I didn’t get around to posting my prep last weekend so you’re getting a double dose today!
Two weekends ago I made:
- Crockpot Rotisserie Chicken
- Pulled Pork- recipe coming soon
- Quinoa Breakfast Bars
- Sweet Potato Bites
- HB Eggs
- Veggies
- Sweet and Spicy Shrimp – recipe coming soon
- Tuna Salad
I also made some snacks which you can see in my 25 Healthy After-Work Snack Ideas post.
Last weekend it was warm enough to grill so we made:
- Grilled salmon for me
- Sliders for hubby
- Steak for hubby
- Veggies
- Spinach cubes to freeze for smoothies- just blend up spinach in a high powered blender…add a little bit of water if needed.

Everything looks delicious! Planning ahead makes the week SO much easier. I have to get my meal prep done today – veggies, sweet potatoes, grilled chicken and some Paleo bread. Have a great Sunday!
Those spinach cubes are a smart idea! I’ll keep that in mind next time I have too much greens that’s about to go bad
I seriously had no clue that you could make bread in a dutch oven! I’ll have to try that out because it seems pretty simple. For some reason, baking bread intimidates me 😉
