Hi friends!

Hope you had a great weekend. I can’t wait to share this Pulled Pork Fajita Salad with you guys today. As you may recall, hubby got an electric smoker for Christmas and we are loving it! Needless to say, we’ve been eating a lot of smoked meats lately, especially pork. And while I don’t mind just eating it plain, I’m always thinking about how I can transform out a bounty of leftovers into new meals so we don’t get bored!

So yes, this salad does require you have some pulled pork on hand. You can make it in the smoker like us, or in the Instant Pot (super easy) or even try this Beer Braised Pulled Pork in the oven! Or you could swap in some chicken. Leftover grilled or baked chicken or even rotisserie chicken would be great here.

And yes I even made my own dressing for this nice little salad. It’s so easy…just some lime juice, oil, cilantro and some of the pineapple juice from your canned pineapple!

If you’re not crazy about cilantro or you have another favorite salad dressing, feel free to sub your own! And I used leaf lettuce but you could use whatever leafy greens you like- mixed greens, arugula, spinach, kale, etc.

Ingredients

Scale

Salad:

  • 1/2 pound leftover pulled pork
  • 1 red pepper, thinly sliced
  • 5–6 cups leaf lettuce, chopped
  • 1 small onion, thinly sliced
  • 1/2 an avocado, sliced

Pineapple Black Bean Salsa:

  • 1 cup black beans, drained and rinsed
  • 1 cup diced pineapple canned in 100% juice (drained but juice reserved)
  • 1/2 cup diced red peppers
  • 1/2 cup diced onion
  • 2–3 Tbsp cilantro (minced)
  • juice from 1/2 a lime
  • sprinkle of kosher salt

Cilantro Lime Dressing:

  • juice from 1 lime (approx 2 Tbsp)
  • 2 Tbsp oil (i used avocado oil)
  • 1 Tbsp minced cilantro
  • 3 Tbsp pineapple juice (reserved from can)

Instructions

In a small bowl, combine the black beans, diced pineapple (don’t forget to reserve the juice), diced peppers and onions, juice from half a lime, 1 Tbsp cilantro and a pinch of salt and set aside. 

In a hot skillet, saute thinly sliced peppers and onions in a little oil over high heat until slightly charred and softened. 

In a small bowl or jar, combine juice from one lime, oil, pineapple juice and cilantro and mix or shake well. Taste and add more pineapple juice to sweeten if needed. 

Divide lettuce between two bowls. Top each bowl with approx 4 oz pulled pork, pepper and onion mixture, pineapple salsa and avocado. 

Serve with dressing.

Notes

If you’re using fresh pineapple, you could add a little extra oil and a bit of honey to sweeten the dressing. 

Feel free to sub leftover cooked chicken for pork if desired.

Have I mentioned my love for Lakeshore Learning lately? If I had a million dollars I would buy everything in the store – especially all the educational stuff. We recently went in there to get a big calendar to help Squish learn days of the week, when he goes to school, etc…but we also came out with this marble run, which has been a big hit! Both hubby and I had marble runs when we were little and loved them and this one seems to be a hit with Squish. I love that it’s clear so he can watch the marble the entire way. I was a bit nervous about the small marbles and Little Miss but so far we’ve just kept it up on a table or counter, talk about how important it is that he doesn’t drop the marbles bc Lyssie could choke, and watch closely when he’s using it!

I talked about this on my Instagram stories last week when someone asked me what supplements I give my kids. Squish gets a probiotic with fiber and a magnesium supplement every day for his constipation issues and then these liquid omegas is the latest one I’ve added for both of them. I love that it’s liquid. It has a strawberry flavor and the dose is only 1/2 a teaspoon so I just mix it into their applesauce. Hubby and I also take the Nordic Naturals brand of fish oil pills ourselves…and I also take Vitamin D and a probiotic daily.

Hi Friends!

Almost 3 years ago, these Zoodles with Chicken and Spicy Almond Butter Sauce was the very first zoodles recipe I ever published on the blog. I bought my first spiralizer with a gift card from William Sonoma. Honestly, I resisted buying one for a long time because I was certain the zucchini noodle trend wasn’t going to last. Well, here we are in 2018 and the veggie noodle trend is still alive and well!

So, I decided it was about time to reshare this recipe so you all can experience the goodness if you missed it the first time.

The first few times I made zoodles, they did not go over well with the hubby. In fact, I remember one time very clearly. I tried to be very trendy and cook them in coconut oil and he told me that they “tasted like sunscreen” and refused to eat them. I think the turning point was when I made this Paleo Shrimp Scampi and he loved it.

Here’s what happened the first time I made this particular dish:

We’re grocery shopping and hubby requested we get some zucchini.
Night one: I made them with this almond butter sauce for dinner and hubby said “yeah this is going to go on the blog.”
Next day: I went to the store, bought more zucchini and made the same thing so I could take photos.
Night two: We ate them again and they were still just as good.

So now it’s time to share the recipe with all of you! I should note that I have since upgraded from my original spiralizer to The Inspiralizer and I love it. (aff link)

Ingredients

Scale
  • 1 – 1.5 pounds chicken, diced (i usually use a package that’s about 1.25 pounds)
  • 2 cloves garlic, minced
  • 2 medium zucchini (about 1 pound)
  • 2 cups mixed vegetables (peppers, corn, carrots, broccoli, etc)
  • 1/4 cup almond butter (or other nut butter)
  • 2–4 Tbsp orange juice (or broth for a less sweet sauce)
  • 2 Tbsp sweet thai chili sauce
  • 2 tsp sriracha
  • 1 tsp fresh ginger or ginger paste (optional)

Instructions

 

  1. Saute chicken, garlic and vegetables over medium heat until chicken is cooked.
  2. Spiralize zucchini. Use a knife or scissors to cut noodles to the desired length.
  3. Add to pan and heat through.
  4. Combine last 4 ingredients in a small bowl. Add more juice/broth to thin to desired consistency. Pour sauce into pan and mix well.
  5. Serve warm

Notes

This is a fairly lightly sauced dish in my opinion. If you like a lot of sauce, add a couple more Tbsp of nut butter and an extra Tbsp of sweet chili sauce and an extra squirt of sriracha and then enough broth to thin to desired consistency.

I tend to leave my sauce a little bit thick because I find it sticks to the chicken and veggies better that way.

YUM, right?! I recently made this with peanut butter and it was just as good. I think peanut butter is sweeter than almond butter so if I use pb, I use broth to thin instead of juice.

Hi friends!

I’m resharing this fun dessert recipe for Black Bottom Cheesecake Cupcakes today in honor of Valentine’s Day coming up next week. My mom used to make these all the time when I was growing up and until a few years ago, I hadn’t thought about them in a long time. I came across the recipe, which my Mimi used to call Girdle Snappers, in a recipe box and decided to make them. They were just as good as I remembered.

These are fun because you don’t have to choose between cupcakes and cheesecake. You can have both in every bite!

Last week I came across a random package of cream cheese in our fridge that was about to expire, so I thought I would make a batch of these to share with you guys. To make them a little more festive, I added a simple strawberry sauce. When I say simple I mean I literally cooked and mashed some strawberries, let them cool and then pureed them in a blender.

You could get fancier and add some extra sugar, reduce it down into more of a syrup if you wanted but I don’t think it’s necessary. It’s just a fun way to add a little extra sweetness and a pop of color just before serving. Totally optional!

