I was matched with my Little for 2 years in college and loved every minute. My Little and I had all sorts of fun when we were partnered up. We played mini golf, did art projects, ate pizza, went shopping and more. It was fun for me and so important for her!

Looking for some Acts of Kindness for Kids? Here are 75 simple ideas that can be done by kids young and old to help make the world just a little bit happier!

Hi friends!

Wanted to pop in to talk about random acts of kindness for kids. A couple of weeks ago, I shared the photo above on Instagram with the following caption:

Lately after swimming lessons we’ve been passing a lady on the corner with a cardboard sign. A few weeks ago Squish asked what it said so I told him, “Homeless. 2 kids. Need help”

We talked about how sometimes bad things happen and people need a little extra help. And about how lucky we are to have all that we do because there are a lot of people out there with less.

One of the biggest lessons I want to teach my kids is to always help when they’re able ❤️ whether it’s with their time, money or resources.

He seemed to understand but quickly moved on to another topic. This week we saw her again and totally unprompted, he said “Mom, we should get a snack for her and her kids.” And I couldn’t resist.

I recognize that there are people out there who hold signs like that as a scam. But in my heart I want to believe she’s a good person who just needs a little extra help right now.

So I turned around and we went into the store. He picked out some of his favorite crackers and I added granola bars and water and he marched across the parking lot and handed her the bag.

Talk to your kids. Have the hard conversations. Teach them to BE THE CHANGE. They’re listening.

In a world full of so much hate 💔 raise them to know the importance of being kind and helping others.

So here’s to hoping there’s a couple kids in my house learning this important lesson and a couple kids out there who are a little less hungry for the next few days.

Today Squish heads back to school and thus our #100milesummer challenge comes to an end. We hit our goal 12 days early. That means we did 100 miles in 72 days. Squish walked, biked or scootered every single one all on his own. He learned to ride his bike without training wheels. Little Miss mastered her scooter and did several miles completely on her own as well. I’m so proud of them.
 
Now that school is starting, we were looking for a new challenge. I realized that from the first day of school until Squish’s birthday is 75 days. After our random act of kindness after swimming lessons, I thought it might be fun to put together a list of 75 random acts of kindness so we could tackle one each day from no until his birthday.
 

Here’s the list I came up with-

75 Acts of Kindness for Kids

1) Pick up trash (this could be at a park, on the side of the road, in a store)
2) Send someone a card
3) Donate some old clothes or toys
4) Leave drinks for the garbage men (especially if it’s hot out!)
5) Leave cards for your neighbors on a walk
6) Pay for the person behind you in line
7) Leave a dollar in vending machine
8) Tell someone’s manager what a good job they are doing (maybe you had a great server at a restaurant or cashier at the grocery store)
9) Send a postcard to a friend (even if you’re not traveling, grab one for your fav local spot!)
10) Make meal or snack for mom or dad
11) Leave nice chalk messages on a walk (ie Have a great day! or Thanks for being a great neighbor!)
12) Make blessing bags for the homeless (fill a bag with a reuseable water bottle, socks, underwear, gloves, tooth brush and other hygiene items they might need)
13) Give a stranger a compliment
14) Invite someone to play with you (at school, at the park, for a playdate)
15) Leave crayons/ coloring book somewhere (the auto repair shop, the pharmacy, a cart at the grocery store)
16) Drop off food for firefighters or police officers
17) Make a fabric scrap blanket to donate (get a few scraps of fabric, make cuts along the edges and tie them together)
18) Make cards for sick kids at the hospital
19) Decorate a jar to save spare change to donate to charity
20) Bring your neighbor’s trash bins up driveway after trash day
21) Leave positive, empowering notes on the mirror in public bathrooms (You’ve got a great smile or you look fabulous in that color, etc)
22) Decorate a bookmark to leave in a library book before you return it
23) Bring allergy-friendly treats to a holiday gathering
24) Teach someone something new
25) Collect pop tabs for Ronald McDonald
26) Leave sand toys at park
27) Decorate hand sanitizer for nurses or teachers
28) Leave a note and flower on a windshield telling someone to have a great day
29) Bake cookies for someone
30) Hold the door for someone
31) Write a thank you note for a coach or teacher
32) Color pictures for nursing home residents
33) Hide a note in daddy’s wallet or mommy’s purse
34) Offer to take a pic of a mom and her kids
35) Record an “I love you video” for grandparents

I tried to keep these acts of kindness for kids pretty general but some of these are tailored slightly to our family, the time of year etc so feel free to adjust as needed. You could pick and choose from this list to make a smaller challenge if you wanted!

I also wanted to make it somewhat visual since my kids can’t read yet, so I found images that depict the acts to make it easier for Squish to identify the one he’s looking for or make a decision.

Blueberry French Toast Muffins

These Blueberry French Toast Muffins are quick, healthy and kid-friendly. Make a batch over the weekend and serve them for breakfast or pack them for lunch! They can easily be customized with different mix-ins.

Hi friends-

Last weekend I whipped up these Blueberry French Toast Muffins on a whim and they turned out SO WELL! When I shared them on IG stories, so many of you asked for the recipe that I headed back to the kitchen to recreate them for you guys. They’re perfect for food prep – ie you can easily make a batch over the weekend and serve them all week! They’re also perfectly portable for a grab and go breakfast and they’re nut-free so you can toss a few in a lunch box and send them to school with the kiddos. 

I’ve made french toast muffins before, but I’ve always used a loaf of bread from the bakery. The key to this version is that they use slices of sandwich bread. So you get some texture from the crusts but the middle part kinda falls apart when you mix the eggs and bread together, creating a muffin that sticks together really well!

I added some ground flax and hemp seeds to mine because you can’t taste them and it’s an easy way to add some extra nutrients. I also added some pumpkin seeds to them. They add a little crunch, but aren’t overly sharp or crunchy like chopped nuts can be so I find them easier for young kids to eat! But feel free to swap in something like slivered almonds if you don’t need to keep them nut-free.

Ingredients

5 cups whole wheat sandwich bread, cubed (I use 6 slices of Dave’s Killer Bread)
9 eggs
1/2 cup milk (dairy or non-dairy)
1 tsp vanilla extract
1 tsp cinnamon
2 Tbsp ground flax
2 Tbsp hemp seeds (or chia seeds)
1 cup blueberries (fresh or frozen)
3/4 cup pepitas (pumpkin seeds)
(I make mine without sweetener and top with maple syrup but you could also mix 1/4 cup of maple syrup in before baking if you want.)

