10 Minute Sweet Potato and Apple Saute

A quick, easy topping to jazz up leftover pork or chicken.

Ingredients

  • 1 Tablespoon Pompeian OlivExtra California Select oil
  • 1/2 cup leeks, thinly sliced
  • 2 cloves garlic, minced
  • 1 cup sweet potato, finely diced
  • 1 medium apple, diced
  • 1 cup apple cider
  • 1 Tablespoon white wine vinegar
  • 1/2 teaspoon paprkia

Instructions

  1. Heat the oil in a saute pan over high heat.
  2. Add the leeks, garlic, sweet potato and apple and saute for 5 minutes.
  3. Reduce heat to medium and add remaining ingredients.
  4. Saute another 5 minutes or until sweet potatoes reach desired tenderness.
  5. Serve over sliced pork or chicken.
