Hi Friends!
Just popping in with a quick recipe for you guys today. If you’ve been tuning in for the past few weeks, you may have noticed these black bean meatless meatballs popping up in my weekly eats! Today’s the day you get the recipe.
Ignore the fact that any kind of “ball” is difficult to photograph. Pretty they are not. Tasty they are 🙂
PrintBlack Bean Meatless Meatballs
These vegetarian friendly “meatballs” are as easy as they are delicious.
- Prep Time: 5 minutes
- Cook Time: 20 minutes
- Total Time: 25 minutes
- Yield: 12 1x
Ingredients
- 2 c cooked black beans
- 3/4 c cooked quinoa
- 2 cloves garlic, minced
- 1/4 c onion, diced
- 1 Tbsp pesto
- 3 Tbsp hummus
- 1 tsp paprika
- 3/4 tsp oregano
- 1/2 tsp cayenne pepper
- 1/4 c breadcrumbs
- Instructions
Instructions
- In a bowl, smash the black beans well until they start to take on a paste-like consistency.
- Add remaining ingredients and mix well to combine.
- Form into balls, squeezing tightly to help them stick together.
- Bake at 400 degrees for 18 minutes, rolling them to a different side after 9 minutes.
Pretty simple right?
I’ve been loving these little guys over spaghetti squash, but they’d also be great over real spaghetti. I also plopped a few into my sweet potato soup and guess what- AMAZING 🙂

I literally just told my husband and Sunday that I’d try making bean meatballs sometime soon! Perfect timing. If I don’t have pesto, I’m hoping it’s okay that I leave that out. Maybe just use a bit more hummus? Looks great though–can’t wait to try it.

they’ll be fine. i’ve made them with and without pesto. it’s just for flavor. you can add more of the other seasonings if you want!

Yes, I’ve been loving the mini spaghetti squash too. Finally a spaghetti squash that doesn’t procure 10 servings! It’s perfect because I’m the only one who eats it, so it never goes bad.

Balls would be difficult to photograph, I hear you on that one, but I can tell by the ingredients that these would be delicious! I can’t wait to try them, in fact, I think I will add them on my Sunday Prep for next week… seems like something that could be easily reheated for a healthy lunch.

I lover artless meatball with spaghetti squash! I’ve only done a tofu and lentil combo but love the beans here! Maybe a bean version needs to happen soon…

Yum!! I made a batch of meatless black bean balls a while back, but mine included oat flour rather than quinoa! Yummy either way 🙂

These sound really good, I love the addition of humus. I made black bean veggie burgers for the first time today and loved them, so i am hoping to incorporate more black bean meals into my rotation.

Thanks so much for this recipe! I just made these tonight and they were awesome. I replaced the black beans with lima beans and they came out just as good as your pictures! The smell of them baking in the oven is heavenly!