Instructions

  1. Put cubed bread in a large bowl.
  2. Mix eggs and milk in a smaller bowl until combined.
  3. Add eggs to bread and mix well.
  4. Stir in cinnamon, vanilla, flax, hemp and pepitas.
  5. Add blueberries and stir gently, then spoon into well greased muffin tins (I use silicone muffin tins that i don’t have to grease)
  6. Bake at 375 F for 20-25 min. Tops should be lightly brown and firm. Middles should be slightly squishy but not loose and jiggly.

Notes

If your bread slices are smaller, you may need more than six slices. I just cut them up and loosely fill a 1 cup measuring cup to measure. It doesn’t need to be tightly packed. If you use too much bread the muffins will be too hard.

These are not traditional muffins and not meant to be sweet. They are more like actual french toast in muffin form. You can top with syrup for sweetness or mix maple syrup in before baking

I have a mix of hemp, ground flax and chia seeds and I just use 3-4 Tbsp of that

You could sub slivered almonds or chopped nuts for the pepitas if you want

You may need to play around with the egg to bread ratio to fit your preferences. I like mine a little eggier but adding an extra slice of bread will make them a bit firmer.

Serve warm or cold, topped with syrup, yogurt or peanut butter.

Emergency Trunk Bag

Stash an emergency trunk bag in your car so you’re never caught unprepared. As a parent, you never know when things like a change of clothes, an old towel, or a pair of scissors might come in handy!

Hi friends!

Earlier this summer, I finally put together an emergency trunk bag for my car. This is something that’s been on my list for ages but I’ve just never taken the time to pull it all together. Although this bag is similar to a diaper bag, it differs in the fact that it never leaves my trunk. Sometimes, despite my best intentions, I bring the diaper bag into the house to restock it and forget to return it to the car, or accidentally leave it in my husband’s car or at a play date. The emergency trunk bag is like a diaper bag on steroids. If I need to restock it, I bring the items directly out to the car so there’s no chance of me being caught without it. 

Here are some things you can include:

  • Old towel
  • Baby wipes and a roll of toilet paper
  • First aid kit
  • Large Ziploc bags for holding dirty or poopy clothes or for a barf bag
  • Bottled water (and formula if needed). Try to use stainless steel bottles instead of plastic if possible!
  • A full change of clothes and diaper for each parent and kid
  • Pocket knife or pair of scissors
  • A few non-perishable snacks (I also included some juice boxes because my husband is a type 1 diabetic)
  • Personal care kit including hair ties, Tylenol, tampons, cough drops and an extra pair of contacts and contact solution.
  • A piece of paper with phone numbers and medical info written down in case you lose your phone or are hurt/can�t remember (You can also tape this info on car seats and put it in the glove box)
  • Sunscreen and bug spray
  • Phone charger
  • Duct tape
  • Flashlight
  • Lysol wipes and hand sanitizer
  • Trash bags
  • Lighter
  • Cash and quarters
  • Kid socks for trampoline parks and play gyms that require them
  • Other bigger items to consider: a portable potty seat, blanket

Remember to set a reminder on your phone or calendar to update your bag 2-3 times a year. Change out clothing so it’s seasonally appropriate, add a couple of spare coats or a blanket in the winter. Also, label the bag as your emergency kit so first responders can easily identify it if you’re in an accident.

Here in Ohio, it gets hot, but not as hot as some places and I know some people are concerned about certain items holding up in the heat. But in my opinion, having something that will maybe help is better than not having it at all. Checking the bag a few times a year will allow you to stock fresh water, replace wipes and snacks that may have dried out, change flashlight batteries etc!

Zucchini Carrot Brownies

These Zucchini Carrot Brownies are an easy way to add more vegetables to breakfast, snack or dessert. They’re easy to make, kid-friendly and made with simple ingredients! Plus they’re dairy-free, nut-free and can be made gluten-free.

Hi friends!

Allow me to introduce you to these Zucchini Carrot Brownies – ie my new favorite snack. If I’m being honest, I had a heck of time coming up with a name for these. I hesitate to call them brownies because they’re not like the real deal. They’re more like chocolate bars. And they happen to be full of vegetables. But part of being a food blogger is catering to the search engines and most people are not heading to google to search for a recipe for chocolate veggie bars…because most people don’t think those exist!

But I’m here to tell you that they do. If you’re looking for a rich, fudgy brownie…go make one. If you’re looking for a simple snack that’s chocolatey, not overly sweet, kid-friendly and full of good-for-you ingredients, make these!

Zucchini Carrot Brownies

I’m not even really that fond of chocolate to begin with. But a lot of people are. And these are a nice change of flavor from the Lentil Banana Muffins and Zucchini Oat Bars I’ve been eating lately. They’re so good, in fact, that I made three batches in two days. 

I personally like them cold out of the fridge but they’re also good warm…maybe with a scoop of vanilla yogurt or ice cream on top? 

I can’t tell you that my kids love these. They don’t like chocolate desserts. Cake, ice cream, cookies…doesn’t matter…give them plain vanilla all day long. 

But I can tell you that I have a high opinion of these. I love the way the recipe turned out and will continue to make these as a snack for myself. Plus I’m convinced enough of you out there will like them that they’re worth sharing ASAP!

Here’s how you make them. You’re gonna need to pull out your food processor. Have I convinced you to get one yet? Just do it. My most used kitchen appliance by far. (I have a Cuisinart 11 cup that I love- aff link) You could probably make these in a powerful blender as well.

These Zucchini Carrot Brownies are an easy way to add more vegetables to breakfast, snack or dessert. They’re easy to make, kid-friendly and made with simple ingredients! Plus they’re dairy-free, nut-free and can be made gluten-free.

Ingredients

Scale

1 cup shredded zucchini (measure after you squeeze to remove excess water)
3/4 cup shredded carrots
3/4 cup cooked, mashed sweet potato (just stab with knife and microwave 5 min then scoop out of skin)
1/4 cup maple syrup
2 eggs
1 tsp vanilla
1/3 cup cocoa powder
1/2 cup white whole wheat flour
1 tsp baking soda
pinch of salt

1/2 c chocolate chips

Instructions

  1. Place zucchini, carrots, sweet potato, maple syrup, eggs and vanilla in a food processor and process until smooth.
  2. Add cocoa powder, flour, baking soda and salt and process to combine.
  3. Add chocolate chips and pulse a few times.
  4. Pour into 9×9 pan lined with parchment paper.
  5. Bake at 350 degrees F for 18-20 minutes.
  6. Cool in pan, slice and store in the fridge.

