Hi Friends!
As promised, I have a new recipe for you. Indian Pizza.
Basically, it’s awesome. For the crust, I used my favorite Trader Joe’s frozen naan. For the sauce, I used some leftover Curried Sweet Potato Soup. For the recipe I tried to give you quantities to make a much smaller amount of soup! For the toppings, I used curried roasted vegetables, lentils, shrimp and goat cheese. Sound good?

Take your dinner on an exotic vacation with this super simple Indian pizza recipe.
- Prep Time: 25 minutes
- Cook Time: 5 minutes
- Total Time: 30 minutes
- Yield: 2 1x
Ingredients
- For the Pizza
- 2 pieces of naan
- 1/2 c curried sweet potato sauce
- 1/2 c lentils, cooked
- 2 cups vegetables, diced (cauliflower, peppers, onion)
- 8–10 medium shrimp, cooked and chopped
- goat cheese, crumbled
- For the Sauce
- 1 sweet potato, roughly chopped
- 3/4 c vegetable broth
- 1–2 tsp grated fresh ginger
- 1–2 tsp curry powder
- 1/2 c chopped leeks
Instructions
- For the Sauce
- Add a little EVOO to a pan and saute leeks over medium heat until soft.
- Add the chopped sweet potato, broth and spices and bring to a boil.
- Reduce heat and simmer until sweet potatoes are tender.
- Transfer mixture to a blender or use an immersion blender and blend until smooth.
- Add more broth if necessary to thin out the sauce and adjust spices to taste.
- For the Pizza
- Toss vegetables lightly in EVOO and season with curry powder. Roast at 400 degrees until desired tenderness is reached. Remove from oven.
- If using frozen naan, cook at 400 degrees for 5-6 minutes to heat through. Remove from oven.
- Spread sauce onto naan pieces.
- Top with lentils.
- Add roasted vegetables and chopped shrimp.
- Top with crumbles of goat cheese.
- Bake for 6-8 minuts until heated through.

PS. If you’re a meat eater, tandoori chicken would be AWESOME on this instead of shrimp.

I seriously SERIOUSLY might go to the store this afternoon and get the ingredients for this. Indian pizza sounds RIGHT up my alley. Okay, actually.. Anything with curry is my weakness in life! 😉

it’s funny. that soup is really the only thing i ever use leeks for. but they’re so good!

I have a love/hate relationship with Indian food. I love Indian Spice and will incorporate them into my cooking at home but the only time I’ve ever loved Indian food was leftover and when I was intoxicated 🙂

Normally I am plain and simple with my pizza, tomatoes, mozzarella, basil, olive oil and that’s that, but this looks to die for!
Indian is my favorite ethnic cuisine. There is no end to the different flavors, spices, and dishes to try. I have always wanted to make pizza with naan, looks like it’s now’s the time, thanks for the recipe!

I love Indian food! And those Trader Joe’s naan–what a creative way to use them, I love this! And sweet potatoes. And curry. Definitely keep this in mind for those nights I was something with lots of flavor–but don’t want to spend a lot of time cooking 😀 Plus I’m hopeless at making real pizza crust, so I love any “cheater” version. Naan is definitely a “must-order” if I get Indian food–as is Chana Palak. Great sauce with lots of spinach and chickpeas. And now I really want to get Indian takeout on my way home for dinner ;D
