A delicious french toast recipe developed for the Healthy Aperture blog.

Hi Friends!

Remember about six weeks ago when I posted this photo for these delightful little Overnight Baked French Toast Cups?!

These Overnight French Toast Cups can be whipped up the night before and then thrown in the oven when you wake up for a perfectly portioned breakfast!

And then I proceeded to bombard you with IG photos of me eating them at pretty much every meal for the next week or so?

But I couldn’t share the recipe because it was for a client?

Well, good news! The recipe is now live on the Healthy Aperture blog!

These Overnight French Toast Cups are the perfect weekend breakfast. Mix them up before you go to bed and bake them when you wake up to start your morning off right!

Let’s chat: French toast or pancakes?

Enjoy!

Congrats. I’m not surprised. I actually made them about a month ago as frozen snacks for Tim to bring to work. He loved them…I should make them again.

I have a wee one with egg allergies (among the many food allergies we deal with) and because of that we do not keep eggs in the house. We’ve got pancakes and waffles mastered (thanks to flax and chia seeds) but the eggless french toast is just not quite the same….the starring (and overpowering) star of the show is banana and its almost too much! We have 7 children so we have to make a TON of whatever we’re making and that means too many bananas to make it even seem like french toast….the search continues!
