Apple Cinnamon Pumpkin Crockpot Steelcut Oats

Hi Friends!

A few weeks ago something tragic happened. I ran out of cereal for breakfast. If you know me at all, you know this is a major deal. However, I just didn’t have time to get to the store, and i NEED to eat breakfast, so I reached wayyyyyy back into the pantry and pulled out a bag of Bob’s Red Mill steel cut oats I got from one of my foodie penpals several months ago.

I’d never had steel cut oats and to be honest I was kind of afraid of them! But when I found out you could make them in the crockpot, I decided to give them a whirl. So I looked up some recipes, tossed some oats, milk, water, strawberries, peaches, vanilla and cinnamon in the crockpot and hoped for the best.

When I woke up, I ate them for breakfast. They were alright. But not great. Kinda lacking in flavor. And it made A LOT of extras.

Oh well, I moved on. Then this past week, the same thing happened. Out of cereal. Need my breakfast. Still had steelcut oats in the pantry. I decided to give them one more try. But this time I changed a few things up. I cut the amount in half so I wouldn’t have as many leftover. I used 1/2 milk, 1/2 water instead of mostly water. I added pumpkin! I used apples instead of strawberries and peaches. And I cooked them in a bowl, inside the crockpot.

Prep these Apple Cinnamon Crockpot Steelcut Oats and have breakfast waiting when you wake up!

The result? Much better! Much more flavor, and cooking them in the bowl AND adding them pumpkin made them creamier. I also added toppings which I didn’t do the first time!

Nothing says fall like this hearty breakfast recipe that’s a snap to prepare and as healthy as it is delicious.

  • Prep Time: 5 minutes
  • Cook Time: 6 hours
  • Total Time: 6 hours 5 minutes
  • Yield: 3-4 1x

Ingredients

Scale
  • 1 c skim milk
  • 1 c water
  • 3/4 c pumpkin puree (not pumpkin pie filling)
  • 1/2 c steelcut oats
  • 1 apple, diced
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • nuts & agave or maple syrup for topping

Instructions

  1. Combine all ingredients except the nuts and agave in a heat proof bowl.
  2. Place the bowl in the crockpot.
  3. Fill the crockpot with water halfway up the side of the bowl.
  4. Cook on low for 6 hours.
  5. Serve topped with chopped nuts and a drizzle of agave or maple syrup.

So easy! You may be able to cook these longer. I just haven’t tried. If you’re cooking them straight in your crockpot without the bowl, beware that they will be very messy! And they will get brown around the edges so you’ll probably want to cook them less.

I store the leftovers in a Tupperware container and reheat in the microwave, adding a little milk if needed.

I LOVE using wheat berries in dishes that I usually serve with rice! You may remember my Mexican wheat berries from dinner a couple of weeks ago, or my Asian Style wheatberries that I make all the time.

As for the whole wheat pastry flour? I LOVE baking with it. Just used some to make these Pumpkin Bran muffins last week. Still perfecting that recipe before I share it with you!

And the pumpkin seeds? We all know how big of a fan I am of them in my yogurt bowls! I also add them to my salads and grind them up and put them in my burgers and sweet potato falafel!

    My favourite Bob’s Red Mill product is their coconut flour. I’ve only started using it recently, but it’s just so versatile!! And for someone with a gluten intolerance, it allows me to enjoy foods that I typically wouldn’t be able to with real flour.
    I never thought something that I hadn’t even tried two weeks ago could become a staple food in my life! And flour at that!! But it has, and I love it. 🙂

    I never thought of using a bowl INSIDE the crock pot! Great idea! Bob’s Red Mill was my introduction to quinoa. Not sure if they still carry it, but I loved it and still do. Found a “cheaper” source of it at BJ’s but I would love to try the wheatberries, especially. Thanks!

    Steel cut oats are my absolute favorite!! I love everything about it–the texture is far superb compared to regular old fashion oats. I cannot wait to finish eating all the old fashion oats from my dads house so I can return to the steel! They are best with frozeb blueberries!

    I love their whole wheat pastry flour- I use it for all sort of healthy muffins and pancakes. And too funny on the oatmeal- I almost shared a very similar recipe today! Mine’s a baked oatmeal with rolled oats… crock pot is perfect for steel cut. Yum!

    Ah I love SO MANY of Bob’s products but one of my favorites is xanthan gum…it just makes the texture of my smoothies amazing! Whenever I make them without it they ar esimply not the same!

    First of all – trying the bowl IN the crock pot method. Everytime I make steel cut oats in the crockpot it takes DAYS of soaking to clean that puppy out!

    Second.. I have to pick a FAVORITE?! Not possible. I love Bob’s Red Mill products way too much to just pick one. But I do go through the ground flaxseed the fastest so I’ll go with that one!

    I love Bob’s steel cut oats. I actually make them for breakfast several times a week but I put them in my rice cooker on the delay setting. Apple cinnamon is my favorite with a dollop of home canned apple butter when they are done!

    I am in Canada so not eligible for the contest, however I just wanted to post and say thanks for the idea about putting the bowl in the slow cooker. I never would have thought of that! I love the texture of steel cut oats but I usually just cook them in the morning, before work, on the stove top with water & soy milk. I add in whatever strikes my fancy (or whatever’s in the cupboard!). I like walnuts with maple syrup best currently.

    Hi Lindsay! I can’t wait to try your recipes 🙂 I’m trying to help my boyfriend expand his crockpot skills, so you post definitely helps! I truly enjoy Bob’s Red Mill products (flaxseeds, coconut flour, chia seeds…), but I love using their Garbanzo/Fava Bean flour to make vegan/gluten free pizza crusts yum!

    I definitely LOVE the whole wheat pastry flour! It makes baked goods come out so fluffy and light 🙂

    I LOVE them all but my favorite that I use regularly are the ground flaxseed, almond meal, and whole wheat party flour! YUM

    I love Bob’s red mill products! I eat their oat bran or oats pretty much every morning ad always bake with their flours (such as whole wheat pastry, garbanzo bean, spelt) and flaxseed!

    YAY!!!!! Can’t wait to try this! Cooking time 5-6 hours? Do you think if I left them on for 8 on low they would be OK? I get over 6 hours of sleep every night and need it, but if necessary I can set an alarm to wake up and throw everything in the crockpot for breakfast. LOL!

      i think if you did them in a bowl within the crockpot they’d be fine for 8 hours but if you did them just in the crockpot they might get a little overdone.

    the buckwheat pancake mix, chia seeds & pizza crust are my favorites!
    when i lived in portland, or ; they had a flagship store a few miles away so every single bobs product ever made was in the shop ; it was amazing!!

    Was wondering how to just make a batch of plain old steel cut oats in the crock pot. I would love to have them ready and on hand and be able to doctor them up differently every day.
