Time for another round of Sunday Food Prep!
I was all over the food prep last weekend so we had a great week of eats!
Here’s round 1 of my prep work:
- Quinoa Breakfast Bars
- Homemade Whole Wheat Tortillas
- Froyo Bites
- Black Beans
- Roasted Chickpeas
- Lettuce for salads
- Carrots & Broccoli for snacking
- Tuna Salad
- Green Beans
And for round 2:
- Chopped veggies & sprouted lentils to make curry later in the week
- Baked salmon
- Grilled steak for hubby & grilled chicken
And here’s what some of you guys have been up to!
Here was today’s Sunday food prep , nothing to fancy but I have
1: cut up watermelon
2: cut up veggies portioned in baggies and big container for snacking and stir fry
4 washed berries for over Greek yogurt or on top of oats
6: chicken and cabbage stir fry served over rice noodles ( not pictured) for suppers
7 quinoa for a taco salad this week
8: Mediterranean salad with home made orange ginger dressing for lunches
9: trail mix

I’m learning how to make healthified Indian food! From top left going clockwise: Edamame but marinated in Indian spices, chickpeas (chole), brown rice w/chopped veggies and Indian spices, tortillas stuffed with lentils and spinach. Everything has been placed in individual, single-serving Tupperwares in the freezer. So so excited about the new recipes I’ve learned! 🙂

Strawberries, blueberries, & raspberries
Corn on the cob
Roasted broccoli & eggplant
Sweet potato, blueberry, flax bites
Shrimp & grits
Red Beans, rice, peppers, and sausage
Not pictured: salmon
My husband and I will use all of the above for lunches, snacks, and dinners this week. This took an hour and a half, but will save SO much time and stress during the week. The weeks I have been unable to or don’t make time to prep food on Sunday I always regret it. If you have never done it give it a try!!!