Notes

For a little added sweetness you could use 1/3 cup maple syrup. If you’re looking to make them added sugar free you could try subbing mashed banana or applesauce or using a few medjool dates.

To boost the nutritional value even more, you could mix in some chia, hemp or ground flax seeds. You could also mix in a little peanut butter.

If you want frosting, sprinkle chocolate chips on the top right when they come out of the oven, let them melt and then spread over top.

To make them gluten-free you could sub all purpose GF flour or you could try oat flour but i haven’t tried it myself.

Use these easy Scavenger Hunt Ideas For Kids to get them excited about spending time outside! They can help make walks more interesting, teach them about nature and are great for practicing things like numbers and colors!

If you follow me on Instagram, I’m sure you already know all about our 100 Mile Summer challenge, but just in case you don’t, lemme fill you in!

At the beginning of the summer, I made it my mission to get my kids outside for at least a little bit every day. We have a perfect one-mile loop around our neighborhood which is nice.

So together, we set a goal to walk/ride/scooter/stroll 100 miles over the course of the summer.

This weekend we hit 75 miles! School starts August 15th so we have until then to knock out the last 25. It hasn’t always been easy to get them out the door. But honestly, it has pretty much become a daily habit at this point so they rarely put up too much of a fight. Sometimes they’re content to ride their bikes or scooters or just sit in the stroller. My 4.5-year-old isn’t allowed in the stroller. He has to be physically moving. But some days they need a little something to keep their interest. 

Enter scavenger hunts. We use them to help distract the kids, make the walks more exciting and engage their brains!

Here are some of the different types of scavenger hunts we’ve done so far and a few we haven’t tried yet.

Scavenger Hunt Ideas For Kids

  • Make a nature scavenger hunt list with pictures if they can’t read, put it on a clipboard and give them a little bag to collect the things on their list.
  • Give them your phone and let them take pictures of the things on their list.
  • Search for colors, shapes or traffic things like stop signs or traffic cones.
  • Search for different colors or types of cars.
  • Search for all the letters of the alphabet on license plates, street signs etc.
  • Make it a “sounds” scavenger hunt so they’re listening for things like birds tweeting, horns honking.
  • Play “I spy” so you’re both looking for things.
  • Draw a basic map of the walk and have them mark where they find each item.
  • Take pictures on a walk one day and then have them look for the things in the pictures or the places in the pictures the next day on the same route.
  • Turn what they collect into an art project when you get back.
  • Have an indoor hunt if it’s rainy or too hot.
  • Make BINGO boards with things you might see on your walk and see who can get bingo on their board first.
  • Mark the halfway point on your walk. Collect a few things on the first half of your walk and see if you can find a “match” on the second half!

I’m sharing these Lemon Blueberry Cheesecake Oat Bars today because they’re the perfect summer breakfast! We went blueberry picking a couple of weekends ago (one of my favorite summer traditions!) and came home with tons of berries so I headed straight to the kitchen to find a new way to use them up. 

Lately, I’ve been all about the prep ahead breakfast. Mornings are loud and crazy and my kids always need me to get nine million things for them so having something I can just grab out of the fridge and eat while running around the house, preferably with one hand, has been my saving grace. 

This recipe actually uses cream cheese. I’m personally not a big cream cheese person. I don’t really buy it. I never really use it..but my husband has been enjoying cream cheese bagels as his bedtime snack recently and due to a few grocery store miscommunications, we’ve ended up with approximately 5 containers of cream cheese in the fridge. So testing this recipe was a good way for me to use some of that up. I’d suspect that you could swap plain yogurt for the cream cheese but haven’t tried it myself!

These come together super quickly and then you just toss them in the oven, pull them out and let them cool. I personally like eating them cold, but you can also eat them warm!

Hi friends!

We enjoyed these Easy Peanut Butter S’mores Bars over the 4th of July holiday weekend and I got several requests for the recipe. To be honest, I almost didn’t share them. I whipped them up on a whim and they’re not perfect. They haven’t been tested multiple times. They’re nice and sweet, but a little crumbly when you cut them. If you’re not careful, they can make a bit of a mess. 

But isn’t that just pretty much the perfect description of my life right now?

Life with three little kids is definitely not perfect. It’s messy. There’s ALWAYS crumbs everywhere. There’s no time to test things a million times or spend hours taking photos. But it’s also oh so sweet. 

So in this season of life, we’re embracing the perfectly imperfect. If I make something good, I’ll share it…without worrying about turning it into the perfect blog post. Because life’s too short to worry about stuff like that.

I took a poll on IG stories to see if you guys wanted the real deal dessert or a “healthier” version and almost 3/4 of you wanted the real deal. Which is good for me because that’s what I made! And I’ve got three kids who are waiting for mama to play with them and have no interest in watching me testing 4 versions of these bars because all they care about are the marshmallows.

So here you go. Make these bars with the expectation of perfectly imperfect deliciousness. There will be crumbs. There will be sticky fingers. But there will also be sweet summer smiles that make it all worth it!

You could experiment with cutting back on the sugar and butter to lighten them up a bit if that interests you!

Ingredients

Scale

7 graham cracker sheets (all but 2 in a sleeve)
1/2 cup butter (1 stick), melted
1/2 cup peanut butter
1/2 cup brown sugar
1 egg
1 tsp baking powder
pinch of salt

1/2 cup flour (i used white whole wheat)
10 marshmallows, quartered (or use mini marshmallows)
2 Hersheys chocolate bars, broken into squares (or use chocolate chips)
remaining 2 sheets of graham crackers in the sleeve, crumbled

Instructions

  1. Place 7 graham cracker sheets in a food processor and process until fully crumbled. If you don’t want to use a food processor you could smash very well by hand in a Ziploc bag and pour into a bowl.
  2. Add melted butter, peanut butter, brown sugar, and egg and process to combine.
  3. Add baking powder, salt, and flour, pulse to combine until loose ball forms.
  4. Transfer to a 9×9 pan lined with parchment paper.
  5. Bake at375 for 8 minutes.
  6. Remove from oven, top with marshmallows, chocolate pieces, and crumbled graham crackers. Press down lightly on the top to push toppings lightly into crust.
  7. Bake 7-8 more minutes or until marshmallows reach desired brownness.
  8. Let cool and then cut in the pan. Bars will crumble on the edges when cut but should hold together to eat. Top with ice cream if desired.

