Hi Friends!
As you know, I did a little about me post a couple weeks ago after being tagged by a few people and I had so much fun doing it that I asked you guys if you had any more questions for me. Since then, I’ve also been tagged a few more times so I put everything together into one GIANT q & a post. I answered all the general questions people submitted and then some of the questions from the people that tagged me (Brittany, Talia, Lauren, Sherri)
So here we go!
I would love to know what your favorite foods were growing up and how they changed over time.
I thought it was funny that this was the very first question I go because I used to be world’s pickiest eater. I’m pretty sure that for several years I survived on nothing but Cheerios and Mac & Cheese.
In high school I ate chicken fingers or pizza for lunch with a cookie ice cream sandwich pretty much every single day- and I thought it didn’t matter because I played so many sports. I hated meatloaf and mashed potatoes and lived for carbs. In college, I survived on cereal, bagels, frozen yogurt and easy mac for three years. I started doing some cooking and eating a bit healthier during my last semester because I finally lived in an apartment but it wasn’t until I graduated that I really started caring about what I ate.
When hubby (then boyfriend) and I moved into our first apartment I got really into meal planning. I made menus, I started trying new foods and I cooked all the time. This continued to develop over the years and is eventually why I started The Lean Green Bean. A few years ago, I never would have guessed my diet would be how it is now. I haven’t eaten meat in 6 months, I love hummus, I eat raw vegetables for a snack, I eat more beans than I ever thought I would. I’m much more willing to try new things than I was when I was younger.
But I still eat cereal every day for breakfast. I still LOVE carbs and frozen yogurt. I still don’t really like chocolate cake and mashed potatoes still make me gag!
Do you want to have kids? How many?
I love kids and definitely want to have some of my own. I’ve always wanted two. I was always glad I wasn’t an only child….but I think three might be pushing my limits! Plus then you have to drive a minivan!

I want to know what your favorite kind of exercise is?
Right now, I’d have to say any kind of intervals/circuit. If I’m running, I almost HAVE to be doing a HIIT workout. I can’t stand just plain old running for more than a few minutes. I get so bored. But changing the speed every minute or two makes the workout fly by. If I’m not on the treadmill, I love tabata workouts or just plain old circuit workouts. I like just being able to set the time for x amount of time and go until it beeps, not having to worry about counting anything. Oh, and I love lifting weights!
What made you start foodie pen pals? Such an awesome idea!
It popped into my head after I got a package of goodies from a company to try. I LOVE getting things in the mail, especially packages. I always have. I thought it would be awesome to get to try some other foods that some of my blogger friends love!
How long do leftovers last?
In our house? Not long. We usually eat whatever we make for dinner for lunch the next day. But in general, I try not to keep things longer than 4 days or so. It depends what kind of food it is and there are tons of charts out there that tell you how long things are good for!
I would love to know what your hopes and dreams are with regard to becoming a registered dietitian.
The whole reason I went back to school in the first place is because after I graduated, I worked at a preschool and was shocked by how many overweight kids I had. I couldn’t believe how many kids chose sitting in front of the computer at play time instead of running around in the playroom and on the playground. And I was in awe of how many of them hadn’t tried more than a few fruits or vegetables. I love working with kids and I’d love to do something in the area of child nutrition.
My first bachelor’s degree is in Psychology. I used to think I wanted to be a social worker. I love community organizations and non-profits so I also wouldn’t mind going that direction. All I know for sure is that working in a hospital wouldn’t be my first choice.
I love putting exercise and nutrition together so I’ve also considered getting my personal training certificate and putting them the two together. We’ll see!
Have you ever struggled with weight issues or exercise in the past? Or did you grow up fairly active and always ate well?
I struggled with my weight off and on in middle school and high school and went through some periods of disordered eating. I was extremely active growing up but I did not always eat well. When I studied abroad, I gained a lot of weight by eating/drinking nothing but empty calories and then I had to work to lose it all when I came home. I’m happy to be past that stage and love learning about how to nourish my body correctly.
What is your all time favorite workout and why?
I absolutely LOVE this workout which is a spin off of this one from Heather.
I LOVE leg workouts and I do this one for time so it’s awesome to try to beat my time each time I do it. Leaves me a sweaty mess. The most recent time I did it I used 15# dbs.
