Hi Friends!
It’s been a few weeks since I joined the WIAW party so I thought I’d jump back in!
This is my first full week back in school and my class schedule is lighter than previous quarters, but I’m right in the middle of internship applications so things are a still a little stressful at times!
I don’t have anything particularly exciting to share with you but let’s get right to it shall we?
7:30 AM: I bet nobody can guess what I had for breakfast!!
{Kix- There are some blueberries buried in there!}
{Kashi w/ Almond Milk}
I’ve noticed that I don’t like the taste of almond milk with Kix, but when I eat it with the Kashi, the cinnamon covers the taste of the almond milk.
7:45: Coffe & Computer time- blog stuff followed by playing catchup with my email and working on internship applications
{French pressed coffee- black}
10:00am: Quick snack before heading to class
{Blueberry Scone-my all-time fav- recipe coming soon!}
12:45pm- pre-workout fuel in the car
{Peanut Butter on whole wheat bread & a banana}
Fun Fact: I’m eating crunchy peanut butter for the first time in my life!
1:25 pm: Workout time

2:30: Post-workout fuel
{Green Monster- ice, orange juice, plain greek yogurt, frozen berries, spinach}
{Homemade soft pretzel bites & a hard boiled egg}
5:15pm: Snack time!
{Handful of Roasted Chickpeas x like 20}
5:30- Another workout
{Yep, ran these some more…but it was dark…and hubby & dogs came along}
6:30pm- Snack while making dinner…Fun fact, I can’t cook without eating something
7:30- Dinner
{Mexican Biscuits & Salsa “Gravy”- recipe coming soon}
11:30pm- Bedtime snack
{Handful of dark chocolate chips}
So there ya have it! What’s the best thing you’ve eaten this week? Any fun new recipes to share??

Oh how I love Kix! I keep wanting to buy some, but I’ve stockpiled so much cereal that I’m banned from buying more. [I might make an exception though. Maybe.]
Can’t wait to read about the Mexican gravy. I made a vegan gravy for a seitan pot pie on Christmas and I’m pretty sure it was one of my favorite, comfort foods EVER. I will be intrigued to see if they are similar!

girl, just give in and buy yourself some kix! so good. don’t get too excited about the gravy. really not so much gravy as bulked up salsa. still delicious though. and yes, homemade pretzels…LOVE making them. recipes, on the recipe page under snacks!

yum! what a delicious day of eats! Cereal never satisfies me but I love it so much. I could eat a whole box in one sitting, especially if it is Kashi brand!
Those roasted chickpeas look really good and like a prefect healthy snack. What did you season them with?
yummmm love cereal! i’m gonna do a post next week about how i roast my chickpeas but usually i season with cayenne pepper, paprika and sometimes a little garlic powder or curry powder

Best thing I ate this week……Ribolita soup from Lombardino’s Cookbook recipe testing. Followed closely by Shakeology because I am still obsessed with it.

Roasted chickpeas!??! I never thought to do that but I just bought a can and will have to try it! Great pictures, I like crunchy peanut butter too, I think its better than creamy. Happy hump day

Congrats on running all of those stairs! That is awesome. Running stairs is actually one of my favorite workouts- no idea why! I’ve never done quite that many though! You’re a rockstar.

Wow. Your food looks really delicious! I can’t wait for that blueberry scone recipe, I LOVE pb sandwiches, I’ve always wanted to make my own green monster but I always forget to buy spinach, and dark chocolate is the BOMB! Okay, that’s all I have to say. lol
I am excited for the dinner recipe, looks great lady! And seriously, amazing job on those stairs! What a great workout, stairs kick my ass! Which I suppose is the point

Is that Warm Cinnamon Oat Kashi new? I’ve never seen it but it sounds so good!
I think the best thing I’ve eaten this week is the new vanilla chocolate chunk Chobani topped with Cocoa Goodness Love.

Your food looks so delicious! I love the rainbowness of that smoothie; I must try that combination. Ooooh I have never gotten into smooth peanut butter; I ate it once unknowingly and cried, hahaha. I was a child, but still. It was traumatic. I made a peppermint, chocolate, spinach, grape, yoghurt smoothie which was probably the best thing this week. Happy WIAW =)
