Ingredients

Scale
  • 1 cup ripe bananas (approx 3 medium-large)
  • 1/2 cup peanut butter
  • 24 Tbsp maple syrup
  • 1 egg
  • 1 tsp vanilla
  • 2 cups rolled oats
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • optional mix-ins: chocolate chips, hemp seeds, ground flax

Instructions

  1. Mash bananas in a bowl.
  2. Add peanut butter, maple syrup and egg and mix well.
  3. Stir in oats, cinnamon, baking powder and chocolate chips and mix until combined.
  4. Pour into a 8×8 baking pan lined with parchment paper.
  5. Bake at 350 for 20-22 minutes.
  6. Let cool, cut and serve.

Notes

This recipe is very forgiving. A little extra banana or oats won’t hurt. You can leave out the maple syrup or chocolate chips if you want.

Feel free to bake in a 9×9 pan if desired. Bars will just be a bit thinner.
