These Jalapeno Cheddar Sweet Potato Puffs are the perfect finger food! Make them as an appetizer for your next party, a snack for the big game or as a side dish for dinner!

Hi Friends!

If I had my act together, I would have posted these little puffs in time for you to make them for the Super Bowl. But I don’t, and I didn’t…so I’m posting them now. Luckily for me, I just found out that February is, in fact, National Sweet Potato Month! How perfect for me, right? I’ll share this recipe with you…and then at the bottom of this post I’ll round up some of my favorite sweet potato recipes for you to check out if you need more sweet potatoes in your life. And trust me- you do 🙂

These Jalapeno Cheddar Sweet Potato Puffs are a savory spin on my Sweet Potato Banana Bites that I make weekly for a pre-workout snack! They’re simple to make and require only a few ingredients!

An easy to make appetizer idea that’s packed with flavor and requires just a few ingredients!

  • Prep Time: 10 minutes
  • Cook Time: 20 minutes
  • Total Time: 30 minutes

Ingredients

Scale
  • 1½ cups cooked,mashed sweet potato
  • 2 eggs
  • ¾ cup cheddar cheese (I use Cabot sharp cheddar but pepperjack would also be good)
  • 3 Tbsp plain Greek yogurt
  • 2–3 strips of bacon, cooked and chopped
  • 1–2 jalapenos, minced (1 used 1 jalapeno & 1 serrano)

Instructions

  1. Combine the ingredients in a bowl.
  2. Scoop into greased mini muffin tins.
  3. Bake at 400 degrees for 20-25 minutes.
  4. Makes about 18 puffs.

Pretty easy, right? Like I said in the recipe, you don’t have to use cheddar cheese….I think pepperjack would be great as well. If you like spice, use serrano peppers instead of jalapenos, or a combination of the two.

These are best served warm but they can be made ahead of time and reheated in the microwave if needed.

I brought these over for my in laws to taste test and they gave them a thumbs up. Hubby and I have also eaten two batches since last Friday, so that’s a good sign!

    Ooohhh yummy! They are a great adaptation! I am not sure I could have them before I run, as my stomach would probably get a little upset, but after a run…..for sure! 9 miles is more than enough time to build a huge appetite! Yum!!

    I made these today and I cannot get over HOW FREAKING DELICIOUS these are! I forgot to mix in the bacon, but have no fear. i chopped it and threw a little on top of each bite before baking.

    Literally – obsessed. I’ve already shared the recipe on Facebook and with friends. They think I’m nuts. It’s cool; I’ll happily be nuts over in my corner eating my cheddar jalapeno bites ;).

    I tried these and baked at 400 degrees for 25 minutes. They were kind of mushy at the bottom and didn’t come out of the muffin cups very well. On the plus side the flavor is fabulous but wonder if they should have cooked longer?

      hmmm it’s definitely possible. They will be a bit mushy since they’re mainly sweet potato but it probably wouldn’t hurt to cook them a little more!

    I made these last night and they were so delish! Just one question. While verytasty they were on the mushy side. I cooked them for longer than the 20minutes just in case. I wondering if I used a little too much yogurt? I’m not sure. Next time I’m hoping to get it right. My husband even loved them and he hates sweet potatoes!

      Hmm maybe it depends on how much the sweet potato is cooked? I would def try with less yogurt and see if that helps!

    These look fantastic, but I don’t have a mini muffin tin… Do you think they would work spooned out in small dollops on a baking tray, almost like cookie dough? Or is the mixture too runny? Thanks!
