With just a few simple ingredients, this Pesto Corn Salad makes a great dinner side dish and can also be used as a topping on chicken or fish!
Hi Friends!
We’re right smack in the middle of trying to get our new gym up and running so things are a little crazy around here. If you want to follow along, be sure to follow me & Crossfit 1803 on Instagram and Facebook. I’m posting daily videos of our progress! So far we’ve cleaned, painted and installed the flooring.
Anyways, I just wanted to pop in a share a quick recipe with you guys. I know, I know… I already posted about Chili Lime Corn earlier this week and now here I am sharing another corn recipe…but what can I say. It’s summer. Corn is cheap, delicious and plentiful and this is such a great way to eat it that it needed to be shared.
We actually made this while my parents were here visiting and it was such a hit that I knew I needed to recreate it for the blog. We ate it as a side dish, but when I made it a second time I ate it on some leftover salmon. It’s delicious either way.
So here’s how you make it:

With just a few simple ingredients, this Pesto Corn Salad makes a great dinner side dish and can also be used as a topping on chicken or fish!
- Yield: 4-6 1x
Ingredients
- 4 ears corn (about 3 cups)
- 1/2 cup red onion, diced
- 1/2 cup red pepper, diced
- 1/2 cup fresh mozzarella, diced
- 1/4 cup pesto
- salt and pepper to taste
Instructions
- Cook corn as desired. Let cool and cut off the cob.
- Mix all ingredients in a bowl.
- Cover and chill for at least 30 minutes before serving.
Notes
-This would also be great with tomatoes added![br]-The longer it sits, the more the flavor develops.
Pretty simple, right?

Summer corn rocks! Thanks for sharing another great corn recipe, love the idea of using pesto!~Carolyn @ Cabot
Fresh summer corn and pesto are two of my favorite things! I know I would love this.
this does look good! i rarely use / make / cook with pesto, but the combo sounds good!
Love how simple this is (pesto is so great that way!) and so many of my favorites all on one plate.
I am so excited to hear about the plans for a new gym. Seriously, that sounds like a dream. Good luck, I am know you will be super busy! xo
Anything with pesto is amazing to me but I don’t think I’ve ever tried it with corn! Hello new side dish.
Epic use of pesto, besides with just a spoon.
This would fuel some epic gym building! 😀
This looks like it would be pretty easy to make. I love recipes like that.
Is there any particular brand of pesto you recommend?
i love to make my own! but i don’t have a specific storebought brand. I’d just look for one with simple ingredients and low sodium!
I used to make something like this with quinoa and tofu…I think I would like it if the corn was the star!
i have not had corn this summer..needs to change that. i loved your clips on gym progress..way to go you guys 🙂
Anything w pesto is magical in my book! I’m so pumped for your new gym (box?)!!
I just made another batch of pesto last night and froze some for later- I never would have thought to combine it with corn!
The gym project is so exciting!!
Mmm I would totally make this for Josh and myself!
Linds, do you make your own pesto? Or which store-bought brand would you recommend? This looks delicious!
i try to make a batch of my own every summer and then freeze in ice cube trays so i can use. but i’m not agains storebought if you can find a brand with just a few ingredients that isn’t loaded with sodium!
I brought this as a side dish to a cookout and received many compliments. Great as a make-ahead dish when entertaining and absolutely delicious! Recipe – binder worthy!
yay!!!