Ingredients

Scale
  • 8 oz reduced fat cream cheese, softened
  • 1 egg
  • 1/4 cup sugar
  • 1 cup chocolate chips
  • 11/2 cups white whole wheat flour
  • 2/3 cup sugar
  • 1/4 cup cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup brewed coffee*
  • 1/2 cup water
  • 1/3 cup oil
  • 1 teaspoon vanilla
  • 1 Tablespoon white vinegar

Instructions

  1. In a small bowl, beat the cream cheese, egg and sugar until combined.
  2. Stir in chocolate chips and set aside.
  3. In another bowl, combine dry ingredients.
  4. Add liquid ingredients and stir until just combined.
  5. Line muffin tins with liners.
  6. Fill halfway with chocolate batter and top with cream cheese mixture.
  7. Bake at 350 degrees for 25-30 minutes.
  8. Let cool, store in refrigerator and serve cold.

The recipe said this should make 12-15 cupcakes. I made 13 before I ran out of the cheesecake mixture, so I just added some extra chocolate chips made 4 plain chocolate cupcakes with the remaining batter. I think they’re best if you really get an even split of cheesecake/cupcake mixture so do your best to do half and half and just remember you’ll probably have some chocolate leftover.

Try not to overbake them. Mine got a little brown on the top due to kid distractions!

They’re best eaten cold, so if you can, make them a day ahead of time and store them in the fridge!

Today we’re setting aside the Instant Pot and slow cooker and diving face first into a super simple oven-baked sheet pan meal! If you want to get technical, this actually requires two sheet pans – one for the meatballs and one for the sweet potatoes, but you bake them at the same time so it’s really easy.

Meatballs are one of my favorite dinner options. My husband likes them, my kids devour them and there are so many different flavor options – I make these Slow Cooker Meatballs (or Instant Pot) all the time and these Thai Chicken Meatballs are one of my favorites for food prep.

Best of all the basic recipe is just so simple. Today’s version is a pork meatball that then dipped in bbq sauce and baked. I paired them with roasted sweet potato rounds because I love that flavor combo and added some steamed broccoli but you could certainly change things up and skip the potatoes, serve with rice or cauliflower rice and throw some broccoli in to roast halfway through. The possibilities are endless!

I chose sweet potatoes because I knew if I sliced them fairly thin, they would cook in about the same amount of time as the meatballs.

So that’s basically all there is to it. Mix up the meatballs, dunk them in some sauce, slice a couple sweet potatoes and boom! Dinner is served. My kinda meal 🙂

Meatballs:

  • 1.25 pounds ground pork (or any ground meat)
  • 1/2 cup finely diced onion
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 cup bbq sauce

Sweet Potatoes:

  • 2 medium sweet potatoes
  • 1 Tbsp oil
  • paprika
  • cayenne pepper (optional)

Instructions

In a large bowl, combine ground meat, onion, garlic, egg and breadcrumbs and mix with hands until well combined. 

Form into balls. (I usually make 12-14). 

Place bbq sauce in a small bowl. One at a time, dip meatballs in bbq sauce and turn until well coated. Place on greased, foil-lined baking sheet. 

Slice sweet potatoes fairly thin. I usually aim for about 1/4 inch slices. Place in a large bowl, add oil and toss to coat. Spread in a single layer on a foil-lined baking sheet. Sprinkle on both sides with paprika (and optional cayenne pepper). 

Place both baking sheets in oven and bake at 400 degrees for 10 minutes. Remove trays one at a time and flip sweet potatoes and meatballs. Bake another 10 minutes or until meatballs reach 165 degrees. 

If desired, you can bake the sweet potatoes an additional 5 minutes to get them a little more “roasted” but they should be fine either way. 

Serve with additional bbq sauce for dipping!

Notes

If you like curry powder, the sweet potatoes also taste great sprinkled with curry powder before roasting.

If you don’t like rounds, you could dice the sweet potatoes instead and just stir them halfway through.

My ground pork comes in 1.25 pound packages. You could easily use 1 pound or up to 1.5 pounds depending on your package size.

Piece of cake, right? As mentioned in the notes, you could easily swap in other veggies if desired. And I used 1.25 pounds of meat because that’s how my pork came packaged. Any package from 1-1.5 pounds should work just fine.

Another note, I often add a couple Tbsp of chia or hemp seeds to my meatballs to boost nutrition. Totally optional but you don’t taste them so I think it’s worth trying if you have them on hand!

I am so excited to share this Instant Pot Salmon Tortellini Soup recipe with you guys. It’s so so so easy and absolutely delicious. And it’s the perfect way to add some more seafood to your diet. For the third year now, I’m partnering with my friends over at the National Fisheries Institute to share some easy seafood recipes like this Grilled Foil Packet Tilapia with Pesto Veggies, this Sheet Pan Italian Salmon with Green Beans and these Shrimp Curry Noodle Bowls.

  • 2/3 cup diced onion
  • 2 cloves garlic, minced
  • 1–2 strips bacon, diced
  • 12–16 ounces frozen boneless salmon
  • 1 (10 oz) package frozen mixed vegetables
  • 10 ounces frozen tortellini
  • 1 quart chicken or vegetable broth
  • 1 tsp paprika
  • 1 tsp Old Bay seasoning (optional)
  • 2–3 handfuls fresh baby spinach

Instructions

Set the Instant Pot to saute and add chopped bacon, onions and garlic to the pot. Saute for 3 minutes, stirring constantly. 

Switch Instant Pot off. Add frozen salmon (cut into 3-4 pieces if not already portioned), frozen vegetables, frozen tortellini, broth and seasonings to the pot and stir. 

Cover and use the manual (or pressure cook) button to set timer for 6 minutes. 

Use quick release once finished, flake salmon into chunks with a fork and stir in fresh baby spinach.

Notes

You can use salmon with the skin on, just pull the pieces of salmon out after cooking, remove the skin, flake into chunks and return to the pot.

You could probably do this with fresh salmon and tortellini but I would cut the cooking time in half and I haven’t tried it myself.

I pulled out the old crockpot this past weekend to test out a new recipe for Slow Cooker Balsamic Pot Roast to share with you guys! I actually rarely use my crockpot anymore now that I have the Instant Pot but I know there are some of you out there who don’t have an Instant Pot so I’m trying to appeal to everyone! Before you ask, no, I have not tried this recipe in the Instant Pot yet. Yes, I think it would work, but I have no idea how long to tell you to cook it for.

I’m am by no means a pot roast expert. Quite honestly, I don’t really even like pot roast. You guys know I’m not a huge beef eater. But hubby likes it so I make it occasionally. Prior to this, my tried and true recipe was to put carrots and potatoes in the bottom, add the roast, pour in a little beef broth and top it with a packet of dried onion soup mix. If you haven’t tried it that way, please do. It really doesn’t get any easier.

For this recipe, I decided to get slightly fancier. First of all, I browned the meat. Hellooooo extra flavor! Then I deglazed the pan with balsamic vinegar, plus some beef broth and a little brown sugar for good measure. After letting it cook all day, I removed the meat and veggies, poured the liquid into a saucepan and reduced it down for a while, creating a glaze/sauce to top it with before serving.

