Time for more food prep!
Since we were out of town last weekend, I didn’t do any prep…we did fire up the grill when we got home and cook some chicken, steak and salmon after we went grocery shopping on Wednesday…so that helped get us through the rest of the week. However, I’m excited to get back on track and do a full round of food prep today!
Meanwhile, here’s what some of you guys have been up to in the food prep department:

1: lentils, 2: brown jasmine rice, 3: hubby’s raw oatmeal cookies, 4: salmon patties, 5: sweet potatoes, and 6: roasted veggies

- My lunches for the week: Sautéed chick peas with garlic, roasted veggies (summer squash, broccoli, mushrooms, green beans), brown rice. (which ill top with pre-bagged spinach/tomato/1/4 avocado slice)
- OIAJ- For easy packable breakfasts! Pictured version is egg white-chia oats layered with strawberries, cinnamon and banana’s.
- Peanut Butter Banana bites for quick frozen snacks for the week!
- Pre chopped and bagged veggies, cheese, and spinach to use for snacks and salad mixins !
- Turkey Burgers for dinners during the week!
- Pre-portioned chopped veggies for egg white scrambles for breakfast!
Not Pictured: Lots of chopped fruit to top cottage cheese/oatmeal/Greek yogurt, chopped and pre portioned cheese for snacks, turkey meatballs for dinners, BIG batch of brown rice to use for dinner side dishes, pre-bagged walnuts and slivered almonds, and the husbands sweet treat of a batch of brownies!

Made tabouli from parsley delivered from a local organics market. Also scored big with Bobs Red Mill so made gluten free brownies. Chopped up kale, avocado, carrots, & mango for smoothies. cleaned all of our fruit for snacks too!

I’ve been prepping for my lunches lately – makes for an easy week, longer lunch break time, and hey it’s not bad on my wallet either! This week I made a big green mushroom spinach sauté with a big batch of brown rice. I also cooked up some roasted sweet potato dots in coconut oil. And last but not least – I made a veggie filled quinoa full of bell peppers, celery, chickpeas, spinach leaves, & tomatoes. All of my meals lately have been vegan, prepping is keyfor my busy schedule, helps to know I always have stuff on hand just in case.

I put aside a couple hours to prep food for my breakfast, lunches and weekday snacks. With a busy work week and training for a marathon, mySunday food prep makes the week go smoothly and takes away the temptation to go out for lunch. My prep includes hard boiled eggs, cut up and individually portioned raw veggies (broccoli, cucumber, carrots), homemade veggie dip, portioned plain Greek yogurt with frozen organic strawberries and an egg bake.
