Asian Noodle Salad

Hi Friends!

I made you lunch. Or dinner. With leftovers. Leftovers that are good hot OR cold. Are you ready?

Asian Noodle Salad

This Asian Noodle Salad is great served warm or cold. Eat some for dinner and take the rest for lunch the next day!

Here’s what you need:

Delicious hot or cold, this dish is easily customizable to the veggies you have on hand! Make extra and enjoy the leftovers- it’s better the second day!

  • Total Time: 20 minutes

Ingredients

Scale
  • 2 oz soba noodles, uncooked
  • 2 cups cooked chicken, diced
  • 2 cups mixed vegetables, diced
  • 2 cloves garlic, minced
  • 1/4 c peanut butter
  • 1/4 c light coconut milk
  • 1 Tbsp water (more for thinner sauce)
  • 1 tsp low-sodium soy sauce
  • 1 Tbsp rice vinegar
  • 2 Tbsp sweet thai chili sauce
  • 1/4 – 1/2 tsp cayenne pepper
  • 1 tsp fresh ginger, grated

Instructions

  1. Cook noodles according to package directions. Drain and set aside.
  2. In a skillet, saute vegetables and garlic 5-7 minutes or until tender.
  3. Add chicken and noodles to the skillet.
  4. In a small bowl, combine the peanut butter, coconut milk, water, soy sauce, rice vinegar, chili sauce and spices and mix well.
  5. Pour sauce into skillet and stir until everything is well-coated.
  6. Serve warm or cold.

I actually prefer this dish cold…but it’s great either way. And it’s even better the second day!

    Wow. This looks delicious. Great job on making the Asian noodle salad! I actually have all the ingredients on hand, so this will be the menu some time this week. I’ll just be using tofu instead of chicken to make it vegetarian. 😉

    I make a very similar noodle salad, except without the coconut milk so definitely adding that in next time! I love making it with rotisserie chicken and the best bit- eaten cold!

    I would probably make this (subbing out the PB 😯 ) and end up leaving it in the fridge to sit overnight just so I could enjoy cold leftovers the next day. Looks delicious — thanks for sharing, girl!

    I have never tried soba noodles, but this sounds totally awesome. I am thinking I am going to have to make this with either tofu or tempeh!

      Thanks Lisa! I’ve thought about it before but opt not to for a variety of reasons. However, you can always calculate ones that interest you by creating a recipe in my fitness pal or sparkpeople!

    I love making meals like this especially when it is guaranteed to have leftovers. Makes meals for the week so much easier and yes they’re typically always better the next day. It’s a win win situation. 🙂
