Welcome to the first edition of Sunday Food Prep Inspiration!
The idea behind this series is simple. Lately i’ve been pretty good about sharing my Sunday food prep photos with you guys. That’s all well and good, but what’s more exciting is that I’ve hearing from you guys that a lot of you either already do food prep every weekend OR that you’ve been inspired to start!
That makes me happy
Food prep photos are great inspiration for meal ideas so I thought it would be fun to start featuring you guys and the food you’re prepping! Even though I just announced this series on Monday, I still have a few awesome food prep pics to show you! Ready?!
We’ll start with mine. Here’s what I prepped last weekend:
- Quinoa Breakfast Bars
- Tuna Salad- We combine a couple cans of tuna, hummus, hb eggs, salsa, avocado, red pepper, green onions and lots of curry powder.
- Veggie & Bean soup- this was a bit of a fail. It had lots of different kinds of beans and they all cooked different amounts so I wasn’t crazy about it.
- Wheatberries
- Carrots
- HB Eggs
- Frozen Greek Black Bean Burgers- I made these a few weeks ago and froze some, so I was able to just pull them out of the freezer for us to eat throughout the week! Yes I know I still haven’t posted the recipe yet…but it’s coming, I promise!
And, since I have a LOT of internship stuff I have to get done today, I did my food prep for this weekend on Saturday night! Here’s what I made for this week:
- Quinoa Breakfast Bars
- Tuna Quinoa Cakes
- Fish Chowder- Saute some veggies (I used a potato, a sweet potato, 2 leeks, some carrots and a red pepper), cover the veggies with vegetable broth and simmer until the potatoes are almost tender. Meanwhile, cook the fish (I used cod) and flake into chunks. Add the fish to the pot, along with 2.5 cups skim milk and some Old Bay seasoning. Let it simmer until the potatoes are cooked and enjoy.
- Spaghetti Squash- check out 3 ways to cook spaghetti squash
- Roasted Chickpeas
- Trailmix
- Quinoa
- Vegetable Broth
- Black Beans
- HB Eggs
- Carrots

I commute three hours daily during the week, so I have learned to prep all my food for the week on Sunday. I like to make things that are easy to grab and go or heat up and eat. My husband and I both have crazy schedules so it’s easier this way. During the week, all we have to do is grab our breakfast & lunch for work and when we get home at night there’s something to heat up for dinner. It’s taken us awhile to get to this point, but now that we are life is SO much easier!
This week I prepped my Easy Oatmeal Bake and hard boiled eggs for breakfast. For lunch, I made some chicken quinoa soup and prepped some smoked salmon caesar salads in mason jars. (they stay fresh this way and don’t get soggy if you put the dressing on the bottom) For dinner, I made some spinach and feta stuffed chicken breasts, whole wheat lemon orzo and an Italian spiced pork tenderloin with roasted sweet potatoes and onions. It’s all been delicious so far! (I took this photo on Monday night, which explains the missing food)

I am a college student who is currently student teaching all day and then working at night (I actually teach Les Mills fitness classes at my school-double teaching!) SO, I do all my food prep on Sundays too. Here’s what I’ve been up to..
- Hummus chicken and roasted veggies-used in spinach wraps or mixed with quinoa
- Lentil sloppy joes-used on a bun or mixed with polenta or brown rice
- Roasted spaghetti squash-topped with chicken and pesto for dinners…layered with black beans, taco seasoning, broccoli slaw, avocado, and salsa for lunches!
- Plus some packed lunches!

I’ve washed & cut fruit and veggies. Beans, turkey taco meat, homemade healthy chicken salad, and red beans & rice all made for easy lunches/dinners.

Wow, this is seriously so impressive. It also makes me want to be less lazy on Sunday’s so I can actually prep throughout the week…I also know I regret that halfway through the week too!

Awesome work ladies!! I haven’t done much prep work lately since my schedule has quite made it necessary (yet!) but I always feel so accomplished when I make some hard boiled eggs for the week.

I typically prep produce on the weekends but really should start prepping some starches like quinoa and rice, as well as making a few freezable meals that we can pull-out on late nights… Great ideas!
yep! i love having a grain on hand to add to whatever i’m making without having to cook it during the week.

I love this new series! It’s really inspiring and gives me ideas of what I can prep. I can be horrible at prepping for the week and it ends up so last minute… which irritates me b/c of my minimal time like you(I’m also interning somewhere for my Masters in Social Work & I work part time

Sunday is always my food prep day too – I grill up eafood, chicken, and burgers. I make individual baked oatmeals and whatever carb I am in the mood for. I leave the carb “unflavored” so I can add as I go throught the week so I don’t get bored. So if I mkae quinoa, I just cook it in water without seasoning. That way I can add cinnamon if I want it for breakfast, Mexican spices if I’m craving that for lunch, herbs if I am in the mood for it… etc.
i agree…plain is best when prepping ahead. you never know what your mood will be!
awesome!! i love doing a lot of my cooking on Sunday! Actually yesterday I did a big crockpot of roast, potatoes and carrots. Then I cooked up some quinoa, copped my broccoli and cauliflower for the week…
I keep saying I’m going to meal plan but I haven’t…I just have all the ingredients on hand for a good meal any day of the week. But I’m sure more planning would be good.

i don’t really meal plan either. just like you, having the healthy ingredients on hand is enough to make it easy for me to throw dinner together.

You’re making this TOO easy for us. I have got to get to the grocery store tomorrow to do this! Because I have a long weekend, tomorrow will be my Sunday. Thank you so much for all of this sharing. I’m so silly about worrying about how long food will stay good after cooked, but it seems that I shouldn’t worry and that food lasts for a long time. Thanks so much!

most leftovers are totally fine in the fridge for 3-4 days. i keep some stuff longer, depending on what it is…but pretty much everything i prep on the weekend is gone by like thursday.
I forgot to take a picture while I was in the kitchen but I did hard boil eggs, made sweet potato wedges, have chicken breasts ready to put in the crock pot tomorrow morning, baked an acorn squash and cut up broccoli, bell peppers, carrots and cauliflower. I love this idea of Sunday food prep, hopefully it will help me eat more balanced meals throughout my crazy work/class schedule.

This makes me want to assure I food prep every week as I do sometimes but not always yet! It does make a world of difference even just to do the small things.

I just discovered your blog and I am in love with it! It’s so helpful. I am cutting out carbs and sugar for health reasons and have discovered a lot of great ideas here.
I am definitely wanting to do food prep!! I am just a little worried about how long some of it is good for…lke Sphaghetti Squash. No idea how long it lasts after cooked. I am also worried about prepping fruits and veggies because a lot of them turn after chopping into them. Any ideas on this?
yay! glad you found me! most leftover are fine in the fridge for 3-4 days…so i’ve figured out the amount of food i can make for us so that all of the stuff i make on sunday is pretty much gone by Thursday. when i chop carrots, i store them in a tupperware with some water at the bottom. then i change the water every day and run water over all the carrots to moisten them. for fruit, like apples, you can add lemon juice to help them last longer before turning brown. for salads, if you rip lettuce with your hands instead of cutting it with a knife it won’t get brown as quickly!