It’s a few extra steps, but I think it’s definitely worth it for the flavor. Here’s how you make it:

Ingredients

Scale
  • 1 pound carrots (4–5 large carrots)
  • 1 pound red potatoes
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 Tbsp oil
  • (approx) 3 pound boneless chuck roast
  • 1/2 cup balsamic vingear + extra 2-3 Tbsp (optional)
  • 1 cup beef broth
  • 3 Tbsp brown sugar

Instructions

Peel carrots, slice in half lengthwise and cut into thirds.

Cut potatoes into quarters or eighths depending on how big they are.

Place carrots, potatoes, onions and garlic on the bottom of the slow cooker.

In a large cast iron skillet (or dutch oven), heat oil over medium-high heat.

Brown chuck roast for 3-4 minutes per side, then transfer to the slow cooker.

Add balsamic vinegar to the skillet to deglaze the pan, using a spoon to scrape up any browned bits stuck to the bottom of the pan.

Add beef broth and brown sugar and cook 2-3 minutes, stirring constantly.

Pour sauce over meat in the slow cooker and cook on low for 6-8 hours.

Remove meat and veggies from the slow cooker. Transfer liquid to a saucepan.

Bring to a boil and let boil for about 10 minutes to reduce down. (Optional – add 2-3 Tbsp balsamic vinegar to the liquid before you start to reduce it down. This will give you a stronger balsamic flavor).

Pour sauce over meat before serving.

Pretty easy, right? Like I mentioned in the recipe….for a stronger balsamic flavor, add a few extra Tablespoons of balsamic to the liquid before you reduce it down in the saucepan. For a milder flavor, just reduce the liquid you have.

3 Food Products I Want To Try

  • Wild Brine Spicy Kimchi Sriracha – I’m trying really hard to find some probiotic-filled foods that I like the taste of. Totally intrigued by this sriracha…and they also make a salsa that caught my eye!
  • Just Date Syrup – I don’t love their tagline “the better sugar” because I don’t necessarily think that’s true. But I do think it’d be a fun sweetener to try adding to things like pancakes, oatmeal etc. Made with just one ingredient- dates!
  • Chosen Foods Avocado Oil – This is starting to gain popularity, mostly for its heart-health benefits and mild flavor. I’m ready to give it a whirl!

  • Spot It! Splash (aff link) – My friend Lindsay mentioned this on Instagram and said her son loves it. I’m always looking for new games to play with Squish.
  • Zingo! (aff link) – This is another game I saw someone playing with their older toddler on Instagram.
  • Road Tape (aff link) – We bought Squish some of this for Christmas and got it out a couple weeks ago. It sticks easily to the carpet and was easy to remove. Lots of fun for driving cars and trains.

Hi Friends!

Time for another breakfast idea – Apple Cinnamon Blender Waffles! As you guys know I’m a big fan of breakfast for any meal or snack during the day so please don’t limit waffle hour to just the early morning. My Whole Wheat Yogurt Waffles are my absolute favorite waffles – perfect for making a double batch and freezing them so you have them on hand to pop in the toaster. However, it’s always good to change things up occasionally so I present to you this flavored waffle.

Apple cinnamon will forever be one of my favorite flavor combos, but I’m not a huge fan of having chunks of things in my waffles and pancakes. (ie apple chunks, banana slices, etc. I feel like there’s always a little bit of raw batter around the edges of the pieces and that just doesn’t float my boat. So, I whipped out my blender, tossed in all the ingredients and pureed until smooth.

Added bonus to using the blender instead of the bowl? When you’re done, just add a little water and dish soap to the blender and let it whirl itself clean!

We all know apples and peanut butter make the perfect combo as well so I added some peanut butter to the batter for some healthy fats and protein and I always drizzle more pb on top.

Ingredients

Scale
  • 1 egg
  • 1 cup white whole wheat flour
  • 1 cup oats
  • 1 cup milk (cow or plant-based)
  • 1 Tbsp baking powder
  • 1 medium apple, roughly chopped (appox 1 cup)
  • 1 Tbsp cinnamon
  • 2 Tbsp oil
  • 2 Tbsp sugar
  • 1/4 cup peanut butter
  • optional toppings: peanut butter, choc chips, yogurt, fruit, etc

Instructions

Add all ingredients to a blender.

Blend until smooth.

Cook in a well-greased waffle iron. (Makes approximately 6 regular waffles)

Top as desired.

Hi friends!

If you’ve followed me for any length of time, you know that we are certainly not an egg-free household. In fact, we go through about 3 dozen eggs a week I would say. Pretty much all of the baked goods I make use eggs. My kids and I both eat eggs for at least one meal every day. You get the idea. However, I know there are a growing number of households out there who are dealing with egg allergies. I can imagine how frustrating it might be to find out your child has an egg allergy, so in the spirit of making your life a little easier if you fall into this category, I rounded up some yummy snacks.

The good thing about these snacks is that they’re full-on delicious. They can easily be enjoyed by anyone- allergy, no allergy, child, adult, etc. But they also happen to be egg-free snacks specifically geared towards kids.

Cooking with Kids, Toddler Meltdowns and Workouts

Hi friends!

Last month I asked you guys to fill out a little reader survey for me and it really helped me as I was planning my content for the upcoming months! Thanks so much again to those of you who took the time to respond. The survey also had a place where you could write in questions you had for me or tell me about other topics you’d like me to write about.

I got a lot of the same questions from several of you so I rounded them up and did my best to answer some of them in one big post! Here you go!

{Squish – 17 months}

How do I get my kids into the kitchen with me?

I started bringing both of my kids into the kitchen with me from a very early age. When they were really little, I would wear them in the Ergo while I was cooking. As they got a little older, I would sit them on the floor and let them play with the plastic tupperware lids, bowls, pots and pans. Around age one, once they were solidly standing, I started letting them stand at the counter with me using our learning tower. I’d give them a bowl with some veggie scraps and let them play.

I think 18 months or so was the major turning point with Squish as far as actually being somewhat useful. At that age they can help you scoop and measure things like flour, mash things, stir with a big spoon etc. As they get older they can start to tear lettuce, chop with a plastic knife, scoop with a cookie scoop, peel veggies etc. Check out my Kitchen Tasks for Toddlers post for more age-appropriate ideas! Not sure what kind of kitchen stuff to buy? Here’s a big list of Kitchen Tools For Kids. It includes a lot of the stuff Squish uses and even a few things we don’t have but I wish we did!

For more ideas, check out this Kitchen Tasks For Kids post. But the most important thing is to just get them in there and let them have fun. Don’t worry about the mess. Don’t freak out if they spill some flour or add a little too much cinnamon to the bowl. Who cares if all the cookies aren’t exactly the same size or the vegetables aren’t perfectly peeled. They’ll get better with practice and they’re learning so much!

How do you handle toddler meltdowns and rough days with kids?

I wrote a post called How To Handle Toddler Meltdowns over the summer where I share how I handle meltdowns in our house. As I mentioned last week on Instagram, we are in the thick of the threenager stage with Squish and meltdowns are a regular occurrence around here. I admittedly lose my cool more often than I would like to, but it’s something I’m working on. I focus a lot on keeping my voice neutral and not outwardly reacting when he purposely tries to antagonize me. I also do a lot of deep breaths and counting to myself and am constantly reminding myself that he’s only three and he does not have all of the same communication tools that I do as an adult, so sometimes screaming and meltdowns are the only way he knows to get his point across.

If you’re a longtime reader, you may recall that his sister was a colicky baby and I spent the first 7 months of her life at home with a screaming baby and a young two-year-old. It was not easy. If you’re in a similar situation, you can read my tips here: To The Parents With The Colicky Baby.

