Time for another round of food prep! Here’s what I prepped last weekend:
I made:
- Chicken Orzotto (chicken, peppers, onions and peas with some orzo cooked right in the skillet)
- Lactation cookies (recipe soon!)
- Lettuce
- Garlic shrimp (just sauteed with some garlic and paprika
- Meatballs (just baked them in the oven instead of crockpot)
- Leftover stuffing from Thanksgiving (thawed from the freezer)
- Instant Pot Shredded Chicken
- Sweet Potato Bites
- Roasted sweet potatoes
- Carrots
- Egg Wraps
- Greek Hummus Topping
For dinners we had:
Sunday: Chicken Orzotto
Monday: Meatball subs
Tuesday: Shrimp with greek salsa
Wednesday: BBQ shredded chicken with sweet potato fries
Thursday: Shrimp tacos and burgers
Lunches:
Turkey and egg wraps
Peanut butter sweet potato chicken from the instant pot (recipe soon)
Microwaved sweet potato topped with shredded chicken and avocado
Plus picked up fish tacos for dinner Saturday night
Squish eats:
Meatball + Grapes + Sweet Potato Bite
Turkey + Triscuits + Mixed Veggies + Apples
Cottage Cheese + Mixed Veggies + BBQ Chicken + Broccoli Bites
Roasted Sweet Potato + Clementine + Hummus + Egg Wrap
Coconut Oil Banana Muffin + Siggis Full Fall Plain Yogurt + Egg Wrap
Meatball + Hummus + Strawberries + Sweet Potato Bite
Raspberries + Cottage Cheese + Chicken + Marinara Sauce + Roasted Sweet Potatoes
Deconstructed Meatball Sub + Green Beans
Roasted Sweet Potatoes + Dino Bites + Chicken + Ketchup

When your son was younger did you struggle getting meals into him? Our son is 14 months and I find half the time he doesn’t want to eat, either because he is too busy exploring and running around or dislikes his options. Sometimes I chase after him as he plays to eat, other times he has an organic purée pouch and some yogurt which just doesn’t seem like a meal! But, whatever works sometimes!
Just wondering if you ever dealt with this cause he seems like a great eater now!
