Quick recipe for you today. Chicken Fried Rice.

This Healthy Chicken Fried Rice is perfect for nights when you want a quick, easy dinner that's both simple and nutritious!

It’s nothing new. In fact, it’s probably something you’ve had several times. You’ve probably even made it yourself.

I guess this is more of a reminder. An inspiration of sorts. For those nights when you just can’t figure out what to make for dinner. And you want something that doesn’t require much thought. Or effort. Or creativity.

An easy weeknight dinner that can also be made ahead of time and eaten all week.

  • Prep Time: 10 minutes
  • Cook Time: 30 minutes
  • Total Time: 40 minutes
  • Yield: 4 1x

Ingredients

Scale
  • 1/2 cup brown rice, dry
  • 2 cloves garlic, minced
  • 1 pound chicken, chopped
  • 4 cups mixed vegetables (fresh or frozen)
  • 2 eggs
  • 3 Tbsp soy sauce
  • green onions, to garnish

Instructions

  1. Cook rice according to package directions.
  2. Saute garlic and chicken in a large pan for 5-7 minutes over medium heat.
  3. Add vegetables and saute until chicken is cooked and vegetables reach desired level of tenderness.
  4. Push everything to one side of the pan, add the two eggs and scramble until cooked.
  5. Add rice and soy sauce.
  6. Serve warm, topped with green onions.

Notes

Use whatever veggies you’d like. I typically use carrots, peppers, onions, broccoli and peas.

Feel free to use your favorite veggies. I usually use peppers, onions, carrots, broccoli and peas and often I use a combination of whatever veggies are in my fridge and some frozen ones from the freezer. Serve with extra soy sauce if you want, but you really don’t need much to get the flavor!

    This was actually a very good reminder, so thanks! I used to make fried rice all the time as a quick dinner, but it’s been quite awhile since I’ve done it. It’s such a tasty, healthy option!

    If we have any leftover rice, I freeze it and keep adding to the bag until there is enough to thaw out and make fried rice!

    This is an amazing recipe! I love Hawaiian fried rice, but have never thought to try a version at home. I might leave out the garlic (sadly) because I avoid FODMAP food, but up the green onion ante and maybe add some ginger! Going to try this weekend =)

    Stir fries and rice dishes like this are always my go-to on weeknights where I dont have a lot of time to throw something together, but want to make something tasty and satisfying (and slightly more nutritious than a freezer burrito). This looks tasty!
