2017 Food Prep – Week 6

Hi friends!

Time for another round of food prep. I didn’t do a ton of prep last weekend because my parents were coming Wednesday. I made stuff for a taco bar during the Super Bowl and then a few other things for the first half of the week:

I made:

  • Roasted squash
  • Cheese stuffed meatballs – just basic meatballs with chunks of cut up string cheese in each one
  • Sweet Potatoes
  • Hummus topping
  • Roasted green beans – tossed in Italian dressing and roasted at 425 for 10 minutes or so
  • Homemade guac
  • Carrots for snacking
  • Popcorn Snack Mix

I didn’t do the best job snapping pics of our meals this week.

Dinners:

  • Sunday: Taco Bar for the Super Bowl
  • Monday: Meatballs & hummus + veggies + chips
  • Tuesday: Chicken Stirfry – chicken, carrots, peppers, onions, garlic, soy sauce, thai chili sauce and rice
  • Wednesday: My mom made Cajun Meatloaf and sweet potato fries
  • Thursday: Out to dinner – between a crying baby and a toddler both on my lap, I ate about 3 bites of my Coq au Vin
  • Friday: Chicken with mushroom sauce (similar to my Chicken Marsala)

A few things Squish ate:

  • meatballs with baked beans and sweet potato
  • deconstructed chicken stirfry without the rice, plus fruit and cottage cheese
  • turkey hummus rollups with mac and cheese and green beans
  • sheet pan salmon and green beans with italian dressing (recipe soon) + baked beans
  • For breakfast most days he ate pb toast, yogurt or cottage cheese and fruit
