Loaded Spinach Salad

This, my friends, is TBS.

The. Best. Salad.

EVER!

Actually, it’s so good that I’ve eaten it for dinner two nights in a row. That’s right. The exact same salad. And quite honestly, I’ll probably eat it again tonight. What can I say…I’m a creature of habit. In fact, if it weren’t for my hubby, I wouldn’t have a food blog…because I’d just eat the same four things over and over…and no one wants to see that. So for his sake (and yours!) I usually try to get a little more creative in the kitchen.

BUT since the hubby has been busy with work for the past few nights, I’ve allowed myself the indulgence of repetitive eating 🙂

So let’s build this salad, shall we?

Start with about 2 cups of baby spinach. Add 1/2 c quinoa. Then pile on the toppings. This should include, but is not limited to:
-strawberries
-red peppers
-apples
-red onions (forgot these the first night!)
-roasted sweet potato

Top with sesame ginger dressing and dig in!

Lather, rinse, repeat for night 2!

I enjoyed the other half of my red pepper and the other half of my apple on the side each night! Protein, veggies and fruit- oh my! There’s not a single thing about this salad that I don’t LOVE 🙂

    That does look like the best salad ever!

    I like to put nuts and seeds on my salad…it doesn’t feel complete without them 🙂

    That looks SO delicious. I love roasted sweets on a salad. 🙂 Honestly, I’m not sure what there is that I DON’T love on a salad. Lately I’m all about spaghetti squash…

    Those colors are amazing! It’s probably the most beautiful salad, too. I love the addition of quinoa. What a great way to sneak in some protein.

    My favorite salad topping (albeit doesn’t make it complete in and of itself) is sliced almonds or sunflower seeds. It adds such a perfect crunch that I love in salads! 🙂

    Yum that salad does look so good! I love to have salads for lunch with leftovers from dinner the night before…. they can end up being VERY random!

    wow, that salad does look quite amazing! my favorite salad topping? cheese, duh! i also love black olives, artichoke hearts, and sun dried tomatoes!

    Your salad looks fantastic! I love sweet potatoes in just about any way possible. My favorite salad right now is mixed greens with goat cheese, dried cranberries and a honey-mustard-balsamic vinaigrette!

    That salad looks so delish! I have the same type of salad at least once a day too! Lately its been hummus and meatless meatballs that have been making frequent appearances. Where do you buy sesame ginger dressing?!

      it’s Newman’s Own Low Fat Sesame Ginger. I’ve seen it in all the grocery stores i go to!

    I am the EXACT same way…if not for Josh…I’d eat a lot of the same things every day! The salad looks awesome. Fruit is the best on top of salads. Grapes are probably my ideal fruit on top! And goat cheese or feta…Deliciousness!

    I love almost anything with sweet potatoes in it, so I’m definitely excited to try this salad out. Have you tried it with sweet peppers instead?
