WIAW: Sigh of Relief

Hi Friends!

It’s Wednesday and you know what that means :) It’s the perfect day to update you on what I’ve been eating lately!

Today I’m breathing a huge sigh of relief because yesterday I submitted all of my internship applications!!! Today was the deadline…so now we wait. Match day is April 1st, so if all of you could keep your fingers crossed for me- for about the next 6 weeks, that’d be great! I need all the help I can get :) SO NERVOUS…but so glad to have them done and submitted. Feels like a huge weight has been lifted off my shoulders.

Anyways, let’s get to the eats:

{His & Hers Weekend Breakfast}

{Healthy Breakfast Bars– which I’ve been eating for my morning snack}
{Fresh Fruit- apples, pears & oranges this week}
{My new fav oatmeal bowl- plain oatmeal, peach chobani & a pear}

{MorningStar Spicy Black Bean Burgers & Alexia Sweet Potato Fries}
{Homemade Fish Tacos- I used the leftover fish to make chowder}
{Homemade Lentil Pot Pies– chock full of veggies}
{Grilled Cheese- it’s just necessary some days}

{I’ve also been sharing some of my snacks}

{Plus my friends at Chobani sent me the new flavors to try!!!}

{I used the apple cinnamon in my Oatmeal Pancakes}
{and topped them with my new fav- in LOVE with blood orange. SO GOOD}
{and yes this was my valentine’s day dinner}
{hubby ate a microwave burrito- we’re classy folks}

{As usual, I never forget about dessert- Lightened Up Caramel Apples}

So there you have it!!! Also per usual, lots of hummus and carrot sticks were consumed. And i’m getting really good at putting a lot of spinach in our post workout smoothies!

Oh and in case you’re in need of a laugh today, these are the kinds of text messages my friends have to deal with. I sent this to Maddy the other day :) Luckily she puts up with me, and sends me cute baby photos in return!

What’s the best thing you ate this week?!

Today’s Workout: Hubby got me a med ball for valentine’s day so I put together a workout to try it out!

  17. I enjoyed the text and support wearing anything you want to class (I rocked sweats with UGGs more days then I care to remember)…just watch out for U Weekly photographers! I know 2 girls who got their pictures in there for wearing shorts with boots! Rumor is they like to hide out front of Campbell and catch people going to EEOB 232 at 7:18 am.

  21. Best thing I ate was all the variety of foods at a potluck monday night. Its so nice not to have to cook once in a while even if it isnt as healthy as I’d like. Someone ease wins out!

  23. Yuuummyyy! You had some nomlicious eats this past week! The most favorite thing I ate this past week was probably the lemon grilled tofu and med. chopped salad we made. Or the macarons I learned to make in a class! …and sushi. Ohhh sushi is delicious.

  28. It must feel good to have all your apps in! I have mine waiting to hear back from my school to see if the internship I want applies for funding. Stress abounds!
    CHO has a blood orange flavour? I’m usually not a flavoured yogurt person but that sounds good!

  31. I think I would cry tears of joy if Chobani sent me a case of new flavors to try – LOL! Love them all, especially apple! Must try it in my pancakes next time! I never want to part with them, so I usually go with plain! I’m weird like that 😉 I am totally loving vanilla sparkling water lately, with a strawberry floating in it. Tastes like luxury just a wee bit 😉

    Lately, I have been loving kale and quinoa. I guess the best meal I ate all week was that kale, quinoa, and tofu meal that I made with that heavenly almond sauce!

  41. Fun post! Did you use Instagram for your photos? I just downloaded an app to make collages with the photos but haven’t used it much yet.
    I am in love with blood oranges too! I made a sorbet with them that was so delicious!
    Totally agree that getting an Iphone was life changing! I am so in love with it!

    • i use instagram for a lot of my photos and then camera+ for a lot of them. and i make a lot of my collages in picasa! blood orange sorbet sounds amazing!
