfect for bathing him in the tub when he was little, plus it dried quickly and didn’t get moldy.

  1. Graco Sweet Slumber Sound Machine – We bought one for our room when he was first born and loved it so we ended up buying a second one when he started sleeping in the nursery. This is no longer available. I now recommend the Lectrofan. 
  2. Ergobaby 360 – I bought several wraps and carriers before he was born and used a few but this was my favorite. It was a lifesaver on several occasions and is great for wearing around the house, on walks, while shopping, etc. Now recommend the Ergo Adapt because you don’t need an infant insert.
  3. Brica Baby In-Sight Mirror –  We have one for each car. Makes it easy for you to see them while driving. The one we used is no longer available but you can try this baby car mirror instead. I’d also recommend this car sun shade to help block the sun for them.
  4. Skip Hop Bath Spout Cover – More important when he started sitting up in the bathtub on his own – great to keep him from hitting his head on the faucet.
  5. BooginHead PaciGrip – Hands down the best invention for babies. We haven’t lost a binkie yet! Tie a couple of knots in it to shorten in when they start crawling to keep them from continuously pulling it off their shirt.
  6. JJ Cole Outdoor Blanket – Great for sitting out in the yard to play, but also folds up easily and has a strap so you can take it to the park, etc. Our color isn’t available but other colors are!

Baby's First Year Gift Guide

  1. Fisher-Price Newborn-to-Toddler Rocker – Easy to move from room to room for them to sit in when they’re little and then great to get back out again closer to a year so they can figure out how to get in and out on their own. Had feet you can pop out if you don’t want it to rock.
  2. Chicco Keyfit 30 Infant Carseat – Perfect for newborns. So easy to pop in and out of the base to take the carrier from house to car. Squish grew out of this quicker than usual because he hit the height limit before the weight limit but we loved it. You can also just buy an extra base to easily use it in both cars.
  3. Bumbo Floor Seat – Great for smaller babies. Squish grew out of this pretty quickly because of his big thighs 🙂 Since none of my kids really sat in that, i’d probably recommend this Fisher Price Sit Me Up Floor Mat instead.
  4. Chicco NextFit Convertible Carseat – We love this. So easy to get baby in and out and also easy to transfer between cars. He’ll be able to use it up to 65 pounds. We actually just bought a second one so we have one for each car because we like it better than a different brand we had in my car. We used this for my first two kids. If I were doing it over again I would choose the Graco 4ever 4 in 1. 
  5. Fisher-Price Rainforest Jumparoo – Great way to keep baby contained but also let them expend some energy! If they’re not tall enough, stack up some books or put a blanket under their feet to help them have something to bounce off of
  6. Fisher-Price Deluxe Rock ‘n Play –  THIS IS NO LONGER RECOMMENDED.

  1. ThinkBaby No Spill Sippy Cup – We tried several brands and this is our favorite. Easy for him to drink and doesn’t leak. They also have a top with a straw for when they get a little older. I would try the Honey Bear Cup to quickly teach them a straw and then go straight to the ThinkBaby Straw Cup.
  2. Graco Blossom 4-in-1 Seating System – A great highchair that can also convert to attach to a regular chair and later works as a booster seat.
  3. Born Free 9 oz Glass Bottles – Loved these as an alternative to plastic. I had a few plastic ones for the diaper bag/traveling etc but for the most part we used these. They’re a little heavy so they’re harder for babies to hold but they also have a 5oz size. The ones we used are discontinued but the Breeze is the updated version.
  4. Munchkin Click Lock Freezer Pops – We started using these right at 6 months. Loved mixing prunes, bananas and almond butter for a daily popsicle for Squish. They’re the perfect size and easy for babies to hold. These aren’t available but the Nuby Garden Fresh Molds are the same!
  5. Munchkin Snack Catcher – Squish loves eating his Cheerios out of these and I love that the help contain the mess to a degree 🙂
  6. Munchkin Formula Dispenser – These were perfect for the diaper bag!