Notes

In a box of graham crackers there are usually 3 individually wrapped sleeves. Each sleeve has 9 sheets. A sheet is a graham cracker (the one that can be broken in half or into 4 pieces) You need one sleeve for the recipe. 7 sheets will go in the bars and 2 will be crumbled on top.

These can be made in a bowl if you don’t want to use a food processor. You just have to smash the graham crackers really well.

Aren’t they pretty? I love the way they look when the marshmallow melts on top. I think that might only happen if you use normal marshmallows and cut them though, not if you use mini marshmallows so be warned!

This Loaded Strawberry Spinach Salad has long been my favorite summer salad. I’ve been making it for at least 10 years now and it just never gets old. It’s the perfect combination of flavors and also easy to customize to fit your taste preferences. There aren’t even any specific quantities needed. You can make as much or as little as you want to feed your family or feed a crowd. I tried to give you a rough estimate for 4 servings but don’t stress over the amounts. They’re not exact.

I love this salad because it has so many flavors but you can throw it together super quickly. If you’re really in a hurry, you can leave off the roasted sweet potatoes because those are really the only thing that takes any time to make, but I’d highly suggest including them. I usually roast them a day or two before I plan to make the salad and then just toss everything together.

This makes a great side salad to pair with your favorite dinner, but can also easily be turned into a meal of its own by adding your favorite protein. Add some grilled chicken or steak, some hard boiled eggs or even some chickpeas or lentils to keep it vegetarian.

8 cups baby spinach
2 cups strawberries, sliced
3/4 cup onion, thinly sliced
1– 2 cups apples, chopped
2–3 cups roasted sweet potatoes, diced
1 large avocado, diced
1/4 cup crumbled feta, optional
juice from two lemons (approx 1/4 cup
1/4 cup oil (i use avocado)
1/4 cup  white wine vinegar
1 Tbps poppy seeds (or chia seeds)
2 tsp sugar (or to taste)
optional protein: chicken, steak, lentils, chickpeas, hard boiled eggs

Instructions

  1. Combine lemon juice, oil, vinegar, poppyseeds and sugar in a small bowl and whisk to combine. Taste and add more sugar if needed. Makes about 3/4 cup dressing.
  2. Add remaining ingredients to a large bowl and toss to combine. Divide between 4 bowls.
  3. Add dressing just before serving.

Notes

Quantities are approximate and can be adjusted to make more or less servings.

These Pesto Lentil Balls are a great food prep option for an easy, vegetarian lunch or dinner. Make them ahead of time and serve with dipping sauce, over spaghetti noodles or on a salad!

Hi friends!

I’ve had these Pesto Lentil Balls up my sleeve for a while now and am excited to share them! My husband is not a huge lentil fan so after testing them myself, I had to wait for my parents to come into town so they could give the recipe a nod of approval as well. 

They got the a-ok from my lentil-loving dad and from my mom as well! I’m still working on getting my kids to try them, but they do like pesto so I’ve started with pesto meatballs and will eventually try serving these to them with their spaghetti!

I love these because they’re quick and easy to make but also packed with flavor. I love making them ahead of time and using them in different dishes during the week. I use them like meatballs in spaghetti, but also throw them on my salads fairly often. 

To make your life even easier, grab some pre-cooked lentils (Trader Joe’s has some in their refrigerated section) or make lentils ahead of time and freeze in one cup portions. I do this often so I have them cooked and ready to make these balls and my Lentil Banana Muffins. 

Here’s how you make them:

These Pesto Lentil Balls are hearty enough to hold up in your next spaghetti dinner and packed with protein and flavor.

Ingredients

Scale

1/3 cup green/brown lentils dry (approx 1 cup cooked)
2 cloves garlic
3/4 cup chopped carrots
3 Tbsp pesto
1 egg
1/2 cup breadcrumbs
salt and pepper to taste
Parmesan cheese, optional

Instructions

  1. Cook lentils according to package directions.
  2. Put carrots and garlic in a food processor and process until well chopped.
  3. Add remaining ingredients until well combined.
  4. Form into 12-15 balls and place on a lined baking sheet.
  5. Bake at 400 degrees for 18 minutes, flipping once.

Feel free to add more pesto if you like a stronger flavor. You could also sub something like red peppers for carrots if you wanted to!

I originally shared this Microwave Sweet Potato Mug Cake back in September of 2015 and I still make it regularly. Have you ever tried a microwave mug cake? It’s basically a nice, warm dessert that’s ready in two minutes and doesn’t require an oven. Just mix a few ingredients, pour into a coffee mug or mason jar and pop it in the microwave. 

This is my favorite way to make dessert after a long day when I don’t have much energy left. However, I’ve also been loving this as a snack lately! I leave out the maple syrup and just add a handful of chocolate chips. This recipe is essentially a small batch of my Sweet Potato Banana Bites cooked in the microwave instead of the oven, so you could also add some mashed banana instead of maple syrup for sweetness if you want!

This Microwave Sweet Potato Mug Cake recipes makes the perfect amount to split between two mugs, mason jars or ramekins and share with a loved one. Topping it with ice cream is pretty much a must in my book. To make this on the fly, you’ll first need to cook your sweet potato. I just poke a few holes in mine and then microwave for five minutes. To make this even easier, I cook a sweet potato on the weekend and save it in the fridge so I have some mashed sweet potato ready and waiting whenever I want one of these!

Here’s how you make it:

  • 1/3 cup cooked, mashed sweet potato

  • optional sweetener: up to 1 Tbsp maple syrup
  • handful of chocolate chips
  • ice cream or yogurt for topping

Instructions

  1. Combine all ingredients in a bowl and mix well.
  2. Pour into two greased coffee mugs, ramekins or mason jars.
  3. Microwave (one at a time) for 1 min 45 sec.
  4. Eat straight out of the jar or let cool slighty and transfer to a plate.
  5. Top with ice cream or yogurt (and an extra drizzle of peanut butter) and eat!

Notes

I leave the maple syrup out of mine and add chocolate chips and top with a little dollop of ice cream but you can choose to skip the chocolate chips and/or ice cream and sweeten with maple syrup or mashed banana.