What inspired you to start blogging?
My husband and friends. I was constantly taking pictures of whatever I made for dinner and posting them on facebook and they kept saying I should start food blog so I could share the recipes. I resisted a lot at first but finally gave in.

What do you recommend to a new runner? Tips for getting started?
I also found this question kind of humorous because we all know I’m not a running expert! But at the same time it’s kinda perfect for me, because I can tell you what I did to get started!
I used to be really fast. Like 6:30 min mile fast. I ran the 800 for our track team in middle school and I played a million sports so I was in great shape. Then, in high school I hated running. I used to fake asthma problems when we had to do our mile run at volleyball tryouts. In college, I went through phases, where I get sick of the elliptical and I was pick up running on the treadmill but it always faded away quickly.
Over the next few years, after I graduated, I ran off and on but never really stuck with it. I started the couch to 5k program a million times and never got past week 3.
Then about a year and a half ago, I decided to start running. I realized that didn’t like following a training schedule. I just wanted to run when I felt like it. It took the pressure off. So I started running 3-4 days a week. My gym membership expired and it was before we had any of our weights or a treadmill at home, so I kinda felt like I had to, in order to get some exercise (not true!). I did a lot of run/walk intervals when I first started. I would run for 1-2 minutes, then walk for 1-2 minutes. Each day I pushed myself to run a little bit further and walk a bit less but it was a slow process. I remember the day I ran a mile without stopping for the first time in about 12 years. I was so excited! I don’t run a ton of miles. The most I’ve ever run at one time was 4 miles….but for a while, my average was about 2.25 miles per run because that was the distance of a nice loop around my neighborhood. Once I started incorporating weights and circuit workouts into my routine, I found I liked running even more because I didn’t feel like I HAD to do it all the time. And when I discovered HIIT intervals I loved it even more because it went by so fast. Now I only run when I feel like it. If I’m in the mood, I hop on the treadmill or head outside. I cover 2-3 miles and call it a day. If I don’t feel like running, but want some cardio, I do a circuit workout or a tabata. After a few months of HIIT workouts, I’ve found I can run 3 miles without stopping if I want to. Or that I can run an 8 minute mile if I want to.
My advice: ease into it. Don’t be afraid to walk and catch your breath. Push yourself but don’t force it. If your legs are tired, take another rest day. And remember that if you find you don’t love running, there are plenty of other choices out there!
Brittany’s Q’s:
How tall are you?
I’m 5’11. Love being tall, except sometimes pants shopping sucks. I also rarely wear heels because the hubby is only an inch or so taller than me…so it’s good when I wear flip flops and he wears real shoes 🙂
What is a goal you are working towards?
Right now, getting matched to a Dietetic intership. It’s the last thing that I have to complete before being able to take the test to become an RD. Applications are due Wednesday and we find out in April if we matched. Eeeeeeek!
Where do you see yourself in five years?
Hopefully I’ll be an RD with a job I love, living life with my hubby and a kid or two!
Is your current job the same thing you majored in in college?
Haha, no. I majored in Psychology. When I graduated, I spent 6 months working at a preschool and then worked for an insurance company for 2 years. I worked full-time and went to school part-time for a year, then quit my job to go to school full-time. About a year ago I started working a few nights a week at an Assisted Living facility as a Diet Aide, so I serve dinner there 3 nights a week.
Talia’s Q’s:
What is your favorite time of day?
Night. I love sitting around on the couch with my hubby and animals. And I love getting in bed and reading before I fall asleep. I do alright in the morning but afternoons are my least favorite time usually.
Do you believe in love at first sight?
No, lust maybe….but I think love requires you to get to know the person.

Tea or coffee?
Tea when I’m sick, coffee in the mornings. Although I’m not in love with coffee. I think I just like having something hot to drink. I hardly ever drank coffee until I was a senior in college.
Do you have a nickname?
My mom always called me the queen growing up 🙂 Hubby calls me Bean, or Kins, or Lindser.
What is your biggest accomplishment?
If I get an internship, it will be that. As of right now, probably getting straight A’s in every class since I went back to school (#nerd) and becoming a Dietetic Technician, Registered.
