Just popping in with a quick and easy recipe for you today. Lately I’ve been struggling a bit with finding time for lunch. It all depends on baby’s schedule but no matter what, I need something that I can eat fast! Enter this Curried Tuna Salad with Apples.
Curry powder is one of my favorite spices and I love it in tuna and chicken salad. Instead of mayo, I like to use smashed avocado and hummus and make things even more fun, I added apples!
Here’s what you need:
I like to use Sabra’s Supremely Spicy Hummus but feel free to use whatever flavor you’d like!
I make a batch of this on Sunday and then all I have to do is scoop it onto some crackers or sliced veggies for a quick lunch.
