These high protein turkey meatballs are extra moist thanks to the cottage cheese and zucchini. Perfect for meal prep or to pair with your favorite pasta.

Ingredients

  • 1 pound ground turkey (I prefer 93/7)
  • 1/2 cup cottage cheese
  • 1/2 cup shredded zucchini (squeeze lightly to remove a little moisture)
  • 1 egg
  • 2 cloves garlic
  • 1/4 cup almond meal
  • 1/4 cup finely grated parmesan cheese
  • 1 tsp dried parsley
  • 1/2 tsp salt

Instructions

  1. In a mini food processor, combine cottage cheese, zucchini and egg and blend until smooth. 
  2. Add ground turkey to a large bowl with blended cottage cheese mixture.
  3. Add remaining ingredients and stir until just mixed.
  4. Use an ice cream scoop to scoop meat mixture onto a baking sheet lined with parchment paper. 
  5. Use your hands to form into well shaped balls if you would like.
  6. Bake at 400 degrees for 15-16 minutes, flipping once after 9 minutes. Make sure internal temp reaches 165 degrees F.