I’m glad to be past the colicky newborn stage, but at the same time, Little Miss is now almost 14 months and is definitely entering a new stage of her own. She wants what she wants and when she doesn’t get it, it’s not pretty. So as we head into the next few months, I’ll be working on communication skills with both my kiddos at different stages and doing my best to keep us all sane.

As a mom, remember the importance of self-care, asking for help and giving yourself a break and cutting yourself some slack when things get tough.

How do you fit in your workouts during the day?

As some of you longtime readers know, we opened a CrossFit gym when Squish was 8 months old. For two years I pretty much had a built-in window to workout because I had to be at the gym almost every day. Was it easy dragging one, and then two, young kids to the gym once (sometimes twice) a day and trying to keep them out of the way and entertained so that I could coach and/or get a workout in? No. But I loved it. It gave me an excuse to get out of the house, work up a sweat and interact with adults every day. We closed our gym last July and since then, working out has been a bit more challenging for me.

We moved a ton of equipment into our garage so I have no lack of equipment. And when the weather was warm, most days a workout was doable because Squish could run around outside or watch his tablet in the garage with me and Little Miss could either sit in the playpen or take a nap.

Now that it’s cold, it’s not exactly realistic for me to drag two young kids out into a garage when it’s 6 degrees outside so that I can try to get a workout in. I’ve also been struggling with some injuries for the past few months in my hips and back. That’s been frustrating, made it impossible for me to lift heavy weights and all-around put me in kind of a funk.

Then about a month ago, I slowly started pulling myself out of the funk. As I shared on Instagram here,  I can be pretty hard on myself and I was having trouble coming to terms with the fact that I essentially had a whole gym just a few steps out my back door and most days I couldn’t even find the time to make it out there. So I took a step back and realized that 1) I’m not a failure 2) It’s ok if my workouts look different now than they did a few years ago and 3) I just have to do the best I can, when I can, with what I have.

So for now, I’m focusing on short, intense workouts….most of which can be done inside, with a dumbbell, kettlebell or bodyweight…and I squeeze them in while the kids are playing or watching tv. As much as I’d love to join another Crossfit gym and get to a class every day, it just doesn’t realistically work with our schedule…or my body…right now. So last week I joined a kickboxing gym called 9Round to try something different. It’s a 30-minute circuit workout and there are no class times. So far it’s been challenging, while still feeling ok on my hips and back.

So my plan is to try to get there one morning before hubby goes to work, one evening while hubby puts Squish to bed and then Saturday mornings, and then continue to do a couple at home workouts per week as well. If you’d asked me a year ago what I thought I’d be doing to workout in January 2018, this is definitely not what I would have said. But you know what? That’s ok! Life happens…and the best you can do is react, adapt and make it work.

How do you structure your days, plan activities, find activities?

I always find it kind of amusing when people ask how I structure our days because most days I feel like I’m just running around like a chicken with my head cut off…but I do think that the past few months we have finally reached a point where our days do have a little bit of structure. Two days a week Squish goes to school for 3 hours in the morning. If I’m lucky, Little Miss will take a nap for at least part of that time. I try to use at least one of those mornings to cook and photograph recipes for the blog. Sometimes I run errands, because it’s way easier with just one kid.

The other mornings, I try to capitalize on alone time with Squish in the morning. He wakes up at 7. She wakes up sometime between 6 & 8. He eats breakfast immediately after getting up, and then watches a couple show on PBS. I try to have the TV off by 9. She usually goes down for a nap by 9:30 and then we hopefully have 60-90 minutes of just Squish and I. I try to do something educational or creative here – arts and crafts, practice with letters or numbers, cook something etc. Then she gets up and we either go somewhere (ie run an errand, go to the library, etc) or play at home. Then it’s lunch time. After lunch we play a bit more and then he goes down for a nap. Little Miss and I play and I try to encourage her to play with stuff her brother doesn’t let her near when he’s awake.

She eventually goes down for a nap as well and I work furiously on the computer or take more photos for the blog. They both wake up, snacktime, then the witching hours. I’d say currently 3-5pm are the toughest. Squish wants dad to come home and is typically most out of control at this time. And she’s usually her crabbiest. Sometimes I try to save fun activities for this time of day to distract everyone and avoid chaos. Sometimes dad comes home at 5 and we’re all laying on the floor crying.

Then we make dinner, eat, try to squeeze workouts in, etc. She goes to bed around 6:30 and he watches a show and goes to bed around 7:15-7:30. Then I work more and collapse into bed.

I get most of my inspiration from Pinterest and Instagram stories. If I see something that catches my eye on either, I usually just screenshot it and then add it to a list of ideas I have on my phone. Occasionally, I also check out library books with craft ideas and kids ideas and take pictures of some of the pages that catch my eye.

On Sundays, I try to scroll through my screenshots and lists and have a few ideas for things I want to try during the upcoming week.

How do you accomplish so much with kids underfoot/How do you run a business from home with kids home?

Like I mentioned previously, for a lot of my blog related stuff, I really try to squeeze it in when they’re sleeping. Early mornings, late nights and naptime. Over the summer, I also had a babysitter one morning per week so I could go to Starbucks and work on my computer. That being said, there are definitely times when I need to get stuff done and one or both of them are awake. The first thing I do I give them an area. We have a pretty open floorplan downstairs so initially, that just meant gating off the stairs to the upstairs and the stairs down to the family room. Once I’m confident they won’t fall down the stairs, I do let them wander. My number one tip is this: Let them be. Let them cry. Let them explore. Let them make a mess. You are not responsible for entertaining your children 24/7.

Let me reiterate the part about letting them cry. Yes, I let my kids cry when they’re upset. Sometimes I share videos of them both screaming on social media and I wonder if people are judging me for standing there taking a video instead of comforting them. Now obviously if they are hurt, or extremely worked up, I will go to them immediately. But if they’re just crying because I won’t let them eat a cookie. Or because I won’t let them watch TV. Or because they’re in a bad mood, then you better believe I do occasionally tune them out and let them scream, carry on and work through it themselves while I cook dinner or send a couple emails.

Of course, I would prefer if they were happy and entertained instead of laying at my feet screaming, so here are some other things I do:

  • Get them involved. With Squish I let him help me as much as possible. Whether it’s with cooking, cleaning, laundry etc. Anything where I can give him tasks to help, typically makes him happy.
  • With Little Miss, Cheerios and babywearing were my big saviors when she was younger. From about 6-12 months, usually either wearing her in the Ergo, sitting her on the floor with a bowl of Cheerios or giving her access to a drawer full of plastic cups, tupperware etc or letting her play in the pantry would keep her entertained on a good day.
  • TV. Yes, my kids watch TV. Well, Squish does. Little Miss has shown literally almost no interest in the TV at all since the day she was born. Squish, however, loves TV and yes he watches it. I keep it limited pretty much to shows on PBS and youtube channels with nursery rhymes, songs about colors, shapes etc (Little Baby Bum is a favorite youtube channel). I try really hard not to rely on TV as a babysitter for him but yes there are times when I turn it on just so I can get him to sit still and stop screaming so I can get something done.
  • Activities. Coloring, stickers, painting, play dough and other activities that he can do at the counter in the kitchen while I’m in there doing food prep have also been good.

How do you handle Squish’s chronic constipation?