What To Do With Hard Boiled Egg Yolks

Just popping in today to talk about hard boiled eggs. More specifically, what to do with leftover hard boiled egg yolks. We eat a lot of hard boiled eggs around here, but when I serve them to my kids, I typically only serve the white part. Every time I share a photo of their plate on IG stories, I get at least 10 people that ask me why I don’t serve the yolk. The reason is simple: they don’t like hard boiled egg yolks. And I can’t blame them. Neither do I. 

They have no problem eating the whole egg if it’s scrambled, fried, made into an egg wrap, etc but give them a hard boiled egg yolk and it is either ignored or ends up in a crumbly mess all over the counter and floor. So while every so often I continue to offer it, I usually leave it out to avoid the mess. 

For a while I was, admittedly, wasting the egg yolks by just throwing them away. Or feeding them to the dog. But I had so many people ask me what I do with the yolks that I finally decided to get my act together and come up with some ways to use them. They’re full of healthy fats and important nutrients like choline!

So now I serve my kids the hard boiled egg whites and put the yolks in my yolk jar. Here are some ways I use them throughout the week. They don’t really have a strong taste and crumble easily so you can add them to lots of things without them being very noticeable. Note that hard boiled eggs (all parts) should be eaten within a week of being boiled. 

Ways to Use Leftover Hard Boiled Egg Yolks

  1. Mash and mix with avocado, plain yogurt or mustard to make deviled eggs
  2. Crumble and mix into tuna/chicken/chickpea salad, macaroni and cheese, bolognese spaghetti sauce (anything that’s already kinda chunky)
  3. Spread onto toast and cover with mashed avocado for avocado toast
  4. Crumble/smash and mix with hummus, mashed avocado/guacamole, ranch or bbq sauce and add to sandwiches, quesadillas, grilled cheese etc.
  5. Mix with ranch and spoon a little into the hard boiled egg whites (squish likes them this way)
  6. Crumble and stir into cooked blueberry oatmeal (oatmeal is kinda lumpy already and the purple from the wild blueberries makes them not noticeable)
  7. Grate them over a salad like you would a block of cheese. 
  8. Add one to your smoothie to thicken/add some creaminess
  9. Mix into any pureed baby foods you’re giving baby
  10. Smash and mix with red wine vinegar, garlic, oil, salt and pepper to make a salad dressing
  11. Add one or two to cookie dough to make it more tender.

Let’s talk about lunch today, shall we? Specifically kid lunches. I don’t know about you but for me, lunch is the easiest meal of the day for me to get stuck in a rut. My family loves breakfast. We all have our favorites and we happily eat them each morning. Dinner is when I tend to flex my creative muscles in the kitchen and I rarely have trouble coming up with dinner ideas.

But lunch? Whew. I don’t know if it’s the time of day or what, but I struggle with lunch ideas every single week. So I decided it was time to do some brainstorming and come up with some new, kid-friendly ideas for you. And guess what they all include? Bread! 

This post is part of the #yestobread campaign and when the Grain Foods Foundation reached out to me about participating, I immediately jumped on board. It really couldn’t be a more perfect fit for me. I know low-carb, paleo and keto are all the rage right now but if you know me at all, you know that for me, carbs are life. And I hate that will all these new diet trends, carbs, and more specifically bread are getting a bad reputation. So many people are decreasing their bread consumption because celebrities and influencers are telling them it’s one of the main reasons they are gaining weight, feeling bloated etc. 

As a Registered Dietitian, I’m here to tell you that for most people, bread can most certainly be part of a healthy, balanced diet. Especially if you ENJOY eating it! Can bread cause discomfort for some people? Sure! But you don’t have to live your life on an extreme diet that “doesn’t allow” bread just because someone else is telling you that you should. You also don’t have to eat bread all day every day. Aiming for a well-balanced diet is a much more enjoyable (and sustainable) way to live! And for me that means saying #yestobread! 

Of course, not all bread is created equal and I recommend choosing 100% whole grain bread in most cases. It is a great source of: 

  • Fiber, which aids in digestion.
  • Complex carbohydrates that provide energy and fuel for workouts and daily life.
  • Important nutrients like iron and B vitamins.

It also pairs well with all sorts of foods including fruits, vegetables, meat, cheese, eggs etc to help you create nutritious, balanced meals.

Since my kids are fairly burnt out on boring, traditional sandwiches, I came up with a few more creative ideas for you!

Peanut butter and jelly is a go-to favorite around here but everybody gets tired of their favorites now and then. With just a few simple tweaks I revived this old favorite and made it fresh and exciting again! Start by turning the bread into french toast! And if you’re not thrilled with the idea of standing around flipping it on a griddle or in a skillet, just throw it on a waffle iron. So easy. Then add your peanut butter or nut butter of choice. And take advantage of berry season by replacing jelly with freshly smashed berries. My kids love doing the smashing and I love that there’s no added sugar!

My two year old is actually not that crazy about sandwiches. There’s something about the top piece of bread covering up whatever is inside that she doesn’t like. But give her the exact same thing on two open-faced pieces of bread and she is ALL FOR IT. She’s a huge fan of avocado toast and both my kids love using whatever fruits and veggies we have on hand to make silly faces on top. We call it monster toast. If your kids don’t like avocado, you could try hummus!

Sometimes with kids, it’s all about novelty. If I gave my four-year-old a turkey, cheese and apple sandwich, there’s about a 50% chance on any given day that he would eat it, depending on his mood. But if I take that same sandwich, cut it into pieces and thread it on a skewer, the odds of him eating the entire thing go up to about 90% every time.

I don’t like to use my giant metal grilling kabob skewers for this so I use straws. Sometimes I use a strong stainless steel straw to poke the holes, then thread everything onto a paper straw so I can trim the ends.

This is basically just two classics combined into one. Egg in a hole and a grilled cheese sandwich. This Paleo Shrimp Scampi recipe is another oldie but goodie from the blog. Originally published back in 2015, it’s pretty much the perfect summer dinner. Ready in 15 minutes. Super easy to make and full of flavor. Plus it’s paleo and gluten-free. You could make it dairy-free by subbing oil for butter.

The ingredients for this Paleo Shrimp Scampi are super basic. It’s just butter, onions, garlic, shrimp and zoodles. All the flavor comes from the herbs! Lots of basil and oregano, some cayenne to spice it up a little and topped off with some fresh parsley.

