In a food processor, combine rolled oats, hemp, flax and pumpkin seeds. Process until finely ground.
In a microwave-safe bowl, combine honey, peanut butter and vanilla and microwave 30-45 seconds. Mix well.
Pour honey mixture into food processor and process until well combined.
Add water (or milk) by the Tablespoon and pulse until wet enough for the mixture to stick together when you squeeze it in your hands.
Add sprinkles and/or chocolate chips if using and pulse a couple times to mix in.
Roll into balls and store in the fridge.
If you don’t want the chocolate chips to melt, you’ll need to let the mixture sit for a few minutes after adding the honey mixture since it will be warm. Otherwise, add them right away and they’ll get melty and add a nice chocolate goodness throughout the balls.