This is something we’ve been battling since he was born. We still haven’t found a perfect solution. For probably a year and a half he took Miralax every day. I’ve finally reached a point where I really don’t want him on it daily anymore but we’re still searching for a manageable solution. Currently I do my best to limit dairy in his diet. He doesn’t drink cows milk and I try to really limit cheese and yogurt even though he loves them. He loves water, luckily, so I encourage as much of that as possible. We also give him Culturelle Kids Regularity (2-3 packets per day mixed with a little applesauce) and Natural Vitality Calm Specifics Kids (a magnesium supplement) to help him go regularly. It’s still a work in progress, but we are finally having some success with the combo of those two products.

How do you decide what’s for dinner every night?/ How do you throw dinner together on the fly?

This was definitely the most frequently asked question, so guess what? I decided to write an ebook about it! I worked really hard on my vacation last week to get the content finished and I’ve hooked up with an awesome designer who is currently working on making it look pretty for you guys to read. Tired of packing the same thing for lunch every day? Here are 50 packable lunch ideas that are quick, easy and healthy! Perfect for kids and adults.

What are your favorite packable lunch ideas? 

As you probably know, I don’t currently have to pack my lunch. Neither of my kids are eating lunch at school right now. AND my husband works just a few miles away and comes home for lunch. So we don’t do a whole lot of lunch packing right now. However, that hasn’t always been the case. When I went back to school to become an RD, right around the time I started this blog, I packed my lunch for a solid 4 years. I even used to share my lunches in my very early blog posts.

So, I’m a little out of practice, but a few years ago, I shared a roundup of 50 Packable Lunch Ideas (that I updated recently) and some Healthy Packable Lunches For Kids. I also shared some salad topping ideas. So hopefully those posts are helpful. And as soon as Squish starts longer school days I’ll be sharing his lunches as well. How do you budget for real food?

I think I wrote a post about eating on a budget years ago but I’m sure it’s woefully out of date so here are a few tips:

  • Eat less meat. Plant-based protein sources tend to be much cheaper than animal proteins
  • Buy in bulk (but only if you’re going to use it. Buying a 20# bag of something could save you money but only if it’s something you’re going to use and can use before it goes bad
  • Shop the sales. Meal plan to make multiple meals using ingredients that are on sale. Also keep a well-stocked pantry and stock up on non-perishables when they go on sale.
  • Shop in season. Don’t buy fresh blueberries in January if you live in Ohio. They’ll be more expensive and not as fresh.
  • Compare unit costs not prices. Don’t be fooled by sale prices if they’re for items of different sizes. You might not actually be saving as much money as you think.
  • Make things homemade: bread, condiments, sauces, trailmix, broth etc.
  • Consider store brands vs name brands.

Welcome to 2018! I thought I would pop in to help you get the new year off on the right foot by introducing you to this delicious Broccoli Slaw Salad in a Jar. When my friends at Mann’s Fresh Vegetables reached out about partnering with me to share a recipe using one of their delicious Veggie Slaw Blends, I jumped at the chance!

You guys know that I’m not a huge salad lover. I just don’t love lettuce. A salad has to have a lot of REALLY good toppings for me to get on board with it. But a lettuce-less salad? Now you’re speaking my language!

The salad in a jar trend has been around for a while now, but if you still haven’t jumped on board, this is just the recipe to get you started. If you’re already a salad in a jar lover, add this to your repertoire.

Broccoli Coleslaw Salad with chicken and honey mustard dressing

It’s a combination of chicken (you can use rotisserie chicken, pulled chicken or any sort of leftover chicken really), roasted sweet potatoes, red peppers, hard boiled eggs, broccoli slaw and a super simple homemade honey mustard dressing.

You can prep several salads at the beginning of the week, pop them in the fridge and enjoy one every day for lunch! The dressing goes at the bottom with the chicken and almost acts as a marinade the longer the salad sits. The broccoli slaw goes on top so it stays fresh and crunchy. No soggy salads here!

When you’re ready to eat, simply turn the jar upside down and give it a good shake to dump everything into a big bowl and eat!

This Broccoli Slaw Salad in a Jar is the perfect packable lunch! Transform leftover chicken into an easy, healthy lunch option that can be prepped ahead of time for a busy week!

Ingredients

Scale
  • 2 Tbsp olive oil
  • 3 Tbsp dijon mustard
  • 2 Tbsp lemon juice
  • 1 Tbsp honey
  • 6–8 ounces cooked chicken (rotisserie, pulled, diced, leftover)
  • 1.5 cups roasted sweet potatoes
  • 1/2 cup chopped red peppers
  • 3 hard boiled eggs, chopped
  • 2 cups Mann’s Broccoli Cole Slaw

Instructions

In a small bowl, mix olive oil, mustard, lemon juice and honey and whisk until well mixed. Taste and add more honey if needed. 

Divide dressing evenly between two large mason jars. 

Add 3-4 ounces of chicken to each jar. 

Add half the sweet potatoes, red peppers and hard boiled eggs (in that order) to each jar. 

Top each jar with 1 cup broccoli slaw. 

Store in the fridge. 

To serve, dump contents of jar into a large bowl, toss with a fork or spoon and enjoy.

Notes

You could easily use storebought honey mustard dressing. 

You could also layer the ingredients in a jar and pack the dressing separately. 

You could also use Mann’s Sweet Potato Cubes to make things even easier!

Simple right? Perfect for leftover chicken OR food prep. You can specifically prep a batch of these salads during your food prep window to keep lunch time as stress-free as possible!

One note- This is a thicker dressing and some of it may get stuck in the bottom of the jar because it will thicken as it sits in the fridge. You can either pour everything in a bowl then stir the chicken around in the dressing that sticks to the bottom and scoop it out, or you can keep the dressing in a separate container and add it just before eating. You could also add a tiny bit of water to the jar after you’ve dumped everything out to thin up the remaining dressing and make it easier to pour.

Why My Toddler Doesn’t Always Eat What I Eat

If you’re looking for tips for feeding toddlers, here’s my approach as a Registered Dietitian. Spoiler alert- sometimes I serve two different meals!

Hi friends!

This post has been a long time coming. Literally. It’s been in my drafts folder for at least 6 months. I originally came up with the post topic on my own…but it kept getting pushed to the back burner. And then a few of you started asking questions. And then I got more questions. Bottom line is, people notice (especially those of you who follow me on Instagram) when you don’t feed your kids the same thing you’re eating.

So I figured it’s about time for me to dive in and explain my thinking a little bit further. The short and sweet answer is this:

I believe that I can serve healthy foods to my kids without having to serve them the exact same meal I’m having. 

I realize that this may not be the most popular opinion, especially coming from a Registered Dietitian. And let me be clear that I don’t think there’s anything wrong with making one meal and serving everyone the same thing. I know it works for a lot of people, I understand how it can be helpful for picky eaters and I think it’s a great idea if it works for you and your family.

But I don’t think it’s the only option. And right now, I don’t think it’s the best choice for our family. As I share a little bit more about why, please remember that this is MY view about what works best for MY family. Every family is different and it’s possible that you will disagree with my opinion or think that what I do isn’t right for your family. THAT’S OK. I’m simply sharing my opinion in case it does help someone else out there whose thoughts or family are similar to mine. It’s also possible that my view will shift as my kids get older.

So, here we go:

Yes, I believe in Ellyn Satter’s Division of Responsibility when it comes to feeding children. The division of responsibility in feeding encourages you to take leadership with the what, when, and where of feeding and let your child determine how much and whether to eat of what you provide.

