Weekly Eats 18

Hi Friends!

Time for a quick Weekly Eats post icon smile Weekly Eats 18 Here’s what I’ve been eating lately:

1. I had a conference and I’m never sure what the food situation will be so I brought my own fruits and veggies. However, I ended up being pretty impressed with the veggie pita they gave us.
2. Giant mushroom, spinach and black bean omlet a la hubby
3. Cooked half my normal amount of oatmeal with strawberries, then added some leftover quinoa and topped with almonds and chocolate chips. It was a shortcut version of my Berry Breakfast Quinoa.
4. Salmon, crab cakes (store bought-they were on sale so we treated ourselves!) plus Vegetarian Stuffing. I used homemade black bean burgers instead of morning star breakfast sausage and it turned out great!

1. Leftover stuffing and Black Bean Meatless Meatballs.
2. Shrimp and black bean quesadilla with peppers and onions.
3. Crossfit cookout. I brought Greek Black Bean Burgers for us, plus guac & chips, carrots & hummus & fruit.
4. French toast topped with greek yogurt and berries a la hubby.

1, 2 & 4. Cheesy Mexican Quinoa on repeat this week.
3. Stuffed peppers- stuffed with shrimp, lentils, quinoa, leeks, mushrooms and Curried Sweet Potato Soup

1. PB & Banana Toast
2. Trail mix- roasted chickpeas, almonds, trader joes dark chocolate covered powerberries, pumpkin seeds
3. Self explanatory
4. Fish salad and sweet potato soup with black beans

  1. The best thing I’ve eaten so far wasn’t even a crazy recipe. It was having the most perfectly ripe avocado with last night’s dinner. It had the perfect texture and taste–yum!!

    The best thing I ate this week was the lentil dal I made on Monday. It was my first time ever having dal and I loved it!

  3. I have to say my birthday brownie sundae was my favorite from the week. I did have a pretty awesome baked peanutty tofu though thanks to hubby’s cooking skills.

  6. Black beans in sweet potato soup is genius!!!!
    Best thing I ate this week was a homemade reuben on St. Paddy’s Day. It was delicious!

  8. Salmon and avocado! Two of my favorite things. I am going to branch out, however, and try those black bean meatballs or burgers as we’re trying to eat a little less meat. Great pics!

  9. I love all your Mexican-ish eats! The best thing I’ve eaten is the Mexican version of my Spaghetti Squash Pie. We need to get togehter for a fiesta. :)

    Veggie pizza has been my go to recently. Last night I made a vegan pizza with camelized onions, mushrooms, fresh spinach, crumbled tofu and black beans with a sprinkle of garlic salt and basil!!! SOOO good!!!

  11. Mmm, lots of good food!! We made a yummy curry last night, and fish with charmoula sauce on Monday. Birthday treats this weekend for the hubs will be fun!

  12. i’ve eaten two really good chopped salads this week when we’ve been out to restaurants. one had currants in it and the other had blue cheese. both were just the perfect touches!

  17. The French toast does look tasty! The best thing I ate was probably the potato and cauliflower soup I made last night. It was delicious.

  19. Gah, so many to choose from. My friend brought us a bunch of chicken, black beans, tomatoes and tortillas so I have been making some soft tacos that have really hit the spot. Also, we had some really good stew and irish soda bread over the weekend for a certain holiday… and I finally got my fill of frozen yogurt. I also had some french toast for the first time in forever this week and it was delicious. I think I just really like food :)

  21. Best thing I ate this week? A Cheeseburger Salad with Big Mac dressing. Sounds bad for you, but it really isn’t! I sauteed hamburger and in onions and garlic and made the dressing myself. It was a great recipe I found.

  25. I have never thought of roasting chickpeas, they look really yummy! The Best thing I ate this week was probably soybean latte flavoured fro-yo at tutti frutti! Delish!! Hershey’s chocolates are always good in moderation :)
