Hi Friends!
Just popping in with a quick recipe for you guys today. If you’ve been tuning in for the past few weeks, you may have noticed these black bean meatless meatballs popping up in my weekly eats! Today’s the day you get the recipe.
Ignore the fact that any kind of “ball” is difficult to photograph. Pretty they are not. Tasty they are 🙂

I’ve been loving these little guys over spaghetti squash, but they’d also be great over real spaghetti. I also plopped a few into my sweet potato soup and guess what- AMAZING 🙂

That looks yummy!!! I will try this!!! 🙂
Looks so good! Especially since I’ve been trying to avoid meat for the most part recently!
I’m loving the addition of pesto too!
I literally just told my husband and Sunday that I’d try making bean meatballs sometime soon! Perfect timing. If I don’t have pesto, I’m hoping it’s okay that I leave that out. Maybe just use a bit more hummus? Looks great though–can’t wait to try it.
they’ll be fine. i’ve made them with and without pesto. it’s just for flavor. you can add more of the other seasonings if you want!
These look fantastic! I love making bean burgers, but I’ve never tried making bean meatless balls before. Definitely want to try these!
Hummus addition? I’d say interesting but you always know what you’re doing!
Yummmm…..can’t wait to try these in some spaghetti squash!
These look amazing! I love black bean burgers and I can’t wait to try these meatballs. With spaghetti squash of course. 🙂
This looks delicious! I’m totally going to give this a try.
Mmm, that looks awesome! Pinned to revisit when I restock on black beans!
I have never tried anything like this before! I will definitely be giving them a go!
Yum!! Looks amazing!!! I need to try these ASAP– Going to pin them and make them soon!
Sounds delicious!
Yes, I’ve been loving the mini spaghetti squash too. Finally a spaghetti squash that doesn’t procure 10 servings! It’s perfect because I’m the only one who eats it, so it never goes bad.
Yummo! Those look awesome!
You always have the best recipes! So simple, healthy, delish!
What a fantastical idea! So simple and sounds delicious 🙂
Your balls looks amazing. Yep! 🙂
Oooo yum!!!! Must make these 😀
I love black bean patties, but I’ve never thought to make them meatballs. Great idea, I can’t wait to try this.
So funny that I love making homemade veggie burgers but never though about veggie meatballs. They look great!
Yum, I was just thinking about making black bean burgers again to stock the freezer 🙂
Balls would be difficult to photograph, I hear you on that one, but I can tell by the ingredients that these would be delicious! I can’t wait to try them, in fact, I think I will add them on my Sunday Prep for next week… seems like something that could be easily reheated for a healthy lunch.
I have all the ingredients to try these–they look so good!!
I love that you use quinoa and black beans. Tons of protein!
I lover artless meatball with spaghetti squash! I’ve only done a tofu and lentil combo but love the beans here! Maybe a bean version needs to happen soon…
Yum!! I made a batch of meatless black bean balls a while back, but mine included oat flour rather than quinoa! Yummy either way 🙂
These look great! I have heard of a lot of recipes that you use black beans in. I need to start trying them out.
yum!! pinning yet again!!
YUM! I think they look like cookie dough balls on your baking sheet 😉 This looks like an awesome vegetarian meatball option!
Thanks for the great vegetarian recipe. We try to do one meal a week, but my brain still isn’t trained to think “veggie” first. I”ll give this one a go next week!
meatless meatballs… I like it! 🙂 black beans and quinoa, can’t go wrong!
Love this recipe! Pinning it for sure 🙂
These look delicious!
These will be perfect for pasta night! 🙂 Thanks love!
These sound really good, I love the addition of humus. I made black bean veggie burgers for the first time today and loved them, so i am hoping to incorporate more black bean meals into my rotation.
Thanks so much for this recipe! I just made these tonight and they were awesome. I replaced the black beans with lima beans and they came out just as good as your pictures! The smell of them baking in the oven is heavenly!
ooooh great idea! love that substitution!
I made these last night (adding in a healthy dose of crushed red pepper and omitting the bread crumbs), and both my husband and I really enjoyed packing them in our lunch today. Thanks!
awesome!! so glad you enjoyed them!!