At this age, it’s my responsibility to provide food for my kids. It’s their choice what and how much of it they eat.

Right now, this topic mostly applies to Squish, who is 3. Little Miss is still a bit too young for me to put some of these rules about having seconds, etc into play. But in the coming months, when she reaches that point, I’ll do the same thing with her.

My general overarching policy is that I decide what to put on his plate for dinner. If he doesn’t want to eat it, that’s fine. But he doesn’t get anything else until breakfast. Yes, there are nights when he goes to bed after eating only one or two bites of dinner. No, I don’t freak out about it. Kids are very good at eating intuitively and if he skips dinner, I trust that he’ll make up for it the next day or later in the week. I also often remind myself is that dinner is typically his worst meal. He is a very good eater at breakfast, and usually at lunch. He also eats snacks. By the time dinner rolls around, he’s just not always that into it. And that’s fine.

When it comes down to it, the reason why I sometimes serve him something different is because it’s not that hard for me. And I would rather focus on the actual act of family dinner and us eating together vs. the what we’re physically eating.

You guys know I’m a fan of food prep and although I don’t prep a lot of whole dinners, I do often prep components and that makes it easier for me to throw together a quick meal for him without any real extra effort on my part. So no, I don’t advise spending hours in the kitchen making two totally separate meals…but there are ways to serve different meals without a lot of extra work:

For example: Perhaps one night my husband and I are having taco salads with ground turkey taco meat, lettuce, rice, tomatoes, corn, black beans etc. Squish is not a huge fan of ground meat unless it’s made into a meatball. He also doesn’t love lettuce, or tomatoes, or corn or black beans. He does love tacos and quesadillas and he likes chicken. So maybe on that night, I would make taco salads for us and for him I would use some of the chicken that I shredded or baked during my food prep to make a hummus and chicken and cheese quesadilla, with a few black beans added in. Or I might make him a ground turkey and cheese quesadilla with a few beans to make it more likely that he would try the turkey.

Or say we’re having chicken curry, which he has tasted multiple times and tends to not be a fan of….I might give him some rice, a small piece of naan that we’re having, a little curry and then a couple meatballs that I had made during food prep over the weekend and some carrots with ranch.

In the photo above, hubby and I were having a skillet dinner with roasted potatoes, corn, peppers and onions, summer squash, pesto and shrimp. Squish is not a fan of any of those things. So he got strawberries, which he loves, noodles (which he loves) covered in pesto (which is relatively new to him but he eats occasionally), a little bit from our skillet, plus some parmesan chicken tenders that I made earlier in the week while doing food prep and just had to pull out of the fridge, cut up and serve.

The bottom line is: yes, sometimes I make something and all of us eat the same thing. Sometimes I make something for hubby and I and give Squish something different using stuff I already had on hand (along with a taste of ours). And you know what? Sometimes I make something for my husband that he likes…and it’s not something I like….so I eat something totally different. And that’s ok too. It works for us and I still feel good about what my family is eating, without feeling pressured to always have everyone eat the same thing.

One thing I do think is important if you take this approach: You have to work hard at continuing to introduce your kids to new foods and a variety of flavors, cooking methods, etc. I don’t recommend just giving up and serving them chicken nuggets every single night for dinner because they don’t seem to like anything you’re making. There are definitely nights that Squish doesn’t eat what I serve him, even if it’s different from what we’re eating. And that’s ok. I work hard to make sure I introduce him to different flavors, spices, vegetables, meats etc, even if he happens to try them at a different time than I eat them.

Since I am still regularly introducing him to new foods, here are some things I focus on when I serve him things I’m not sure he’ll love:

  • I always make sure there’s something on his plate he likes
  • I focus a little harder on making sure he’s hungry. If he eats a huge breakfast and lunch, doesn’t get much physical activity and has several snacks on a certain day, then that’s probably not the best day for me to serve him something brand new for dinner…because he probably won’t be that hungry and he might not eat it even if he does like it. If it’s a day where he eats breakfast, goes to school and runs around all morning, eats a smaller lunch, takes a long nap and only has a small snack before dinner, chances are he’ll be hungry and also more willing to try something new on his plate. Or sometimes I’ll try something new at breakfast or lunch instead of dinner.
  • I let him help make it. I try to do this all the time but especially for new recipes.
  • I don’t make a big deal about it. I don’t say things like “ohhhh we’re having this brand new thing for dinner…i hope you like it….yada yada”. I just serve it the same way I serve every meal.
  • I often mix it with something he likes. If I want him to try peas, I might mix them into mac and cheese, which he loves. Or if I want him to try ground beef or beans, I’ll put them in a quesadilla because he loves tortillas and cheese.
  • I’m willing to keep things separate. If I want him to try a chicken and noodle dish with some kind of asian sauce, he likely won’t touch it if i serve it all mixed together, but if I separate out the noodles, the chicken and the veggies, he might try at least one part.

Here are some questions I’ve gotten on this topic:

What’s your policy if he wants seconds? 

If there is fruit on his plate, he will always eat that first. And he almost always asks for more. In order to get more fruit, he has to eat everything on his plate (including vegetables). If he asks for seconds of the main dish, I give it to him, even if he hasn’t eaten his vegetables. If he asks for thirds of the main dish, I tell him no, until he eats his vegetables.

I will never force him to eat everything on his plate. But I won’t give in and give him more fruit just because he’s still hungry and doesn’t want to eat his vegetables. (For example in the photo above of the deconstructed chicken philly sandwich…he immediately ate the cheesy bread and orange, didn’t touch his peppers and ate some of his chicken. He asked for more bread and more orange, both of which I said no to, unless he wanted to eat the rest of his chicken and his peppers. He decided to be done for the night.

Do you make him take a no thank you bite?
No. I encourage him to try a bite of everything on his plate but I never force him to.

Why do you sometimes serve dessert with the meal?
I work hard to not put dessert on a pedestal. I firmly believe that restricting something only makes you want it more. Does that mean he gets dessert every night after dinner? No.  Sometimes I include a donut with breakfast or a cookie with dinner. I don’t point it out. I don’t make a big deal about it. Sometimes he chooses to eat it immediately, but often, he’ll eat almost all his meal before even touching the dessert. If we make cookies in the afternoon, I let him eat one. In other words, my own approach to healthy eating is that cookies, desserts and other sweets can easily be included and the same goes for my son.

Why do you feed your baby something different if she rejects the first thing you give her?
First of all, my daughter is a very good eater. She’s almost 14 months and she eats A LOT. She’s not very picky (similar to her brother at that age) but I think that will come later. She’s also still learning.  For the past several months, my focus has been on exposing her to a variety of foods and providing food for her to eat. Soon, she’ll reach the age where she’s consciously deciding not to eat something just because she’d rather have something else (ie getting pickier). At that point, I’ll start taking the same approach that I take with him, where she can eat what I give her or not eat until morning. However, right now, I’m happy to give her another option so that she’s eating something. Right now, that means occasionally giving her a different protein source, some extra vegetables or some more healthy fats to help her grow and develop.

How do I choose what meals to make during the week? 
I do cook a lot of dinners on the fly (hence the upcoming ebook) but in general, I try over the course of the week to cook some kid-friendly recipes that I know everyone will like, some that I can easily separate into different components Squish can eat the separate parts and hubby and I can eat it mixed together and one or two that I don’t think he’ll eat, in which case I’ll serve him something different, but also put a small serving of what we’re having on his plate.

