Veggie Month-Week 3

Hi Friends!

Another veggie week is in the books! This week we had a few dinners where we ate different things…but it definitely didn’t feel like a chore to make them. The only struggle I had this week was when I made myself some summer veggie chowder. I found myself thinking about how good it would be with some fish in it 🙂 Other than that, we’ve resorted to a few of our favorite staples, like pizza and black bean burgers, as well as tried something new (baked tofu) and loved it!

So what have we been eating?

Dinners:

Thursday: Morning Star Black Bean Burgers with spinach, roasted red peppers, tomato and Havarti cheese.

Friday: Thai Grille (Pad Thai with tofu for her & tofu curry for him)

Saturday: Early evening Veggie pizza…Late night panini with roasted balsamic veggies, hummus, avocado and half a leftover fried egg

Sunday: Sweet & Spicy Tofu with Orzo Pasta Salad

Monday: Summer Veggie Chowder for her, Spinach Tortellini with red sauce for him

Tuesday: Naan Pizza with hummus, veggies & a pinch of cheese

Wednesday: Leftovers

And for lunch? We’ve gone through two batches of hummus (one roasted garlic and one roasted garlic & sweet potato), transformed leftovers (hubby made a burrito with the leftover tofu), and enjoyed some staples like fresh fruit and cottage cheese and tomatoes. I renewed my love of oatmeal bowls and made my own flatbread crackers.

For breakfast last weekend we tried out Morning Star’s breakfast “sausage” patties and really liked them.

And for dessert I made some banana soft serve with blackberries and animal crackers. YUM!

All and all it’s been a pretty darn delicious week! Next week I have plans to make those veggie pot pies. I bought the puff pastry for the tops! I’m also thinking of making lasagna. We’ll see how it goes 🙂

    Veggie lasagna! Yum…if you can believe it, Paula Deen has a GREAT recipe that I adapted to make a bit healthier (but shockingly, it was already pretty healthy).

    Last night we had quinoa bowls with roasted veggies, tofu, and Mama Pea’s Peanut Mmmm Sauce, it was sooo good!

    I love Morning Star breakfast patties! They are super satisfying and I actually prefer them over real sausage.

    Everything sounds great! This week I’m loving scrambled eggs and toast for breakfast. It’s becoming an obsession.

    The best thing – that’s tough, because I haven’t eaten a lot of non-“on the go” food this week, it’s been so crazy – but I did really like the Kind mini-bar I ate pre-yoga today. Totally filling and around 100 calories!

    And I love the Morningstar patties (I can’t eat them any more, sadly) – especially the maple flavored one! Yum!

    The best thing I ate this week was probably a creme-filled donut at work hahaha! But I’ve also had some delicious watermelon, and a couple tasty whole-wheat tortilla pizzas. Yum! 🙂
