A tasty oatmeal cookie that’s lower in sugar and full of healthy add-ins!

Ingredients

  • 4 Tablespoons unsalted butter *
  • 1/2 cup peanut butter
  • 1/4 cup brown sugar, loosely packed
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 3/4 cup white whole wheat flour
  • 11/2 cups rolled oats
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 Tablespoons chia seeds
  • 1/3 cup pumpkin seeds
  • 1/3 cup dark chocolate chips

Instructions

  1. Preheat oven to 375 degrees.
  2. In a large bowl, melt the butter and peanut butter. Stir well to combine.
  3. Add the sugar, vanilla and eggs and mix well.
  4. Add remaining ingredients and stir until just mixed.
  5. Drop onto greased cookie sheet and flatten with fork (if desired).
  6. Bake for 9-10 minutes.
