Jalapeno Cheddar Sweet Potato Puffs

An easy to make appetizer idea that’s packed with flavor and requires just a few ingredients!

Ingredients

Scale
  • 1½ cups cooked,mashed sweet potato
  • 2 eggs
  • ¾ cup cheddar cheese (I use Cabot sharp cheddar but pepperjack would also be good)
  • 3 Tbsp plain Greek yogurt
  • 23 strips of bacon, cooked and chopped
  • 12 jalapenos, minced (1 used 1 jalapeno & 1 serrano)

Instructions

  1. Combine the ingredients in a bowl.
  2. Scoop into greased mini muffin tins.
  3. Bake at 400 degrees for 20-25 minutes.
  4. Makes about 18 puffs.