Ingredients

Scale
  • 2 Tbsp butter
  • 1/2 cup diced onion
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 –1 tsp cayenne pepper
  • 1 pound raw shrimp (peeled & deveined)
  • 2 medium zucchini (about 1 pound)
  • 2–3 tbsp fresh parsley + squeeze of lemon (optional)

Instructions

  1. Spiralize zucchini and set aside.
  2. Heat butter in a large skillet over medium heat.
  3. Add garlic, onion and spices and saute for 5-7 minutes.
  4. Add shrimp and cook 3-4 minutes.
  5. Add zoodles to pan, stir to combine and cook 2-3 minutes to heat through.
  6. Stir in fresh parsley and lemon juice if using and serve

Notes

Optional- for more flavor you could add a little bit of white wine to the pan while cooking the onion mixture and top with grated parmesan cheese.

It’s time to bring these Paleo Turkey Sweet Potato Meatballs back into the spotlight. I originally shared them on the blog four years ago and I’m still enjoying them regularly so I thought I would reshare. Plus a lot of you have been loving the Carrot Pineapple Turkey Meatballs I posted a couple of weeks ago so you’ll probably like these as well. When I made these originally, they quickly become my favorite post-workout snack. Call me weird, but I don’t mind eating meatballs cold and I love how many different flavor combinations you can come up with. They’re so easy to just grab and eat for a quick serving of protein.

Plus these have turkey AND sweet potato which means you get some protein & carbs all in one for post-workout muscle recovery. That’s a win in my book! I spiced these meatballs up with jalapeno but you could easily leave that out if you’re not into spice. I also occasionally add bacon for extra flavor but that’s optional as well.

I love dipping these in bbq sauce but you could also serve them with marinara and your choice of zoodles or noodles. Or toss them over a salad or with a side of roasted veggies. The possibilities are endless. Did I mention with your fingers straight out of the fridge??

Ingredients

Scale
  • 1 pound lean ground turkey
  • 1 cup cooked, mashed sweet potato
  • 1 egg
  • 2 cloves garlic, minced
  • 1/2 cup almond meal (or breadcrumbs)
  • optional mix-ins: diced, cooked bacon and minced jalapenos

Instructions

  1. Combine all ingredients in a large bowl.
  2. Mix well and form into balls (I made about 16).
  3. Bake at 400 degrees for 18-20 minutes (or until internal temp reaches 165 degrees), flipping once.

Notes

Feel free to cook these in a pan instead of baking them if you want to, or brown on all sides before baking for added flavor.

Over the weekend, I shared on IG stories how I decided to cook once, eat twice this week. I honestly wasn’t planning to share it on the blog but I got a great response from people saying they loved these type of easy meal ideas. 

Here’s the basic idea – I pick a handful of ingredients that I have on hand, and then come up with two ways to use them in meals that can be prepped ahead of time. My goal is to make two dishes that contain similar ingredients but are uniquely different so that I feel like I’m eating two different meals, but it’s less work on my part because a lot of the ingredients are the same.

When you approach something like this, start by choosing your staple ingredients. For me this week that was:

  • chicken
  • broccoli slaw
  • roasted sweet potatoes
  • peppers
  • apples

Crunchy Kale Salad with Couscous and chicken

I started with the idea for one dish. I wanted to recreate a salad that I had while we were out to dinner over the weekend. Once I’d finalized that recipe, I came up with another way to use the ingredients to make a cold noodle dish.

A few things that can help set dishes apart:

  • Hot vs cold
  • Veggie-based vs grain-based
  • Salad vs soup or casserole
  • Filling vs stand-alone
  • Flavoring/Sauces (ie mild vs spicy, Asian vs Indian)

This week I went with one that’s more salad-like with a base of kale and broccoli slaw and one that’s more noodle-based with added veggies. The nice thing about these are that they’re flexible. If you’re looking for the simplest, easiest way, use the same greens, grains and proteins for both. If you have a little more time, look for things that are similar but different, perhaps things that have similar cooking times.

For example, I used couscous in one and rice noodles in the other. Both cook in about 10 minutes so I could cook them simultaneously on the stove. However, I could have used noodles in both or couscous in both to save time. 

I used chicken in one and chicken sausage in the other. Since chicken sausage comes pre-cooked, all I had to do was cook the chicken. You could easily pick one and use it in both. You could also differentiate even more but still keep it simple by firing up the grill and grilling steak for one and chicken for the other. Or using canned beans or chickpeas in one and chicken in the other.

By choosing a few of the same fruits and veggies for both meals, you can do all your chopping at once and then just divide between the two meals (ie what i did for the peppers, apples and sweet potatoes).

Also, remember that sauces can go a long way in setting two dishes apart. This week I made a Maple Mustard Vinaigrette for the salad and a sweet and spicy peanut sauce for the noodle salad.

The recipe for the Asian Peanut Noodles is not exact. Feel free to adjust quantities based on how much you want to make. 

Asian Peanut Noodles

Bring a pot of water to a boil. Add 4 ounces rice noodles (I use Thai Kitchen) and half to one bag broccoli slaw. Cover, remove from heat and let sit for 10 minutes. Drain the water and return to pot. Mix in 3-4 chopped chicken sausages (or any kind of cooked chicken), 1 large chopped apple and 1 large chopped bell pepper and stir to combine.

In a bowl combine 1/4 cup peanut butter, 2 Tbsp soy sauce, 1-2 tsp fresh ginger, 2 Tbsp sweet chili sauce and 1/4 cup chicken broth. Taste and adjust if needed. Add some sriracha if desired. 

Pour peanut sauce over noodle mixture and stir to combine.

I whipped up this Crunchy Kale Salad with Couscous this weekend after eating something similar at one of our favorite restaurants. You guys know that I’m typically more of a fan of prepping food components and putting them together each day to make quick meals. But this week I wanted to change things up. I’m still trying to play catchup after being sick and we have a couple of busy days so I decided to just make myself a couple of meals ahead of time that I can just pull out and eat quickly without doing any work during the week.

To make my life even easier, I started with a bagged salad kit – a mix of kale, romaine and cabbage because I liked how everything was pre-washed and chopped. However, next time I’ll likely just prep my own kale and mix it with a bag of broccoli slaw or coleslaw because I didn’t even use the dressing and some of the toppings included in the salad kit.

