An easy dinner side dish – Balsamic Roasted Asparagus.

Hi Friends!

We’re talking vegetables again today! I hesitate to even call this a recipe- it’s that simple….but it is one of my family’s favorite side dishes. My mom taught me to make it…and now I make it all the time for Mr. Bean.

Really this is just another post encouraging you to eat more veggies 🙂

Here’s what you need:

Balsamic Roasted Asparagus

An easy side dish the whole family will love.

Ingredients

  • asparagus
  • olive oil
  • salt
  • pepper
  • balsamic vinegar

Instructions

  1. Cut the tough ends off the asparagus spears and lay them on a baking sheet.
  2. Drizzle with olive oil and sprinkle with salt and freshly ground pepper.
  3. Bake at 425 degrees for 10-15 minutes depending on thickness of spears.
  4. Drizzle with balsamic vinegar and serve!

    I love roasted asparagus! I like to sprinkle a little parmesan on top to add a little extra flavor, but I bet it’s great with balsamic too.

    Holy when everything I love collides! I’m going to make this STAT! I’m a huge lover of asparagus…well and like I said all the ingredients for this recipe. Asparagus for me is like the healthy food that doesn’t make me miserable. It is so versatile and can bulk up any meal. I like to add little bits of laughing cow cheese to mine and throw it in the oven for a bit! Thank you for sharing this yummy deliciousness!

    We have grilled or oven-roasted asparagus all the time, I love asparagus season! Hitting roasted veggies up with a little balsamic vinegar near the end of roasting is a very good thing, love the extra sweetness and flavor.

    I LOVE roasted asparagus with balsamic. Or carrots with balsamic. OR any roasted veggies with balsamic! So good!

    LOVE roasted asparagus, and if you can believe it, it never occurred to me to dress it with balsamic, which is of course perfect. Thank goodness for you!