Do you serve your kids foods you don’t like?
Yes. This is something I work really hard at. I was world’s pickiest eater for 25 years and even though I’ve gotten a lot better, I still lean towards the side of picky eating and there are a lot of things I don’t like. That doesn’t mean my kids won’t like them. But it COULD, if I don’t expose them to these things. Luckily, my husband is NOT a picky eater. So I often cook things for him that I don’t particularly like. And I use those opportunities to serve those foods to my kids as well, without showing my bias or opinion, so that they can form their own opinions. This includes everything from vegetables like asparagus and cauliflower, to meat like beef.

Why do you keep serving stuff they don’t like?
It’s a well-known fact that it can take a crazy number of times being exposed to a food before a kid is willing to try it or decides they like it. I almost always give them a little of what we’re eating even if I don’t think they’ll like it. Squish has definitely gotten pickier and will loudly tell me “I don’t like that” or “I don’t want that”. My response is “that’s fine, but I’m going to put it on your plate. You don’t have to eat it, but it’s going to stay on your plate and you’re welcome to try it if you want to.”

Hi Friends!

I originally shared this recipe right before Squish was born, after I did a little reader survey and you guys asked for more slow cooker recipes. Fast forward three years, I did another survey and guess what? I still make these every few weeks and you guys are still asking for more slow cooker recipes. So I’m resharing this recipe with a few updates (ie adding more veggies) and I also tested them in the Instant Pot so I could give you guys directions for that as well.

Slow Cooker Meatballs

Meatballs that can be cooked in the crockpot or Instant Pot, packed with vegetables.

 

There is nothing super fancy about this recipe. It’s basically just meatballs, except they’re cooked in the crockpot so it’s hands off once you get them in there. I also added some extra veggies because that’s never a bad idea! Once they’re cooked you can serve them over spaghetti, on a bun for a meatball sub, or eat them with just the sauce!

These Crockpot meatballs can be made in the slow cooker or Instant Pot for an easy, healthy dinner. Serve them over noodles, on a sub bun or enjoy them plain!

  • Cook Time: 6 hours
  • Total Time: 6 hours 10 minutes
  • Yield: 12 1x

Ingredients

Scale
  • 1 pound ground beef (or turkey)
  • 2/3 cup breadcrumbs (i use panko)
  • 1 egg
  • 1 cup finely diced mushrooms
  • 2 cloves garlic, minced
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 2 Tbsp hemp seeds or chia seeds, optional
  • 2–3 large carrots, peeled and shredded
  • 1 red pepper (finely diced or shredded)
  • 1 (24 oz) jar tomato sauce

Instructions

Combine all ingredients except carrots, peppers and tomato sauce in a large bowl.

Mix well and form into balls.

In a hot, well-oiled pan on the stove (or using the saute function on the Instant Pot- make sure you have a thin layer of oil covering the bottom of the IP & be sure to leave the lid off), brown the meatballs on all sides. You may need to do this in batches.

If using the crockpot, add browned meatballs, plus shredded carrots and peppers and sauce to the slow cooker, cover and cook on low 4-6 hours.

If using the Instant Pot, remove all the browned meatballs, add a tiny bit of water or broth and scrape up any large brown bits that are stuck to the bottom of the pan. Add sauce and shredded veggies, then add meatballs and stir to combine. Use the manual (or pressure cook) button and cook for 10 minutes. Use the quick release and check to make sure internal temp of meatballs is 165 degrees F.

Notes

Always add about 1/4 cup water to the jar of sauce, put the lid on, shake and then add to ensure you get all the sauce out of the jar!

Easy enough, right? The hemp or seeds are optional but add a nice little nutritional boost and you can’t taste them. The carrots and peppers should get nice and sauce and pretty much blend into the sauce. Neither of my kids notice the mushrooms in these.

I make 12-16 meatballs but you can make yours whatever size you want. Just keep in mind that smaller will cook faster and you want them all to be similarly sized so they cook evenly.

You guys know I’m not a huge protein powder user, but I came across this brand and am intrigued! There are just 4 ingredients and it’s a combination of hemp, brown rice and pea protein, plus sacha inchi. I like that it’s unsweetened and would probably give it a whirl in some smoothies, baked goods, etc!

Last year I shared several large roundups of toddler meal ideas and they were quite popular. I strongly believe that their popularity is not based on the fact that the meals I feed my kids are crazy unique or exceptional….it’s simply because as a parent, coming up with stuff to feed your kid every day can get overwhelming. It’s easy to find a few things they like and serve them over and over again instead of trying new things and battling with them to try to get them to eat.

I share these roundups not because I think you should be giving your kids these exact meals…but because I hope that perhaps they’ll give you some inspiration or spark some new ideas! Maybe you’ll just see a few components of a few meals and think “hey! I’ve never tried serving that to my kid”. I consider that a win.

A few things to remember:

  • When I think about how I feed my kids, I try to look at the whole week nutritionally, not a single day. So yes, not all of these meals have vegetables or are perfectly balanced.
  • There are food item repeats because he’s 3 and definitely has his favorites (and a couple photos I put in the collages twice on accident)
  • These are all from the span of a month or two. Certain things, like pears, are in season so we eat them a lot. You could easily sub other fruits or veggies for the ones I have shown.
  • This is just meant to give ideas. All kids eat different amounts and varieties.
  • This is mostly lunch and dinner. He eats pretty much the same thing for breakfast every day, but there are a few breakfasts pictured.
  • I labeled brands the first time the product appeared but not each time throughout the post
  • No, he does not always eat everything I serve him.

So here are some ideas!

Toddler Meal Ideas

  1. Peas, buttered noodles and smoked salmon
  2. Mashed squash, cinnamon applesauce, oatmeal with Crazy Richard’s peanut butter
  3. Siggi’s yogurt, cucumbers with Sabra hummus & baked oatmeal french toast sticks
  4. Roasted sweet potatoes, confetti cauliflower rice, hamburger with Annie’s ketchup
  5. Apple slices, carrots with ranch, naan pizza with mushrooms and meatballs
  6. Cherry tomatoes, Garden of Eatin chips with hummus, peanut butter & banana sandwich (Dave’s Killer Bread)
  7. Maple bacon roasted carrots, avocado, Cajun meatloaf and pears
  8. Simple Mills crackers with hummus, carrots with ranch, Lasagna soup
  9. Steamed peas, Triscuits with guac, chicken sausage and an apple

Healthy Toddler Meals

  1. Carrots & ranch, pears, crackers and smoked salmon
  2. Steamed sweet potatoes, yogurt, Kodiak cakes
  3. Broccoli tots, strawberries, turkey, hummus & cheese roll-up
  4. Spaghetti, Chocolate Butternut Squash Muffin, pulled pork with bbq sauce
  5. Yogurt, noodles, Instant Pot Hummus Chicken, pears
  6. Roasted sweet potato, Annie’s Cheddar Bunnies, Plainville Organic Turkey, pears
  7. Pears, Carrots & Hummus, Quesadilla with hummus, chicken and cheese
  8. Spinach and cheese tortellini, roasted broccoli, crockpot meatball
  9. Cottage cheese, carrots, blackberries, sweet & spicy bacon wrapped chicken

