Last week, I finished up my classes for Spring Quarter! To celebrate, the hubby grilled a delicious dinner for me 🙂
I wasn’t home to take pictures, but he did remember to snap a few of his own!
He grilled stuffed mushrooms, potatoes, meatloaf and flatbread pizzas! We recently acquired a second little grill and it’s perfect for veggies 🙂

Clearly these two characters were a big help!
Everything was delicious and we enjoyed the leftovers for lunch the next day. Then we decided to recreate the pizzas for dinner the following night!
Flatout wraps are the best for making pizzas! We made some with tomato sauce and some with garlic and olive oil and it couldn’t be easier! First get your toppings ready:
Then hopefully it won’t start pouring down rain for you like it did for us!
The key is indirect heat on the grill! Move the charcoal to either side, leaving room in the middle.
The bottom crisps up nicely and the cheese melts but nothing burns.
Our next challenge is thick crust pizza on the grill! Have you ever done it? Any tips??

oh yum, the pizzas look awesome! the closest i’ve gotten to making pizzas on the grills is making pudgie pie pizzas over the fire! (please tell me you know what pudgie pies are??).

i have NO idea what pudgie pies are. enlighten me!!

oh no! ok, so you use these “pie iron” things (we call them pudgie pie makers!) –> i found them at target if you want to see an example. you put two slices of bread (buttered on both sides) and then fill them with pizza sauce, cheese, and toppings. then you close the pie iron and put it over the fire – almost like you’re roasting marshmallows – until it cooks! they’re so delicious.

Those pizzas came out perfect. I’ve never done a thick-crust pizza on the grill, but I’m excited to see how yours comes out. Indirect heat really is the key to not burning the bottom. I’m sad to say how long it took me to discover that.

I haven’t made thick crust pizza on the grill, but I suspect the key would be to par-grill (is that a real term?) the dough before topping the pizza. Otherwise, I could see some of the veggies burning during the longer cooking time.
BTW, I’m addicted to making pizzas using Fabulous FlatsTandoori Naan. They freeze really well and thaw within an hour, so we stock up when Heinen’s has them on sale (usually 3/$5). It makes for a very quick, healthy, last minute meal idea!

Congrats on finishing classes! I don’t have any tips for you…but my dad would. I’m hoping that when I go home to Pennsylvania this week he’ll give me a tutorial, because he seriously makes THE BEST pizza crust on his grill that I’ve ever had. [And I’m not just saying that because it’s my dad.]
PS. Technically my stepmom makes the crust. My dad just grills it. So it’s a team effort really.

Flat outs do make AWESOME pizzas! So fabulous that the husband made these up for you!! When I do thicker crust pizzas on the grilled, I spray the dough with non stick spray. Cook one side, flip, cook a couple minutes, top, cook until cheese is melted

Looks so great! I haven’t done thick crust on the grill…thin makes me happy enough and I’m always afraid the thicker crust won’t work right!

I love grilled pizza. Unfortunately I am terrible at cooking but my favorite pizza chain is Dominos and their grilled pizza chicken is so tasty!!!! 🙂
