First of all, I was to thank each and every one of you who read yesterday’s post and commented, emailed, texted, tweeted, messaged, prayed or sent good vibes my way. I was blown away by all the love and support I received all day long and literally moved to tears at least 20 times by people offering support and sharing their own stories. Everyone from family, to high school classmates I haven’t seen in 10 years, to my best blog friends, to total strangers who had never read my blog until yesterday. You guys are the best. I appreciate every single message and thought from the bottom of my heart.
Things are back to normal today so let’s take a look at what I’ve been eating for the past couple of weeks.
Eggs & Oatmeal
French Toast with Wild Blueberries

Shrimp Cakes – developed for a client. Will share the recipe when I can
Mac & Cheese with chicken sausage (Kinda like my Lentil Veggie Mac & Cheese)
Salmon Sliders with guac
Crockpot Salsa Chicken- another recipe developed for a client
Mexican hodge podge-
Tuna Casserole- No real recipe. 2 cans tuna, half can cream of mushroom soup, handful of shredded cheese, about 1/4 cup milk, 2-3 cups frozen veggies, some cayenne pepper and paprika and some noodles. Mix and bake at 375 for 30 min or so. I also threw some beans in there.
Pizza time- made totally from scratch (check out this post for tips: 5 Steps To A Healthier Pizza)
Quesadilla topped with a fried egg- the best
Pot pies! Similar to my lentil veggie pot pies
Coffee rubbed steak- another recipe for a client but hubby loves it. Will share when I can!
Chicken & Black Bean Wrap in a homemade whole wheat tortilla
Snap peas- current favorite snack
Chicken fried rice. Except with farro.