Baby's First Year Gift Guide

  1. Fisher Price Laugh & Learn Activity Table – One of the best things we bought. Has been a favorite since he was about 5 months old. All my kids have loved this. Our version is crazy expensive now so look at garage sales or try this LeapFrog Learn and Groove.
  2. V-Tech Sit To Stand Learning Walker – Great for when they’re learning to walk to help them balance. Squish liked the lights and sounds best at first but now loves running around pushing this.
  3. Sophie the Giraffe – A staple in our diaper bag
  4. Angel Dear Blankie – This is Squish’s Moo Moo. Sleeps with it every night. We bought three. The perfect size and easy to wash.
  5. Melissa & Doug Rainbow Stacker – Keeps him busy for hours. Proud mom moment when he figured out he was coordinated enough to do this activity.
  6. Fisher Price Shape Sorter – Still haven’t mastered this one yet but has been playing with it for months. I would go with a wooden one like this Fat Brain Toys Shape Sorter.
  7. Bizzy Bear Books – Hours of entertainment. Squish has about 10 different stories and loves them all to pieces, literally.
  8. Melissa & Doug Magnets & Tabletop Magnet Board – He got these for his first birthday. We just set the magnet board on the floor in his playpen. The magnets also stick to our front door.
  9. Melissa & Doug Metal Shopping Cart – Squish is actually getting this for Christmas but he loves his cheap plastic one so this will definitely be an upgrade.
  10. HiPhone – Doesn’t love it as much as the real iphone but does keep him entertained. Even lets you record your own message for them to hear.
  11. Pewi YBike – He got this for his first birthday. They can push it like a walker when they’re younger and then ride it like a bike as they get older.
  12. Melissa & Doug Band in a Box –  Perfect if they love music and making noise like my kid does!
  13. Mortimer the Moose – A favorite toy, especially the first few months. Easily clips on car seat, stroller, shopping cart, etc.
  14. Busy Bee Babay Buzz’r – Vibrates, lights up and plays music! No longer available.
  15. Tin Drum – My hubby is a drummer so Squish has an actual snare drum sitting on the floor of his playpen and he LOVES it. But this would be a good substitute if you don’t happen to have a real one laying around!

Hi Friends!

Hope you all had a wonderful Thanksgiving holiday with family and friends! We spent the morning at the park and then headed to my in-laws for Thanksgiving with the extended family. Squish made it through about 4 hours of fun before we headed home to get him a nap. My sister comes into town this morning for the weekend and then my parents will be here on Wednesday so we’ll be cooking up Thanksgiving #2 next week!

Yesterday I was in charge of bringing pumpkin pie and dinner rolls but at the last minute I decided to whip up an easy appetizer to bring along as well.

I made a batch of my mom’s Fresh Cranberry Sauce last weekend. We love it so much I usually make several batches between now and New Years. I ate it throughout the week but had a little bit left so I decided to add some to a batch of meatballs for a crowd-friendly cocktail appetizer.

These easy Cranberry Meatballs are a great way to use up leftover cranberry sauce and make the perfect appetizer recipe for a holiday party.

You could make a half batch of the cranberry sauce recipe linked above, use your own leftover cranberry sauce or even use a store-bought variety.

  • Prep Time: 5 minutes
  • Cook Time: 20 minutes
  • Total Time: 25 minutes
  • Yield: 25 meatballs 1x

Ingredients

Scale
  • 1 pound ground turkey or chicken
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1/3 cup cranberry sauce
  • 1/2 cup onion, diced
  • 2/3 cup breadcrumbs
  • 1 egg
  • Guacamole or extra cranberry sauce for dipping

Instructions

  1. Combine all ingredients in a large bowl and use your hands to mix until well combined.
  2. Form into small balls (about 1 Tbsp each) and place on a foil-lined baking sheet.
  3. Bake at 400 degrees for 15-20 minutes or until they reach 165 degrees F, flipping once.

Notes

If you are making these after a holiday like Thanksgiving or Christmas and have leftover corn muffins or cornbread, you could try crumbling some up to replace the breadcrumbs!

I served these with guacamole and extra cranberry sauce for dipping. If you’re feeling bold, mix some extra cranberry sauce INTO the guac for an extra-amazing dipping sauce!

