Hi Friends!

I’ve been putting my crockpot to work this week! On Sunday, I made some pulled pork for lunches and then yesterday I whipped up the deliciousness pictured above for us to enjoy for dinner.

I’m usually more of a sweet potato girl, but my mom bought some white potatoes while she was in town so I was on a mission to use them up! That being said, you could make this with sweet potatoes if you prefer!

This recipe for Slow Cooker Cheesy Chicken and Potatoes is a perfect weeknight dinner. Let the crockpot do all the work and enjoy a flavorful meal after a busy day.

This is a super simple meal that’s full of flavor and it pairs perfectly with your favorite veggies! We enjoyed ours with green beans and roasted carrots. Maple Bacon Roasted Carrots. (Recipe coming soon!!)

I topped mine with avocado, salsa and a little extra cheese and it was delicious.

This recipe for Slow Cooker Cheesy Chicken and Potatoes is a perfect weeknight dinner. Let the crockpot do all the work and enjoy a flavorful meal after a busy day.

  • Prep Time: 10 minutes
  • Cook Time: 5 hours
  • Total Time: 5 hours 10 minutes
  • Yield: serves 3-4 1x

Ingredients

Scale
  • 1 pound potatoes, peeled
  • 1 tsp garlic powder
  • freshly cracked black pepper, to taste
  • 2 strips bacon, chopped
  • 1.5 pounds chicken
  • 1 tsp paprika
  • 1/3 cup chicken broth
  • 2/3 cup shredded cheese (I used colby jack)
  • Optional toppings: cheese, avocado, salsa

Instructions

  1. Chop potatoes into fairly large chunks and spread over bottom of slow cooker.
  2. Top with garlic powder, black pepper and bacon.
  3. Cut chicken into chunks and place on top of potatoes.
  4. Sprinkle with paprika.
  5. Add chicken broth.
  6. Top with cheese.
  7. Cook on low for 4-6 hours.
  8. Serve with a slotted spoon and top as desired.

I used thin-sliced chicken breasts so mine took a little less than 4 hours. With regular chicken breasts, 4-6 hours should be fine! There will be a little liquid at the bottom of the crockpot so just use a slotted spoon  when serving.

You could easily add some black beans or other veggies to this if you wanted to! And feel free to change up the spices to fit your tastes. You could add cayenne or chili powder for some spice, cumin for a Mexican spin, etc!

    I do not use my slow cooker enough. I have one. I take it out from time to time – but its not in regular rotation. I gotta change that!

    I do not eat white potatoes at all; do you think this will work with sweet potatoes or maybe a winter squash?

      yes. i think i mentioned above that sweet potatoes would probably work fine. Squash would be good too, it just might be a little mushier since it cooks faster than white potatoes i think

    Once I figure out which box my slow cooker is in I will be diving head first into slow cooker recipes! It’s in a box because I just moved from Gahanna to Clintonville so no worries, I’m still here in Cbus 🙂

    I made this tonight and it was a big hit with my family, especially my husband. I’ll be honest, for me personally it was hard to eat because my stomach has been super sensitive with first trimester pregnancy sickness. This is not anything against your recipe at all, I have seriously been struggling trying to find ANYTHING that sounds good to me right now (and I’m not typically a picky eater at all!). I’m nauseous all day long and it SUCKS! And because of it, I’ve been a horrible slacker at cooking dinner for my son and husband. But, I saw this recipe yesterday and decided to make it today. So with my son and husband loving this dinner (I even made the maple bacon carrots), I know that this dish is a keeper! And with any luck, I will be able to make it again soon and will actually be able to ENJOY it that time!

    Two questions. 1) Is the chopped bacon cooked prior to adding it to the crockpot or raw?
    2) Can turkey bacon be used in its place? Thanks!

    Just made this slow Cooker cheesy chicken and potatoes in my hotel room, reduced it down for one person, and it was delicious!! Loving taking this little crock pot around with me while I travel for for my job. I do have a question though, do you have the nutrition information for this and your other recipes?
