Hi Friends!

It’s recipe time. I made these Asian Black Bean Burgers over the weekend and they were absolutely delicious. During my weekend prep, I almost always cooks a bag of black beans in my pressure cooker and freeze them to use during the week. I wanted to experiment with my usual black bean burgers and love Asian flavors so I decided to give them a shot!

This healthy recipe for Asian Black Bean Burgers is full of flavor and perfect for food prep. The burgers are packed with protein and fiber and taste great with a salad for a gluten-free, vegan lunch!

  • Total Time: 25 minutes
  • Yield: 4-6 1x

Ingredients

Scale
  • 1.5 cups black beans, cooked
  • 3/4 c quinoa, cooked
  • 2 Tbsp peanut butter
  • 2 Tbsp thai chili sauce
  • 2 tsp sriracha
  • 2 cloves garlic, minced
  • 1 – 2 tsp fresh ginger, grated
  • 1/2 c carrots, shredded
  • 1/4 c oat flour (or breadcrumbs if not gluten-free)
  • Optional sauce: mix plain yogurt with thai chili sauce

Instructions

  1. Add black beans to a bowl and smash with a potato masher or fork.
  2. Add remaining ingredients and mix well.
  3. Form mixture into 4-6 patties and place on greased baking sheet.
  4. Bake at 400 degrees for 20 minutes, flipping once.
  5. Serve as desired and top with yogurt sauce if you want to!

I love making these as part of my Sunday food prep. I actually prefer eating them as leftovers versus fresh out of the oven.

I typically serve these burgers over a big salad with my favorite salad dressing, although the past few times I’ve made them I mixed together some plain yogurt and Thai chili sauce and smothered them in that – delicious! Here’s a great, vegan homemade Thai Chili Sauce recipe if you want to make your own.

Next time I have a party I’m going to try making them as mini meatballs and serving with the chili yogurt sauce!

    I make black bean burgers from the Eat Clean Cookbook by Tosca Reno. I love the combo of PB, sunflower seeds and curry powder. These look great, my husband would love the extra chili kick!

    Those look delicious! I would’ve never thought of make them with quinoa. The slider version is a great idea!

    Nice combo of flavors in this burger! I love any burger that has spice in it. Black bean burgers seem to be our go-to. But the combination of black bean, sweet potato and spices is what gets me!

    I love any burger that has a bit of a kick to it. These sound great! I think if I cooked them, I’d roast some peppers on the side as well. They’d go perfectly together!

    Wow this looks delis. Sans the chili sauce. Not a huge spicy fan =/ I love my burgers with bbq sauce though. I had it in college and never looked back

    These look great! My favorite combo for burgers is mushrooms and onions. I love to use ground turkey or ground beef, stuff them with sauteed onions and mushrooms and season with any sort of spice I can find.       oh girl, you have to try it. i cook a bag every weekend and then freeze in individual bags so i can just pull them out and defrost or toss in meals during the week. so easy!

    Ohhh this is a recipe I THINK I can actually get my husband to have an open mind about — he loves spice but has always shied away from veggie burgers. BUT since I won a bet, he has to try them for me as soon as I get around to making them for him. And with the sriracha in here, I think he’ll LOVE IT.     Nice variation on a black bean burger! I have to admit that my favorite spicy veggie burger isn’t even my own, it’s store-bought: Trader Joe’s Vegetable Masala Burger. Sometimes I do make my own veggie burgers and stock up and freeze them, other times I let it be the easy store-bought meal from the freezer! And the TJ’s burgers are way less processed than some.

      i cook mine in the pressure cooker. but you can also cook them in the crockpot or on the stove.
