Min at The Adventures of MJ & Hungryman –
My husband and I eat a mason jar salad everyday. It is the perfect grab & go meal, saves time in the mornings, and is a delicious way to get those essential nutrients into our bodies regardless of how busy we may be. This week’s mason jar salad is cruciferous vegetables with Asian sesame dressing + barley. I roasted sweet potatoes and carrots and prepped various vegetables to either add to my no recipe nourish bowls or to just snack on. Not only that, if I wanted to cook during the week, having prepped vegetables makes it that much easier to whip up something at the last minute. I also made some baked turkey meatloaf.
This week’s Meal Prep looks so pretty! I prepared: Fresh Strawberries & Pineapple, Mini To-Go Breakfast Quiches (egg, peppers, spinach, basil, cheddar), Brown Rice and Black Beans, Salad with Grilled Chicken, Ground Beef Burger with Spaghetti Squash, Chicken Veggie Stir Fry, Baked Chicken and Sweet Potato, Lean Meatballs, Raw Almonds, and some other healthy snacks!
