These Blueberry Oat Breakfast Bars are a quick and easy breakfast or snack option. They’re easy to make and freeze well!
2 eggs
3/4 cup plain Greek yogurt
1/4 cup oil (I use avocado oil)
1/4 cup applesauce
1/3 sugar
1 tsp vanilla extract
1 cup quick oats
1 cup flour
1 tsp baking powder
1/2 tsp baking soda
2 tsp cinnamon
1/4 tsp salt
1/3 cup ground flax
1 cup blueberries (fresh or frozen)
Preheat oven to 350 degrees F.
Combine eggs, yogurt, oil, applesauce, sugar and vanilla in a large bowl.
Add remaining ingredients except blueberries and stir until just combined.
Gently mix in blueberries.
Bake in a 9×9 pan lined with parchment paper at 350 degrees F for 20-25 min or until just set. Don’t overbake!