Got leftover dinner rolls from #thanksgiving? Cut them up and stick them in a 9×13 pan. Add some frozen berries (or leftover cranberry sauce!). Mix eggs, milk, cinnamon and vanilla and pour over bread. Use your hands to make sure it’s well mixed. Cover with Saran Wrap and pop in the fridge. In the morning, stick it in the oven and voila- breakfast is served. Sprinkle with some brown sugar before baking for an extra treat 😊

Just popping in to share my favorite new side dish. I really can’t believe that I’d never tried roasting green beans until I posted this One Pan Roasted Chicken and Vegetables last month. Guys, it’s a total game-changer. Clearly I love green beans. See name of blog. But I tend to always prep them the same way.

In an effort to be a bit more adventurous, I changed things up big time by adding some seasoning AND changing my prep method. Double whammy of deliciousness.

If you’re a green bean casserole lover, you should def try my Greek Yogurt Green Bean Casserole for Thanksgiving. If you’re not, you should probably make these.

They’re quick, easy and festive. Plus they’re bursting with flavor thanks to the ginger and garlic. And fresh cranberries are just a fun addition.

  2. Spread on a foil-lined baking sheet and roast at 425 degrees F for 15-20 minutes, stirring once.

You could double the recipe but I’d roast them in 2 batches. Don’t want to crowd the pan! I used Garden Gourmet Ginger Paste instead of fresh ginger the second time I made these. Both work great.

Time for another month of Recipe Redux. This month’s theme was creative quick breads and this gingerbread is what I came up with. I’ve been craving gingerbread for a few weeks now. More specifically, these Pumpkin Gingerbread Muffins. When I saw this month’s theme, I immediately knew I wanted to make gingerbread but I decided to see what new mix-in I could come up with.

This recipe for Pear Gingerbread is perfectly spiced and full of flavor. It's easy to mix up in a blender and is great for an afternoon snack or topped with some ice cream for a holiday dessert.

My creativity was helped along by the giant bag of pears I bought at Meijer last weekend that all happened to ripen at the same time. Pears and gingerbread sounded like they’d be a great match…and voila! This bread was born.

I made it once for myself and then again a few days later to take to my MOPS group. It got the seal of approval there, so I thought I’d share it with you guys.

  • Prep Time: 5 minutes
  • Cook Time: 45 minutes
  • Total Time: 50 minutes
  • Yield: 1 loaf 1x

Ingredients

Scale
  • 2 cups chopped pears
  • 1/3 cup brown sugar
  • 1/2 cup molasses
  • 1/2 cup plain yogurt
  • 2 eggs
  • 2 tsp ground ginger
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 1 1/2 cups white whole wheat flour
  • Optional glaze – 1/4 cup plain yogurt + 1 Tbsp powdered sugar
  • Optional topping – pomegranate arils

Instructions

  1. Combine all ingredients except flour in a blender and puree until smooth.
  2. Add flour to blender and process until just combined.
  3. Pour into greased loaf pan at bake at 350 degrees for 45-50 minutes.
  4. Let cool completely.
  5. Drizzle with glaze and top with pomegranate just before serving if desired.

Notes

If you don’t have a blender you could use a food processor.
Or, just puree pears and mix everything in a mixing bowl.
Or simple mash pears well by hand.

The best thing about this bread is how easy it is to prep. Just throw everything in a blender or food processor and then pour into a loaf pan. I line my loaf pan with parchment paper for easy removal.

The glaze is just plain yogurt mixed with some powdered sugar. You could also just use vanilla yogurt. Or leave the glaze off altogether. Plus I added some pomegranates for a festive touch!

Meet my new favorite protein bar. I’ve made these 3 times in the past 2 weeks so I’d definitely call them a winner. They’re actually a spin on my Sweet Potato Banana Bites, one of my most popular recipes. I changed things up a bit and made them into bars and added a few extra ingredients, including some protein powder to give hubby another post-workout snack option.

This recipe for Gluten-Free Sweet Potato Protein Bars makes a healthy post-workout or afternoon snack! They can easily be made paleo and are grain-free.

I’ve made them with both chocolate and vanilla protein powder, and with peanut butter and almond butter. Peanut butter and chocolate protein powder is by far my favorite combo….but all are delicious.

This recipe for Gluten-Free Sweet Potato Protein Bars makes a healthy post-workout or afternoon snack! They can easily be made paleo and are grain-free.