This is a flexible salad so you can really customize it to your liking. Here are a few choices:

  • Star with a base – Aim for a mix of kale and something crunchy like cabbage, broccoli slaw and/or romaine
  • Choose a grain – I used tri-colored couscous. You could also use something like farro.
  • Pick a protein – I used chicken that I cooked in the Instant Pot. Grilled chicken or steak would also be good, as well as chicken sausage
  • Add more veggies – peppers, roasted sweet potatoes and tomatoes are what I had on hand but carrots, onions etc would work too
  • Top it off – I added Craisins and apple for a little sweetness and some candied pecans for crunch. Sliced almonds would also be good.

To tie everything together, I whipped a Maple Mustard Vinaigrette but you could use whatever homemade or store-bought dressing you like best.

Ingredients

Scale

8–10 cups kale mix (chopped kale mixed with broccoli slaw/cabbage/romaine etc)
1 cup uncooked tri-color couscous (or other grain of choice)
2 cups diced sweet potato
1 red bell pepper, diced
1 pint cherry tomatoes, halved
1 pound cooked chicken (or other protein like steak, chicken sausage, etc)
1 large apple, diced
optional: Craisins or dried cherries, pecans or almonds

1/4 cup dijon mustard
1/4 cup red wine vinegar
2 Tbsp maple syrup
2–4 Tbsp avocado oil

Instructions

  1. Cook couscous according to package directions and let cool.
  2. Roast sweet potatoes and let cool.
  3. Combine all salad ingredients in a large bowl and mix until well combined.
  4. In a mason jar combine mustard, vinegar, syrup and 2 Tbsp oil. Shake vigorously until well combined. Taste. Add a pinch of salt or more oil or maple syrup if desired.
  5. If prepping ahead of time, store salad in a ziploc bag with air removed and dressing in a mason jar. Combine when ready to eat.

Notes

The dressing can be doubled if you want more!

Hi friends!

I first shared these Thai Chicken Meatballs over three years ago. Back in the days when I only had one kid and I thought it was hard to eat lunch because I was so busy. I have no doubt that I was busy back then, but suffice it to say that I am no less busy now, and I’m still struggling to eat lunch. So, over the years these meatballs have remained a favorite of mine. 

I love them because they taste even better as leftovers so I make a batch or double batch during food prep and enjoy them all week They also taste equally good hot or cold. Since lunchtime is a bit crazy around here, I love that I can just grab and eat them without having to worry about a microwave, or even a fork most days. I eat them without dipping sauce but you could definitely mix together some ketchup, sriracha and chili sauce for a fun dip!

Adjust the amount of ginger and sriracha based on how much you like those flavors.
Meatballs may stick slightly to the foil but with a firm spatula you should be able to cleanly get under them and turn them halfway through

Care to join me for a batch of these Red Lentil Pancakes?! Ever since I tried these Red Lentil Cookies from Real Mom Nutrition, I’ve been on the hunt for more ways to use them. They cook more quickly than other lentils and have even less flavor so it’s easy to blend them into things! 

It took a couple of tweaks to get these pancakes just right but once I did, my two year old gobbled them up. I top them with peanut butter or yogurt and sprinkle them with hemp seeds and berries. Also, lentils are a good source of iron, so pairing them with a fruit high in Vitamin C like strawberries or oranges will help increase that iron absorption!

These would also be a fun addition to school lunches! Or spread some peanut butter between them and stack them up for a fun sandwich at snack time. Plus they are so so easy. Just throw everything in a blender and blend until smooth. When you’re cooking the lentils, make a double batch and freeze half so you can just pull them out when you’re ready for another batch of pancakes.

Ingredients

Scale

1 cup cooked red lentils (approx 1/3 cup dry)
1 cup old fashioned rolled oats
2 eggs
1/3 – 1/2 cup mashed banana (approx 1 medium)
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
1/4 – 1/2 cup milk (dairy or non-dairy)

Instructions

  1. Add lentils, oats, eggs, banana, baking powder, cinnamon, vanilla and 1/4 cup milk to blender and blend. Depending on how your red lentils are cooked, you may need to add an additional 1/4 cup milk.
  2. For best results, let sit 10 min before cooking pancakes on a griddle or in a skillet. Keep pancakes small and make sure the griddle is fully hot before adding the batter.
  3. Keep heat on medium to allow the pancakes to cook through.
  4. Top as desired!

In each posts, I give you four ingredients to prep on Sunday (with suggestions for additional prep work if you have time) and show you how to turn them into four quick and easy meals during the week.

This week’s recipes all feature Mann’s Broccoli Cole Slaw. This is one of my favorite things to buy because it comes shredded and ready to go, has a great crunchy texture, and is so easy to add to tons of recipes for a boost of nutrients and an extra serving of veggies. Mann’s also has some other great Veggie Slaw Blends, as well as veggie noodles and veggie rices! I’ll share a couple of ways to incorporate those into this week’s meals as well!

The Game Plan

What’s on the menu this week?

  • Instant Pot Asian Peanut Noodles
  • Taco Sweet Potato Toasts
  • Broccoli Slaw Egg Roll in a Bowl
  • Greek Chicken Flatbreads

Here’s what you need to prep to make this menu easier:

  • Spiralized veggies– Spiralize large carrots until you have approx 4 cups spiralized carrots and spiralize 2 bell peppers
  • Ground beef with broccoli slaw– saute 2 pounds with half a bag of broccoli slaw (roughly chopped) mixed in
  • Chicken two ways– 1 pound boneless, skinless chicken cooked in the Instant Pot or slow cooker and shredded  and 1 pound kept raw but chopped into bite-sized pieces
  • Roasted veggies of choice – these will just be extra for side dishes. I made roasted green beans and cauliflower this week.
  • 2 bags of Mann’s Broccoli Cole Slaw – cook half a bag with the ground beef and save the other half of the bag for the IP Peanut Noodles. Use about 1 cup for the flatbreads and the rest of the bag for the egg roll bowls.

Need some options?

  • If you don’t like shredded chicken you could grill it. 
  • Not a beef eater? Sub ground turkey, pork or chicken. 
  • Don’t have a spiralizer? Make carrot ribbons with your vegetable peeler and finely slice the peppers. Or buy Mann’s Kohlrabi linguine or sweet potato fettuccine.

Have more time?

