Thanks so much for all your sweet words on yesterday’s post. Hopefully I inspired some of you to take the time to say thank you! Today I’m back with lots of food to share. It’s WIAW and I have lots to catch you up on!
Recently I’ve been lucky enough to get quite a few treats in the mail! I think we all know how I feel about getting mail, especially foodie mail! First, I got a love drop from my favorite granola company. I actually get to meet the Love Grown Foods gang this weekend when I head out to Colorado for the Blend Retreat! I’m so excited!!! They sent me some yummy granola and a sweet orange journal that I’ve been using for my to-do lists!
Don’t you guys think Marcus could be their new mascot? He LOVES to spread the love
Then, I got a belated birthday treat from Rachel. Is she amazing or what?!
Blog friends are the best!
And finally, I got some new bars to try. Kelloggs just came out with these Special K granola bars and I was sent some to try!
I try not to eat these store-bought bars too often, but these have actual come in quite handy this quarter. They’re just over 100 calories and have 4 g of fiber and 4 g of protein. Since I have class from 3-5pm two days a week, these have been really great for tiding me over in the late afternoon so I’m not totally famished when I get home to make dinner. I’ve tried both flavors and just can’t decide which one I like better
Please excuse my totally random assortment of snacks
In the at-home world, we’ve had some pretty good meals as well. Breakfasts and lunches have been pretty standard. Cereal, pb & j toast with fruit and oatmeal bowls.
But we have had some pretty stellar dinners!
1. Pineapple & Black Bean Fried Rice w/ Shrimp
2. Earth Fare Spicy Bean Burgers w/ Sweet Potatoes
3. Eggs & Toast w/ Avocado
4. Black Bean & Roasted Sweet Potato Tacos
5. Avocado Dipped Sweet Potato Fries- recipe Monday
6. This again
7. Pineapple & Black Bean Enchiladas
8. Fresh Mozz & Tomato Pizza
Clearly I bought a pineapple and put it in everything. Hubby liked it in the fried rice, but not so much in the enchiladas. I also hated the enchilada sauce I bought so that dish was kind of a fail. Oh well
And finally, I’ll leave you with this-
We went out to dinner a couple weeks ago and ordered bruschetta. This is what they served us:
I don’t know about all of you…but in my book that is cheesy bread with tomato sauce. Not bruschetta. Just sayin….
And finally, just in case any of you are Arrested Development fans…Buster was in the coffee shop with me last week