The chocolate topping is optional and doesn’t do much but make them look pretty 🙂 You could also mix in some chocolate chips. These aren’t your typical protein bars. They have no flour or oats so they’re kinda chewy but more almost spongy. I made them with yogurt but if you wanted to make them paleo-friendly you could try coconut milk or coconut yogurt.

Gluten-free, grain-free protein bars that make the perfect post-workout snack.

  • Prep Time: 5 minutes
  • Cook Time: 15 minutes
  • Total Time: 20 minutes
  • Yield: 8 bars 1x

Ingredients

Scale
  • 1 cup cooked, mashed sweet potato (approx 2 medium)
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/4 cup maple syrup
  • 2 eggs
  • 1/3 cup nut butter
  • 1/3 cup plain yogurt (I used whole milk)
  • 1/2 tsp baking powder
  • 2/3 cup protein powder (vanilla or chocolate)
  • Optional: chocolate chips to melt and drizzle.

Instructions

  1. Combine first 7 ingredients in a large bowl and mix well. (For a completely smooth batter you could use a blender but I just mash everything with a fork.)
  2. Add baking powder and protein powder and stir until well combined.
  3. Pour into a greased 9×9 baking pan (line the bottom with parchment paper for easy removal).
  4. Bake at 375 degrees for 13-15 minutes.
  5. Let cool, slice into 8 bars and drizzle with chocolate if desired.

These are super easy and they taste great. I stored mine in the fridge but they’d probably be fine on the counter for a few days, I would just leave them loosely covered, not tightly sealed.

I’m not sure if I mentioned it or not but after Squish turned one a couple weeks ago, we went to the doctor for his checkup and she gave us the green light to transition him off formula. As you guys know, he’s been eating solid food since about 6 months, but until now formula has still been his main source of nutrients. Now that he’s eating all solid food, I’ve really been focusing on finding quick and easy meals he enjoys, that are also healthy!

About a month ago, he started spitting out some of the vegetables I give him, which I knew would happen at some point, so since then I’ve been experimenting with different ways to keep him eating those veggies!

They now offer five delicious soup flavors with fun, kid-friendly pasta shapes! I tried a few of the soups myself and really enjoyed them. However, as you might imagine, soup is a bit tough for my little guy to manage…especially since we’ve just started working on using a spoon. So, I put on my thinking cap and started thinking about ways that I could make the soup easier for him to eat. Organic Tomato Soup

First of all, every serving of this soup packs in a 1/2 cup of vegetables, which is awesome. I knew I wanted to find a way to thicken the soup up a bit to make it easier for my toddler, so I grabbed a few of the sweet potatoes I baked during my weekly food prep, mashed them up and stirred them in. This is an easy way to add some beta-carotene to the meal. Our bodies convert beta-carotene into Vitamin A, which is important for good vision and also boosts our immune system – perfect timing since flu-season is here. Then, since kids love dipping things, I made some avocado toast dippers to go along with it. Added bonus – Vitamin A is a fat-soluble vitamin so it’s good to eat it with sources of healthy fat – ie avocado. I also sprinkled some hemp hearts on the toast for added texture.

Then, to top everything off, I added some Cheddar bunnies….because they make fun little croutons! They soak up some of the tomato soup, which makes them nice and soft and Squish-friendly.

So let’s recap. To make this tomato soup you need:

  • 1 carton of Annie’s Organic Tomato Soup
  • 1 cup cooked, mashed sweet potato
  • Toast
  • Avocado
  • Hemp hearts
  • Annie’s Cheddar Bunnies

Directions:
Pour soup into large bowl. Add mashed sweet potato and mix well. Heat in the microwave or on the stove.
Mash avocado and spread on toast. Sprinkle with hemp hearts. Cut each piece of toast into dipping strips.
Ladle soup into bowls, top with cheddar bunnies and serve with a side of avocado dippers!

Organic Creamy Carrot & Bunny Pasta Soup

Squish is a pasta-lover like his mama, so I knew he’d love the pasta in this one. Although he’s probably not quite old enough to appreciate the fun shapes – bunnies and carrots – I thought they were so fun! Fun fact-  a serving of this soup  gives you 100% of your daily value of Vitamin A.