  • Prechop the veggies for the flatbreads.
  • Premake the peanut sauce for the asian noodles.
  • Make some muffins for snacks or some egg wraps for breakfast.
  • Saute some peppers and onions to go on your sweet potato toasts.

Ok, so let’s dive into the recipes shall we? They’re very forgiving and don’t really require exact measurements. They’re also easy to scale so you can make the amount you need for the number of people you’re cooking for.

Instant Pot Asian Peanut Noodles

Instant Pot Asian Peanut Noodles

Ingredients
1 – 1.5 pounds boneless, skinless breasts
1 red bell pepper, spiralized
2-3 cups spiralized carrot noodles
2 cups Mann’s broccoli slaw
1/4 cup soy sauce
2 Tbsp sweet chili sauce
1/3 cup peanut butter
2 cloves garlic, minced
1-2 tsp fresh ginger, grated (or paste)
2 cups chicken broth
3 oz rice noodles, broken in half
optional toppings: green onion, chopped peanuts, sriracha

Directions

  1. Add the chicken you diced on Sunday to the Instapt Pot along with the carrots and peppers you spiralized. Then add the Mann’s broccoli slaw and rice noodles and stir well.
  2. In a bowl, mix together soy sauce, sweet chili sauce, peanut butter, ginger, garlic and half cup broth. Mix well and taste. You can add more sweet chili sauce or some brown sugar for a sweeter sauce if desired. (This can be made in advance and just dumped in when ready to cook)
  3. Pour sauce, along with remaining 1.5 cups broth into Instant Pot and mix everything up really well, ensuring sauce covers all the noodles and vegetables.
  4. Lock lid in place, press manual and adjust the time to 3 minutes.
  5. Release pressure immediately when finished and stir well. You can let it simmer for a few minutes or serve. Top with green onions and peanuts and add sriracha to achieve the desired level of spiciness.

Notes
– I sometimes sub Mann’s Kohlrabi Linguine for half the carrot noodles just to change things up!
– You could also use Mann’s Sweet Potato Fettuccine instead of or in addition to the peppers and carrots. 
– You can easily halve this recipe for a smaller batch.

Taco Sweet Potato Toast

Taco Sweet Potato Toasts

Ingredients (serves 4)

2 large sweet potatoes
1 large avocado
1 pound cooked ground beef with broccoli slaw (prepped ahead of time)
1.5 cups diced peppers and onions (can saute these during food prep, or before assembling toasts)
1 can black beans, drained and rinsed (optional)
1 Tbsp taco seasoning
1 cup shredded Mexican cheese (optional) 
diced tomato 

Directions:

  1. Preheat oven to 425 F. Cut the ends off the sweet potato. Slice lengthwise to make toasts. Spray with oil and bake for 20 minutes, flipping once. 
  2. Saute peppers and onions for 5 min over med-high heat. Add beef, beans and taco seasoning and heat through.
  3. Mash avocado and spread on sweet potato toasts.
  4. Spoon beef mixture onto sweet potato toasts and top with cheese. 
  5. Broil for 2-3 min to melt cheese. 
  6. Top with tomato. You can eat these with a fork or attempt to pick them up- depends how much you pile on top!

Notes:
– For a vegetarian version, skip the beef and just saute some roughly chopped broccoli slaw with the peppers and onions. 
– If you sauteed your veggies ahead of time you can also just mix everything in a bowl and let it heat under the broiler after you put it on the toasts or pop the bowl in the microwave to reheat before building your toasts!

Greek Chicken Flatbread

Greek Chicken Flatbreads

Ingredients (makes 4)

1 pound cooked shredded chicken from your food prep
2 tsp Greek seasoning (or a mix of paprika, oregano, pepper, garlic powder)
1 red pepper, diced
2/3 cup diced onion
1 cup Mann’s broccoli slaw, chopped
3/4 cup diced tomatoes
3/4 cup diced cucumber
1/4 cup crumbled feta (more if desired)
1/2 cup hummus (whatever flavor you want!)
4 pieces of your favorite flatbread (I use frozen naan from Trader Joes)
plain yogurt or tzatziki for drizzling, optional

Directions

  1. Warm flatbreads if desired and top with hummus.
  2. Roughly chop chicken and mix with seasoning. Taste and add more if needed. Heat chicken if you want to. Spread on flatbreads.
  3. Mix peppers, onions, broccoli slaw, tomatoes, cucumber and feta in a bowl (This can be done ahead of time) and add to flatbreads.
  4. Top with plain yogurt or tzatziki. 

Notes
-To make this vegetarian, skip the chicken and use chickpeas instead!

Broccoli Slaw Egg Roll in a Bowl

Ingredients

1 pound cooked ground beef with broccoli slaw (from your weekend prep)
2-3 cups Mann’s Broccoli Cole Slaw
2 cups carrot noodles and 1 spiralized pepper (from your weekend prep)
2-3 tsp fresh ginger (or ginger paste), to taste
1/4 cup soy sauce
1/4 cup sweet Thai chili sauce (optional)
Sriracha, optional
green onions to top

Directions

  1. Roughly chop carrot and pepper noodles. 
  2. Heat oil in a large pan over medium heat. Add carrots, peppers, broccoli slaw and saute for 5 minutes.
  3. Add beef, ginger and soy sauce and chili sauce/sriracha if using and stir to combine. 
  4. Heat through and top with green onions. 

Notes
– You could chop some of the Mann’s Sweet Potato Fettucine and fry in oil as a sub for wonton strips (or use real wonton strips) for a fun topping.
– If you like cabbage, you could add some shredded cabbage as well. Or swap the broccoli slaw for a bag of Mann’s Power Blend which has brussels sprouts, cabbage, broccoli, kale, kohlrabi and carrots!

These Easy Broccoli Slaw Recipes are made using simple ingredients that can during food prep on the weekend and thrown together during the week for quick, healthy dinners or lunches.

Here’s a general grocery list that I made for you. Be sure to read through the recipes and adjust the list for the quantities you personally need, any substitutions you plan to make and anything else you may have on hand/need:

1 box rice noodles
green onions
peanuts 
Sriracha
2 large sweet potatoes
2 medium yellow onion
1 can black beans
taco seasoning
2 pounds ground beef (or turkey)
Shredded Mexican cheese
1 pint cherry tomatoes
avocado
Greek seasoning
cucumber
crumbled feta
hummus
Flatbread or naan
plain yogurt or tzatziki