Healthy Toddler Meals

  1. Pears, chicken pad thai, roasted sweet potatoes, egg wrap
  2. Cheese + ground beef quesadilla, steamed mixed veggies, pulled chicken and avocado
  3. Clementine, Alexia Sweet Potato Puffs, meatloaf
  4. Peanut Butter & Jelly, cold mixed veggies, smoked salmon
  5. Date with peanut butter, paprika roasted carrots, turkey and hummus sandwich
  6. Strawberries, yogurt, Bisquick + cottage cheese pancakes
  7. No Bake Chocolate Peppermint Bite, steamed green beans, Kodiak cakes with peanut butter
  8. Steamed sweet potatoes, Chickpea buckeye, peanut butter toast, chicken sausage
  9. Sweet potatoes, pears and turkey sandwich

Easy Toddler Meals

  1. Pears, carrots with ranch, chicken & sweet potato chili
  2. Peas, mac and cheese, bbq pulled pork

  7. Applesauce (plus probiotic), hb egg, ham sandwich

  9. Chocolate squash muffin, pears, Asian chicken and carrots

Quick and easy toddler meals

  1. Kiwi, cottage cheese, chocolate chip pancake, fried egg
  2. Pears, mac and cheese with sausage and peas, pb toast, tuna quinoa cake
  3. Strawberries, beans, pork and mac and cheese
  4. Pears, yogurt, egg wrap
  5. Fried egg, mandarin oranges, waffled french toast
  6. Cottage cheese, chips and hummus, bbq pulled pork
  7. Cottage cheese, carrots and hummus, beer braised pulled pork, crackers
  8. Strawberries, curry roasted sweet potatoes, pb&J and lemon broccoli
  9. Shells with marinara, green beans, tuna quinoa cake

Hi friends!

I know some of you have been waiting for this recipe for a while now, so I apologize for that! I first shared this on social media almost two months ago I think, and since then I’ve made it at least 10 times. My husband has even specially requested it a few times. So you know it’s good.

It’s literally so easy I hesitate to call it a recipe, but I’m sharing it because I am not a broccoli lover and I LOVE it when it’s prepared this way.

The secret is this broccoli is to not crowd the pan.

If you crowd the pan, you’ll get broccoli that’s more steamed than roasted. It needs room to breathe!

Lemon Roasted Broccoli

After just 10 minutes in the oven, you’ll end up with perfectly roasted broccoli. A squirt of lemon juice and a touch of salt takes the flavor to the next level! Even the little ones gobble it up!

Ingredients

Scale
  • 1 head of broccoli (2–3 cups)
  • juice from 1 lemon
  • generous sprinkle of sea salt

Instructions

Remove broccoli stems and separate into similar-sized florets. 

Spread out on a foil-lined baking sheet. 

Squeeze lemon juice over broccoli and toss to coat. 

Sprinkle with salt and roast at 400 degrees F for 10 minutes. 

Notes

You can also toss in a little oil if desired.

I’m popping in today to share the perfect holiday breakfast with you guys! Christmas is just around the corner and if you’re like me, you definitely don’t want to focus on breakfast on Christmas morning. It’s all about time with family, watching the kiddos enjoy their presents etc!

This Sausage and Egg Bread Boat is the perfect solution. It only takes about 5 minutes to prep it and then it cooks in the oven for an hour while you’re off doing other things like cleaning up 9 million pieces of wrapping paper and installing batteries into a bunch of new toys that need to be played with IMMEDIATELY.

For this recipe, I teamed up with my friends at Handsome Brook Farm, who provided my favorite pasture-raised eggs. You may remember them from back in September when I shared these delicious little Sweet Potato Egg Wrap Bites!

Handsome Brook Farm is actually a unique supply network of small organic family farms. All their eggs are American Humane Certified to meet pasture-raised labeling standards.

Here’s a quick terminology review:

  • Cage-free eggs are from hens raised in barns with no access to the outdoors, often with several hens per square foot.
  • Free-range eggs are from hens that live in similar barns, but have limited outdoor access—about 2 sq. ft. per hen (access to grass not guaranteed)
  • Pasture-raised means that the hens do go outdoors to graze and forage, and American Humane certifies that hens have at least 108.9 sq. ft. per hen of room on rotated pasture each (that’s 400 hens to an acre). The hens have plenty of outdoor shade, protection, and water, and protected nests indoors, they are encouraged to spread their wings and wander to their hearts’ content.
  • Organic refers to both the supplemental feed hens receive (regardless of environment) and the land on which they wander (not sprayed with harmful pesticides or herbicides and certified organic).

We go through a lot of eggs around here and I’m happy to have found a brand I feel good about buying.

I hope you and your loved ones enjoy this Sausage and Egg Bread Boat as much as we did! The recipe is very forgiving so there’s not real need to measure exactly. Just buy a big loaf of Italian bread, scoop out most of the middle, add in some chopped sausage and veggies, top with eggs and let it back.

It does take a while to bake. Since the eggs are baking in a loaf of bread instead of a pan (which heats up and helps them cook more quickly), it takes longer than your typical egg bake…but it’s very hands-off, with minimal prep so as long as you plan ahead a bit to factor in cooking time, it’s a super easy recipe.

This recipe is best served warm right out of the oven, but you can also reheat the leftovers and they taste great as well!

Ingredients

Scale
  • 1 large loaf Italian bread
  • 2–3 chicken sausages (fully cooked), diced
  • 1/2 cup red bell peppers, diced
  • 1/4 cup green onion, thinly sliced
  • 1/2 tsp garlic powder
  • 1 tsp paprika
  • 6–8 Handsome Brook Farm organic pasture raised eggs
  • optional: onions, cheese, other veggies

Instructions

Cut a large rectangle in the top of the loaf of bread (being careful not to cut through the bottom. 

Remove top of rectangle and pull out most of the middle of the bread. Place on a foil-lined baking sheet.

Add sliced sausages, peppers, green onions and spices into the middle of the bread. 

Crack eggs into a bowl and whisk to combine. 

Carefully pour eggs into the middle of the bread being careful not to overflow. 

Bake at 375 degrees for 45 min to an hour, until eggs are set. Cooking time will depend on the size of your loaf. After 30 minutes, you can cover with foil and increase oven temperature to 400 degrees. 

Slice and serve.

Notes

Optional: Serve over sauteed spinach. I cook mine in a skillet with a little butter and some garlic powder.

Let’s chat books today, shall we? Specifically toddler books. I was raised with a strong love for reading and curling up with a good book is still one of my favorite things to do. Hubby and I are working hard to instill that same love of books in our kids.

 

Since I think books are one of the best gifts you can give, whether it be for holidays, birthdays or just because, I thought I’d put together a list of some of our favorite toddler books right now. Most of the lists out there seem to include so many of the same books: award-winners with a few others thrown in. And while we do enjoy almost all the books on those lists, I wanted to focus on some of the others we’ve been loving that some people might not know about!

 

So while there are a few award-winners on this list, it’s mostly books I’ve randomly picked out at the library over the past year or two that Squish has really enjoyed. The ones listed under Our Favorites are the ones on repeat. The ones we read every naptime and bedtime for weeks in a row. The ones we’ve ended up buying copies of because we love them so much. The Additional Suggestions list includes books we’ve read a few times and enjoyed, as well as some suggestions from others (fellow parents, my friend Kate who works for a publisher and has sent Squish SO many great books over the past few years, etc) that we haven’t read yet.