I recently did some baking with pumpkin, and as I’m sure you’ve experienced, I had a little bit of pumpkin left over. This soup has an orange color, very similar to pumpkin, so I decided to just mix that leftover pumpkin right in! Not noticeable in color or taste and another easy way to add some beta-carotene to your meal. I also threw in some leftover chicken from dinner earlier in the week for an added protein boost! Soups like this are one of my favorite kitchen shortcuts. They’re great on their own, but you can also use them as a base to transform your leftovers into a totally new meal!

To make this soup:

  • 1 box Annie’s Creamy Carrot & Bunny Pasta Soup
  • 1/3 – 1/2 cup pumpkin
  • 1 cup cooked chicken, chopped
  • Annie’s Sour Cream and Onion Bunnies

Directions:
Combine all ingredients in a bowl and mix well. Heat and serve topped with bunnies!

Annie’s Organic Shells and Real Aged Cheddar

When I was pregnant with Squish, I pretty much lived on this mac and cheese. Either mac and cheese, Cheerios or peanut butter and jelly toast were just about all I could stomach for dinner for a several month stretch.

So it’s probably no surprise that mac and cheese is one of little man’s favorite foods as well. All Annies’s Mac and Cheese varieties are free of artificial flavors, synthetic colors and preservatives and I love pumping it up with some extra protein and veggies to make it a more complete meal. I make no exception when Squish eats it. I usually add some leftover chicken or some pre-cooked chicken sausage and then move on to the vegetables. Two of his favorite veggies are roasted squash and red peppers, so I mixed some of those right in and then I also added some broccoli, one of his least favorite veggies! Although he still picks some of it out, he’s much more likely to eat a few pieces if it’s covered in cheese and served with noodles.

To make the mac and cheese:

1 box of Annie’s Organic Shells & Real Aged Cheddar
3 Tbsp milk
1 cup chopped broccoli florets
1/2 cup roasted squashed, mashed (butternut or acorn work well)
1/4 cup roasted red peppers, diced
1-2 pre-cooked chicken sausages, chopped

Bring a pot of water to a boil. Add pasta and broccoli and cook for 8 minutes. Drain and return to pan. Mix in remaining ingredients (including cheese packet from mac and cheese) and stir until well combined. Serve warm.

Elf4Health 2015

Elf For Health is back for another year and it’s time to kick things off! There have been some changes this year so please read this post carefully if you’ve participated in the past because I don’t want there to be any confusion.

As you guys know, four years ago I started this Elf 4 Health Challenge with fellow RD Elle of According to Elle (formerly Nutritionella). Our goal was to promote health and wellness during the holidays, a time when healthy habits tend to fall to the wayside.

This year, Elle is going to be busy with a new little bundle of joy so I’ve got myself an awesome new co-host. Meet Georgie of In It For The Long Run. Although she’s not an RD, she is a fitness-loving health nut just like myself and we share similar life and blog philosophies! Let me just stop right here to say that if you haven’t checked out her blog yet, you must do so immediately. She takes drool-worthy photos, writes tons of helpful blog posts and is an Instagram champion. Like seriously. She even wrote an ebook about it. Go check it out.

So Georgie and I will be your hosts for this year’s Elf4Health Challenge.

Another big change this year is that we’re going sponsor-free! There are several reasons for that decision but the main one is that i think it’s a good opportunity to re-center the challenge and put the focus solely on making your holidays healthier and happier, which is why it was created in the first place, instead of getting caught up in money, prizes, etc.

Introducing the Elf for Health Holiday Challenge! This is a four week challenge that will run from the November 23rd thru December 20th. The challenges fall into 4 different categories: Food, Fitness, For You & For Others. There will be daily tasks, weekly newsletters and a private Facebook community.

And are you ready for the best part? You’ll have an elf to support and encourage you if you’d like! When you sign up, you can choose whether you’d like to be paired with a partner to swap ideas and support with, or participate in the challenges on your own. Over the course of the challenge, you can have two different elves.

Sounds like a great way to stay motivated and meet new people over the holidays doesn’t it?! Since this challenge is internet based,anyone can participate… no matter where you’re located! All you need is access to the internet and an email address.

