Cooking With Greek Yogurt Review

Hi Friends!

Just popping in to give a quick shoutout to one of my favorite bloggers. If you’ve been reading a while, you know I regularly share posts from Cassie over at Back To Her Roots! Not only does she post delicious recipes and take amazing photographs, she also shares fun things like free, printable wellness calendars!

Cassie just published her very first cookbook – Cooking With Greek Yogurt:

She sent me a copy to check out and I LOVE IT! Cassie did an amazing job with the book. There are tons of creative recipes and ways to use Greek yogurt, plus she took all the photos herself! Such an accomplishment.

In the cookbook there is information on Greek yogurt itself and a handy substitutions chart that gives you lots of ways to use Greek yogurt while you’re cooking and baking. All of the recipes look fabulous but on my to-make list are:

  • Carrot Cake Overnight Oatmeal
  • Cream of Mushroom Soup
  • Gyro Nachos
  • Spicy Penne with Shrimp
  • Pepperoni Pizza Mac & Cheese
  • Chocolate Peanut Butter Pretzel Pie
  • No Ice Cream Maker Needed Cookie Dough Frozen Yogurt

She’s even letting me share the recipe for those delicious looking pancakes on the cover with you guys!

Pancakes

Here’s how you make them:

Ingredients

1 1/4 cups whole wheat flour
1/2 cup unsweetened applesauce
1 teaspoon baking powder
3 eggs
1/2 teaspoon ground cinnamon
1/4 cup maple syrup
1/4 teaspoon nutmeg
1/2 teaspoon vanilla extract
1/4 teaspoon salt
1/3 cup milk
1 cup plain Greek yogurt

Directions

1. Preheat a griddle or large nonstick skillet over medium-high heat. In a large mixing bowl, mix together the flour, baking powder, cinnamon, nutmeg, and salt. In a small mixing bowl, whisk together the yogurt, applesauce, eggs, syrup, vanilla, and milk. Pour the liquid ingredients into the dry and mix until just combined. Let batter rest for 10 minutes.

2. Spoon 1/2 cup of the batter at a time onto the preheated griddle or skillet. Cook for 3 to 4 minutes, or until the edges of the pancake look solid, and bubbles begin to rise to the surface. Flip pancake and cook for 2 to 3 more minutes on the other side. Repeat with remaining batter.

    YES! i replace sour cream with greek yogurt all the time, but would love to learn new recipes to actually bake with it!

    I have used Greek yogurt to cook and bake many many times! It works well as a sour cream sub, it is so rich and full of protein, too. And of course there is that whole eating with fruit thing!! 🙂 Actually I like to put a container of honey vanilla Greek yogurt (the good stuff! None of that no fat nonsense) over my pancakes on Sunday with banana and real, locally made, maple syrup! SUBLIME!

    I use greek yogurt in place of sour cream because I’m lactose intolerant. Sometimes I also cut some of the mayo out of a recipe and replace with greek yogurt for some extra protein.

    I love cooking with greek yogurt. Usually the plain, but if I want to amp up the flavor I will use vanilla. LOVE IT! Fage is my favorite.

      I’ve used it for cakes in place of sour cream but chicken salad sounds like a great idea, as does a lot of the recipes in the book!

    Very cool! I don’t use it in baking /cooking often, but I’ve done it a few times — yogurt-dill sauce on salmon, greek yogurt as a sub in baking on occasion, greek yogurt in guac, and greek yogurt in chocolate mousse!

    Those are all child’s play, though– raw things mostly. I’d be so interested to learn how to incorporate it into other dishes

    Yes!! I could not live without Greek yogurt! I use it in place of sour cream, to garnish savory dishes, and also use it in my baking of muffins and banana/pumpkin bread.

    I love using Greek yogurt when I’m baking! I often replace some of the oil/butter in a recipe with it. I also love making sauces out of Greek yogurt!

    We use it for a lot of things – but my guy doesn’t always know because god forbid I use something healthy. Use in pasta sauces, for sour cream, instead of buttermilk in baking, mix it with water and chia seeds to add volume to a yogurt bowl etc.

    Greek yogurt is a phenomenal substitute for some of the oil or butter in baked goods, adding a nice hit of protein and moisture! Also delicious on its own with fresh berries, some flax and cinnamon.

    Greek yogurt is a staple in our house – humans and dogs – always a weekly grocery store purchase! My favorite is adding it to oatmeal and pancakes, but I’d love to learn more uses!

    I love using it in cakes and have used it in place of sour cream in a few soup recipes (also on top of chili!) I have also been playing with the use of it in place of some of the mayo I use in a creamy pasta salad I make!

    I LOVE cooking with Greek Yogurt! I try swaps all the time – some successful, some not so much. But, I keep on doing it! Makes me feel good to help my family be healthier without giving up on taste. 🙂

    Yes!!! I LOVE to use Greek yogurt in cooking and baking – I usually sub it in for butter when baking and top tacos, burritos and soups with it instead of sour cream! My whole family uses it now too!:)

    I ALWAYS use greek yogurt when cooking or baking. I try to do the 50/50 rule with any fat ingredients (butter, oil, etc.) to make them a little healthier!

    I would love this cook book to learn more ways to use Greek Yogurt. I love paring it with honey and walnuts! It is also great to substitute for sour cream and to make dressings! All around is a great substitute packed with twice the protein of regular yogurt!

    I love eating and using Greek Yogurt, but I find that I use it mostly in smoothies or on its own since I’m never too sure how to incorporate it into recipes. Would LOVE to have this cookbook!

    I can’t get enough greek yogurt! I use it in place of sour cream in tacos and chili. I love using it for over night oats and smoothies. The possibilities are endless!

    I love using Greek yogurt as a substitute in my baking! Often, it makes things nice and moist without getting to heavy! People can’t even tell! I would love to try some of her other recipes with Greek yogurt, especially the oatmeal!

    I use greek yogurt in place of sour cream and buttermilk in all of my baking. I put it in my smoothies and eat it sweetened with applesauce and honey a lot . Love greek yogurt!

    I use greek yogurt a lot! I use plain greek yogurt as a sour cream sub, to make healthier ranch dip for veggies and I love to make greek yogurt pancakes with various flavors of greek yogurt! Yum!

    I don’t use Greek Yogurt unless we have it on hand. But I do use regular, organic yogurt in baking all of the time!

    My favorite thing about using Greek Yogurt in the kitchen is that you can go sweet or savory with it. I like using it in place of sour cream!

    My biggest complaint about Greek Yoghurt is that it doesn’t come in big enough containers!

    I’ve actually never had Greek yogurt in any form before! I can’t stand regular yogurt, but I know this stuff is so good for you that I would love to learn to cook with it. As long as I can’t taste it, lol.
