Take your dinner on an exotic vacation with this super simple Indian pizza recipe.


  • For the Pizza
  • 2 pieces of naan
  • 1/2 c curried sweet potato sauce
  • 1/2 c lentils, cooked
  • 2 cups vegetables, diced (cauliflower, peppers, onion)
  • 810 medium shrimp, cooked and chopped
  • goat cheese, crumbled
  • For the Sauce
  • 1 sweet potato, roughly chopped
  • 3/4 c vegetable broth
  • 12 tsp grated fresh ginger
  • 12 tsp curry powder
  • 1/2 c chopped leeks


  1. For the Sauce
  2. Add a little EVOO to a pan and saute leeks over medium heat until soft.
  3. Add the chopped sweet potato, broth and spices and bring to a boil.
  4. Reduce heat and simmer until sweet potatoes are tender.
  5. Transfer mixture to a blender or use an immersion blender and blend until smooth.
  6. Add more broth if necessary to thin out the sauce and adjust spices to taste.
  7. For the Pizza
  8. Toss vegetables lightly in EVOO and season with curry powder. Roast at 400 degrees until desired tenderness is reached. Remove from oven.
  9. If using frozen naan, cook at 400 degrees for 5-6 minutes to heat through. Remove from oven.
  10. Spread sauce onto naan pieces.
  11. Top with lentils.
  12. Add roasted vegetables and chopped shrimp.
  13. Top with crumbles of goat cheese.
  14. Bake for 6-8 minuts until heated through.