So what does an Elf do?
As an Elf, you are expected to support your assigned buddy with their holiday health goals and the daily challenges. Elves & buddies will be reassigned after 2 weeks so that hopefully you get to meet 2 new people!

You are only asked to email your buddy 2 times per week:

  • Monday: Send your buddy an email to help them with the challenges for that week. Ideas of things to include/attach: your own personal tips & tricks, inspiring words and/or images, a new, healthy recipe or workout to try.
  • Thursday – Saturday: Any time during these days, check in with your buddy! For example, ask them if they tried a new recipe, workout, or had fun with any certain challenges. Feel free to tell them how you did with your challenges, too!
  • Anything more than those 2 emails is up to you but feel free to go above and beyond this to show your support! Just a few ideas: send your buddy Tweets, shout outs on our Facebook Page, email a fun workout you liked or send a hand-written recipe or note.

Hi Friends!

A few weeks ago Julie did a round-up of most popular blogger recipes. She emailed a bunch of bloggers and asked us what the most popular recipe on our blog was. When Blogging Gets Hard

Hi friends –

Every couple of years, I feel the need to write a post for my fellow bloggers. In 2012 I wrote this one after I’d been blogging for a year and a half – Things Blogging Has Taught Me – Part 1. A little over a year later, I wrote this one – Things Blogging Has Taught Me – Part 2. Now here we are in 2015. I’ve been blogging for over five years. My blog has continued to grow and evolve and now I’m lucky enough to call it a job.

Like any job, it has its ups and downs and after a tough couple of weeks in a bit of a blogging rut, I felt inspired to share a few more blogging truths, along with some of the tips, tricks and lessons I’ve learned on my blogging journey.

When blogging gets hard and you find yourself in a rut, here's what to do.

Because, in the spirit of keeping it real….no matter where you are in your blogging journey, you WILL end up in a blogging rut at some point.

Blogging is hard. It takes work – both on the front and back end.  It takes time – probably more than most people imagine. And it’s not always fun.

Here are some blogging truths:

There will be fails. You will have weeks where you make 10 recipes and every.single. one will end up in the trashcan. There will be a post that you spends hours crafting and writing, that you think it’s the best thing you’ve ever written and when you publish it – no one will like it.

You’ll let your stats dictate your mood. Your pageviews will reach an all time high and you’ll be on cloud nine…and then they will nosedive, for no apparent reason, and you’ll spend a ridiculous amount of time thinking WTF did I do wrong?

You’ll get jealous. Someone else will publish a recipe that’s so brilliant that it immediately goes viral that you’ll spend the rest of the day wondering “why didn’t I think of that”. You’ll read a post about how someone makes thousands of dollars for a single sponsored post when you’ve never made any money off your blog. You’ll see someone taking an amazing trip without having to pay for any of it and you’ll think – why can’t I be that lucky?

You’ll fall behind. No matter how organized you are, or how far ahead you plan, there will be weeks when you don’t publish as many posts as you planned to. There will be emails that don’t get answered in a timely manner. There will be nights you stay up until 2am trying to finish a post because you forgot about a deadline.

You will feel overwhelmed. The sea of social media can drown even the strongest swimmer. And just when you think you’ve figured out some sort of schedule, the next big thing will ignite like wildfire and you’ll find yourself wondering how the hell you could possibly have time to do one more blog-related thing.

You’ll be criticized and judged. There will always be people out there who live to rob others of their joy. There are mean-spirited people who have nothing but negative things to say about you, your blog, your recipes, the way you dress, what you eat, etc. Blogs are, for the most part, a public forum. You’re putting yourself and a part, sometimes a large part, of your life out there for the world to see. And people won’t be shy about sharing their positive and negative opinions about the choices you make.


So when all of that stuff happens, here’s what you need to do:

Take a deep breath and re-center yourself. No matter how great your job is or how much you love it, there will be days when it sucks. And that’s ok. Remember that every day is a new day and a new chance to start over with a positive mindset and work on changing the things that didn’t go well yesterday.

  • Inhale determination, exhale stress.
  • Let go of the negatives and focus on the positives.
  • Take a break if you need to. A day off, a week off, whatever it takes to allow you to come back excited and refreshed!

