Just checking in to share my food prep from last weekend. It wasn’t much because hubby left Sunday to go out of town and I knew my parents were coming into town on Tuesday evening. I focused mostly on breakfasts and snacks.
I made:
- GF Pumpkin Yogurt Bars
- GF Sweet Potato Brownies
- Hummus Topping
- Sweet Potato Protein Cookies
- Carrots
- Egg Wraps
- Oatmeal

Hey Lindsay! I know this might seem like a silly question, but on average, how many sweet potatoes do you buy each week, and how do you prepare them when doing food prep for your various recipes that have sweet potatoes as an ingredient? I love that you have so many different ways to incorporate them in your diet.
Also, I LOVE all your kid friendly recipes! They are wonderful, simple, creative, and I enjoy eating them as well.
