This easy chicken salad requires just a few simple ingredients. It’s packed with flavor and high in protein, making it perfect for lunch or a quick snack!

Ingredients

  • 1 (12.5oz can) 
  • 12 Tbsp mayonnaise (depends on preference)
  • 1 tsp dried ground mustard
  • 1 tsp paprika
  • Optional mix-ins – chopped nuts/seeds, chopped apples, sliced grapes, dried cranberries, chopped celery or cucumbers
  • Optional spices – dill curry powder, salt, ranch seasoning, everything but the bagel seasoning, cayenne pepper
  • 1/4 cup sliced green onions

Instructions

  1. Drain the canned chicken and place in a bowl and shred with a fork.
  2. Add mayonnaise. If you don’t know how much you want to use, start with 1 Tbsp, mix and add more if not creamy enough – (I use 2 Tbsp)
  3. Add spices and green onions  (including any optional spices and mix-ins you’re using) and mix well. Taste and adjust seasonings
  4. Serve as desired – on sandwiches/sliders/wraps, as a dip, with crackers, stuffed in veggies etc.
  5. Store in the fridge.

Notes

Feel free to sub plain Greek yogurt, hummus or mashed avocado for mayo. I only use avocado if it will all be eaten right away or the avocado will turn brown.