Keep trying. Not every recipe will fail. Not all your photos will have weird lighting. Not every post will be your most popular, but they won’t all be your least popular either.

  • Don’t force it. Feeling like you HAVE to post a recipe that includes xyz ingredients just because everyone else is doing it might not turn out so well. Instead, get back to having fun and cooking or writing about what YOU are passionate about.
  • Take a photography course or buy in ebook. There’s always something new to learn and good photography is so critical to blogging.
  • Focus on finding your niche and defining your ideal reader. Learn everything you can about your readers and then think about what kinds of posts you can create that will help them solve a problem. That’s what will keep them coming back

Redirect your focus. Numbers aren’t everything. Instead of spending your time worrying about your stats, STOP CHECKING THEM. And don’t worry about how much money or how many pageviews anyone else is getting either. Shift your mindset toward doing whatever you can to make yourself better!

  • Focus on things that are more easily within your control. Have you made it as easy as possible for people to share your content with share buttons, plug-ins, etc?
  • Have you optimized your bests posts for SEO to help improve the chances they’ll come up in google searches?
  • Are you taking high-quality photos that will encourage people to pin and share your content?
  • Have you thought about other ways to diversify your income such as company collaborations, ebooks, etc so you aren’t as reliant on pageviews as a source of income?

Stay humble. When success does come, remember that pageviews don’t equal entitlement. Having 500,000 pageviews a month doesn’t mean you’re any better than the blogger with 1,000 pageviews.

  • Continue to prove yourself by creating great content.
  • Don’t lose your moral compass for money. Stay true to yourself and what you believe in even if it means turning down money.
  • Remember that while you control some of your success, so do your readers, the people who feature your work, etc. Respect them and thank them.

Produce good content. If you build it, they will come. Invest your time in building your blog brand, creating posts that are helpful and well written with great images.

  • Find a balance of evergreen content that is always relevant and seasonal content that fits the here and now, but can be re-promoted every year at a certain time.
  • Choose quality over quantity. Posting 2 amazing posts a week is better than 5 haphazard, unorganized posts.
  • Be smart. Good content is whatever content YOUR readers find most valuable. Don’t worry about anyone else’s readers.

Seek inspiration. You can find it everywhere.

  • Step away from the computer and just LIVE.
  • Revisit old posts and think about how you can repurpose them into something new.
  • Browse Pinterest, cookbooks, etc and think about how you can put your own spin on something.
  • Just ask. Post a question on social media or send a survey to your readers asking what they’d like to see from you.

Be flexible. Because, life. You’re living it. And sometimes it gets in the way.

  • Have a tentative schedule but don’t be afraid to change things around if needed.
  • Leave room in your calendar to throw in a great idea if something pops up.
  • Give yourself a loose schedule and then let creativity take over and see what you come up with.
  • Don’t be too hard on yourself if things don’t go as planned.

Prioritize. Repeat after me – you CANNOT do it all. And if you try, you’re setting yourself up for failure. You’ll get so overwhelmed that you’ll end up not doing anything well.

  • Pick a few social media platforms you enjoy and do them well. Don’t worry about everything else.
  • Get help if you need it. Hiring an assistant can free up your time to focus on other things that require your skills.

Give back. Karma is real, my friends. And believe me when I say that what goes around, comes around…in both a positive and negative way. Take the time to promote others, help others, answer questions, pay compliments, show respect etc and it will come back to you twofold. Celebrating someone else’s success does nothing to diminish your own.

  • Read a great post? Share it. Pin it. Tweet it. Link to it.
  • Love someone’s photos? Tell them! And ask them for a tip or two.
  • Love the way someone worked with a brand or wrote a sponsored post? Tell them! And then take notes and learn from what they’re doing well.

Let’s talk breakfast. My favorite meal of the day. Allow me to introduce you to the breakfast Squish and I have been enjoying this week. I’d describe it as the love child that would result if mac and cheese and a frittata had a baby.

