Time for more Sunday Food Prep!
Here’s what I made last week:
- Green beans
- Chicken, veggie & orzo soup
- Sweet Potato Bites
- Quinoa Breakfast Bars
And here’s what some of you have been up to:
grilled Elk and chicken,
spring mix with kale,
veggies (bell peppers, cucumbers, jicima),
pumpkin protein bars,
pumpkin pie energy balls,
mini turkey meatloaf,
Chicken tacos, egg muffins, stir fry, ribs, chicken drumsticks, chicken salad w advacado, pumpkin fluff and meatballs

I cut up broccoli and a few other veggies for quick and easy snacks during the week (#1), grilled up some Taco Lime Chicken to throw on salads and on tacos throughout the week (#2), prepped taco meat and sliced zucchini so I can make zucchini nachos (#3), hard-boiled eggs (my favorite snack!!!) for a quick and easy form of protein (#4), and made Taco Chili in the crockpot since we’re having some rainy weather this week (#5).

What I prepped on Sunday:
1. Quinoa Breakfast Power Bars
2. Chicken Breasts
3. Nutzzo Protein Balls
4. Quinoa in the pressure cooker
5. Roasted Kabocha squash
6. Roasted broccoli
7. Defrosting Shrimp
8. Sliced turkey breast for weekday sandwhiches and turkey bolognese
9. Quinoa for bars and weekly lunches
10. Defrosting whole chicken for chicken tacos
Marianne at Living With Purpose –
A recipe that I make time and time again for weekday snacks is my gluten free carrot cake muffins. I make a batch, freeze them, and take one out daily to pack in my lunch.
