These Chicken Bacon Avocado Breakfast Tacos are an easy way to transform leftover chicken from dinner into a healthy new morning meal!

1 cup diced cooked chicken
2 strips bacon, chopped
1/2 cup red bell pepper, diced
4 eggs
1 small avocado, diced
hot sauce, cheese, salsa etc for optional toppings
tortillas – homemade or storebought
In a large saute pan, cook bacon and peppers. Add eggs and chicken and cook until chicken is warm and eggs are scrambled.
Stir in avocados.
Scoop into tortillas and top as desired!