Are you thinking “pasta for breakfast?!” Sounds crazy, right? I assure you it’s not. This pasta bake is packed with protein, veggies and whole grains – a winning breakfast in my book, perfect for fueling your busy day. Squish is a noodle lover like his mama and I love pairing them with veggies. Lately he’s started to reject some of the veggies I give him, but I’ve noticed if they’re paired with things he loves like meat and noodles in a casserole type dish, he’s much more likely to eat them. I’m also making it my mission to try to get him loves of veggies throughout the day, and that includes breakfast!

With the holidays coming up, it’s also worth noting that it can be mostly assembled the night before if you want to bake it to feed your overnight guests! Or you can bake it on the weekend and simply slice and reheat throughout the week for a quick breakfast option like we’ve been doing this week.

Packed with protein, vegetables and whole grains, this Breakfast Pasta Bake is easy to make. Assemble ahead of time and bake it in the morning to feed guests or bake it on Sunday and reheat it for breakfast all week long.

You can easily customize this pasta bake by using your favorite pasta, your favorite veggies and whatever kind of sausage you like (or even some leftover chicken or pork). I topped mine with avocado and salsa…because I love my eggs with salsa.

So here’s how you make it:

  • Yield: 4-6 1x

Ingredients

Scale
  • 1.5 cups dry pasta (i used elbows)
  • 2 – 3 cups mixed veggies (i used onions, bell peppers and peas)
  • 3 chicken sausages, chopped
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 cup shredded colby jack cheese (or your favorite cheese)
  • 6 eggs
  • 1/2 cup milk

Instructions

  1. Preheat oven to 375 degrees F.
  2. Prepare pasta according to package directions.
  3. While pasta is cooking, saute veggies, sausage and spices over medium heat for 10 minutes.
  4. Add cooked pasta and cheese to veggie mixture and stir to combine.
  5. Spoon into greased 9×13 pan.
  6. In a small bowl, whisk together eggs and milk.
  7. Pour over pasta mixture and bake for 25 minutes.

Notes

– Feel free to use your favorite veggies and spices. [br]-Top with extra cheese before baking if desired. [br]- I covered mine with foil halfway through to keep noodles from hardening. [br]- There may be a little excess liquid on top when done baking. Simply blot off with a paper towel before serving. [br]- To prepare ahead of time, cook pasta and veggies and assemble in pan. Refrigerate overnight. In the morning, add egg mixture and bake.

Considering the fact that it’s been almost 3 weeks since I shared my last pumpkin recipe with you – be sure to check out my Pumpkin Skillet Cake if you missed it the first time- and the fact that I have about 6 cans of pumpkin in my pantry, I figured it was about time to get my act together and come up with another tasty pumpkin treat!

I’ve been craving cornbread, probably because I’ve been thinking about the fact that Thanksgiving is rapidly approaching. Also, my mom texted me the other day to tell me how good Trader Joe’s Pumpkin Cornbread is. I’ve never had it, but I’m sure that planted the seed for this recipe.

Since I was already giving my cornbread a fall spin with some pumpkin, I decided to take it a step further and add some maple syrup and cinnamon as well. Great idea on my part.

Ingredients

Scale
  • 1 cup pumpkin
  • 3/4 cup milk
  • 2 eggs
  • 1/4 cup maple syrup
  • 1 jar of baby food prunes (4 oz)
  • 4 Tbsp butter, melted
  • 1 tsp vanilla extract
  • 1 cup cornmeal
  • 1 cup flour
  • 2 tsp baking powder
  • 1/2 – 1 tsp cinnamon, optional

Instructions

  1. Preheat oven to 400 degrees F.
  2. Combine first 7 ingredients in a bowl and mix well.
  3. Add remaining ingredients and stir until just combined.
  4. Pour into greased 9×13 pan and bake at 400 degrees for 20-25 minutes or until a toothpick inserted into center comes out clean.

Don’t leave out the prunes. They’re the secret ingredient in my Mimi’s famous cornbread recipe as well. They add a little sweetness and I promise you can’t taste them. But if you must have a replacement, you could try applesauce or more maple syrup I suppose….although I haven’t tried either of those myself.

Lightly sweetened and full of fall flavors, this recipe for Pumpkin Cornbread is the perfect dinner side dish. Make a batch for Thanksgiving or enjoy with a big bowl of chili.

I’d definitely recommend slathering a little butter on each piece as well. Perfection.
