Today we’re talking about back to school breakfasts. We all know it’s hard to get back into a morning routine once school starts up again. And since you guys know breakfast is my favorite meal of the day, I hate when I hear about people skipping it this time of year because they feel like their mornings are too busy.
Enter this egg sandwich. It’s ready in 5 minutes, fun to make and eat and packed with protein, healthy fats and whole grains. Win win win!
As you may recall, Davidson’s Safest Choice Eggs are pasteurized before they hit store shelves. That means you can eat them raw without worrying about the bacteria you typically find in raw eggs. That also makes them a great choice for kids and pregnant mamas (like me!) who like a good runny egg on their sandwich! Squish and I have been doing a lot of baking this summer so I also love having them on hand so I don’t have to worry when he eats the batter!
So let’s get back to this sandwich: warm turkey, melty cheese, freshly sliced avocado and a perfectly cooked egg on whole grain bread (I used Dave’s Killer Bread 21 Grain & Seed). If that doesn’t sound like breakfast perfection, I don’t know what does!