What is your favorite tv show?
Tough one. Love Big Bang Theory
What is your bedtime?
Hah….wayyyyy later than it should be. I am world’s worst sleeper. I usually don’t fall asleep til around 1am, I get up at 3 or 4am to feed the animals (don’t judge me, it’s just easier to get up and take 5 minute to feed them and then go back to sleep than it is to fight them off and wake up every five minutes), and then go back to sleep til 7:30 or so.
Lauren’s Q’s:
How many homes have you lived in?
I was born in Minnesota, lived in two houses there and moved to Kansas when I was 8. We lived in the same house until I went to college, then I lived with my (now) in-laws for a few months before we got our first apartment, and then we bought our house 3 and a half years ago.
How often do you use your oven?
Almost daily. I’m kind of addicted to roasting vegetables and baking.
What’s your favorite season?
I kinda love them all. I like living in a place where there are four seasons. But fall is probably my most favorite.
What’s your favorite fruit?
Ugh, too hard to choose. I LOVE fruit. Peaches probably.
If you could have any car in the world, what car would it be?
Not a huge car person, but right now I wish we had an SUV so we could buy big things without having to worry about how we were going to get them home.
What are you favorite pizza toppings?
Fresh mozz, tomatoes and pesto
How many pillows do you sleep on?
2 right now, but only because we’re on the hunt for new pillows that are firmer than the ones we have! Ours are wimpy and we hate them.
Have you ever been stung by a bee?
Yep, I’m pretty allergic, but not enough to need an epi pen. When I was 7 I was stung on the top of my finger and it swelled up terribly.
During my camping orientation trip for college, the guy hiking in front of me stepped on a bee’s nest. I got stung on my ankle and hand. My ankle swelled so much I couldn’t get my hiking boot on the next day and my hand swelled up like a balloon so you couldn’t even see those long thing bones that connect your fingers to your wrist (carpels?)
Sherri’s Qs:
1. What is your favorite article of clothing?
Sweatpants or yoga pants. I pretty much live in them.
2. If you could receive anything in the world as a gift, what would it be?
A vacation. My parents are taking us to Hawaii this year and it was pretty much the best Christmas gift ever!
3. Do you prefer talking on the phone or texting?
Texting for sure. Although sometimes hubby and I facetime when I’m upstairs and he’s downstairs and we hold the phone in front of the animals so it looks like they’re calling each other. Highly entertaining 🙂
4. What is your best high school memory?
I loved high school. I had the best group of friends and we’re all still pretty close now. Almost all of them drove out from Kansas for my wedding in Ohio and we recently all got together again at another wedding. I can’t pick just one memory!
5. Favorite singer/band/group?
I am TERRIBLE at knowing who sings songs. I can sing along really well, although not always with the right lyrics- must to the hubby’s annoyance- but I rarely know who is actually singing. Plus I love all kinds of music, from country to rap.
6. What item do you own that you’ll never get rid of?
I have this terribly ugly old t shirt that has a grizzly bear on the front of it. My mom tried to throw it away several times in high school but I always saved it from the trash/donation pile. It’s super soft and I wear it to bed.
8. What are you most afraid of?
I’m SUPER afraid of semi-trucks. I HATE driving next to them on the highway or passing them. It makes my heartrate skyrocket, every single time… similar to how most people are afraid of things like snakes and spiders. When I first started driving, one started merging into my lane while I was on a bridge and I thought it was going to push me off the bridge. Terrifying. I’m also afraid of heights…but I don’t let it stop me from doing things up high 🙂
Whew…so there you have it! Probably more than you ever wanted to know about me!
Today’s Workout:
A couple of weeks ago at the grocery store I bought a pack of paper plates so I could try out a paper plate workout. I did some research on some of the moves you could do and put together my own workout!
Here’s what it looked like:
I loved this workout. I worked up quite a sweat and could really feel my thighs working!

We have so much in common! Especially with the same lunches every day and being super picky and a carb addict, and not believing back then that I’d be eating what I do now. But you do NOT sleep woman, IDK how you do all you do! This explains all those late night workouts! Thanks for sharing that leg workout. I need a leg workout for Wednesday morning and this might be it!
