Hi Friends!
Confession time. Prior to this week, I’m not totally certain when the last time I had a salad was.
I know, I know. Bad healthy living blogger right? Well don’t judge me too harshly. I’ve still been getting my veggies:
See? But as far as salads go…not so much. Until this week. Over the weekend, the hubby and I went to our favorite restaurant and I noticed this on the menu:
I really wanted that salad, but I wasn’t in the mood to pay $10 for it, especially when I had all the ingredients at home!
So I’ll give you one guess what we had for dinner the next night?!
Baby Spinach
Roasted Sweet Potatoes
Sliced Pears
Diced Red Peppers
Sliced Strawberries
Pecans
Fresh Goat Cheese
And I guarantee this didn’t cost $10.
So don’t be like me and go 2 months without…
Have a salad 🙂

Haha I need a salad today … eating out so much during the move and now eating at the hotel is catching up to me! I’m not feeling like myself … I need to get some veggies in my system! 🙂
Lindsay says
i feel ya! i wouldn’t do well with that either!
Tina @ Best Body Fitness says
Ohhhhh that looks soooo like a salad I would love!
Lindsay says
make it!!! it was so good. i was sad when i was done eating 🙂
Brittany @ GOtheXtraMile says
Any salad with fruit I am in love with!
Lindsay says
me too! they’re my favorite kind!
Sarah @ The Smart Kitchen says
1. No such thing as a “bad” healthy living blogger.
2. I try desperately to order ANYTHING but a salad when I go out to eat. The price for lettuce is astronomical…and you have proven my point that it is just as easy (and a whole lot cheaper) to make at home. 😉
Lindsay says
agreed….on both counts 🙂
Tara Burner says
I love salads…eat them 4-5 days week! 🙂
Abby @ Abz 'n' Oats says
Mmm 🙂 pecans and strawberries on a salad. You’re a girl after my own heart! lol.
Lindsay says
so good right?! love that combo!
Olivia says
That’s totally why I never get salads at resturants. I always feel like for the same price you can get some sort of delicious thing you couldn’t make yourself! Or, some healthy meat or chicken and a side salad!
Lindsay says
exactly! overpriced and overrated at most restaurants i’d say!
Lindsay @ In Sweetness and In Health says
Haha love it. I have salads probably 5-6 times a week. I just find that it’s an easy way to get in my veggies!
Lindsay says
good for you!!!! i think i do better in the summer 🙂
Heather (Where's the Beach) says
Love strawberries and spinach together for a salad. Such a great combo!
Lindsay says
strawberry spinach salad is one of my all-time favs. so good!!
Lori Lynn says
That does look really good! I’ve never really been a big salad person. I love vegetables and eat a lot of them, but the ‘greens’ have just never been my favorite. When I’m grocery shopping, I’ll go by the lettuce and think I should buy some, but then I’m never sure what to have to go with it. I need to work on that!
Lindsay says
i don’t like regular lettuce either. but i do like spinach salads. and when i put lots of fruit and other veggies on there it makes it easier to eat. the greens are almost like an afterthought 🙂
Courtney @ Sweet Tooth, Sweet Life says
Strawberries in salads is one of my favorite things! I actually really like adding blueberries, apple, pineapple, or grapes sometimes too (mostly in the summer on those though), especially with pecans and some sort of soft cheese.
Your salad photo totally caught my eye – so bright and colorful! 🙂
Lindsay says
omg me too! i LOVE fruit in salad. strawberry spinach salad is one of my all-time favs!
Laura @ Sprint 2 the Table says
It always amazes me how much restaurant charge of salads – especially when the stuff on top of them isn’t always the most fresh.
It looks to me like you had some awesome non-salad veggies. Besides, who says you have to have them in salads?! They can be more fun served in other forms!
Lindsay says
i agree. salad is not the only way!
amber says
That looked like one yummy salad.
Lindsay says
i devoured it! so goooood!
Parita @ myinnershakti says
I love recreating restaurant dishes…usually healthier and alaways cheaper!
Lindsay says
exxxxxxactly!
Mattie @ Comfy and Confident says
I hate how restaurants make salads so expensive! It is so frustrating to me. I love how you fixed the problem and made it at home! brilliant.
Lindsay says
thanks! it was so convenient that i already had all the ingredients 🙂
sarah @ sarah learns says
i used to bring a salad for lunch every.single.day. and i haven’t done that in MONTHS. i blame myself for cooking more & always having leftovers to eat.
Lindsay says
leftovers are definitely better than salad most days 🙂 OR leftovers ON salad. win!
Rachel @ The Avid Appetite says
I actually have a love/hate relationship with salads. Sometimes I love them so much and other times then make my skin crawl a little. If I do eat salad, it needs to be packed with goodies…just like the one you made! It’s actually on my list for next week to make some delicious salads!
Oh and btw…sadly $10 for a salad in NJ or NY is completely standard and actually a reasonable price…
Lindsay says
i know!!! you guys have crazy prices out there!
Sabrina @ Nutritiously Sweet says
Haha! Well if it makes you feel better, I don’t know when was the last time I had one either before the two I had this past week. I really have to be in the mood for it, otherwise I’m always in the mood for cooked veggies 🙂 Love the salad, looks good!!!
Lindsay says
me too!!! i definitely have to be in the mood. otherwise it’s like a chore to eat!
Cat @ Breakfast to Bed says
I could eat a salad for dinner every.single.night. cover that bitch in some goat, blue, or feta, and it’s ON LIKE DONKEY KONG.
Lindsay says
hahahaha i’m pretty sure i could eat roasted sweet potato every single night for dinner.
Steve @ the black peppercorn says
That is a great looking salad. We are trying to have salads more frequently here as well!
Lindsay says
i’ve found it’s much easier to eat them when they’re pretty like this 🙂
Heather says
I have a meal plan at the college I work for so I try to eat a salad 5x a week. There are some days where I eat 2 meals there so I at least I eat one salad a day.
That being said, the salad bar NEVER changes so I eat the same salad every day. It gets very boring.
Lindsay says
that sucks!!! tell them they need to spice it up a bit!! 🙂
Heather @ Better With Veggies says
I’ve always wondered why salad can be SO expensive at restaurants sometimes. It’s not something I get often when I’m eating out and that’s one of the reasons. 🙂
Lindsay says
it’s so frustrating! i’ve definitely started ordering them less!
Jess says
I am suuuuuch a salad person – more so in the summer when local veggies are in season but there is NOTHING better than a salad like the one you had. Goat cheese (the trader joe’s blueberry one is freakin’ amazing) with fruit (strawberries, blackberries, apples or pears), lots of fun veggies (snap peas are good!) and a super-yummy light dressing. I love this! I also love your other foodie pics, I was drooling a wee bit, not gonna lie 😉
Lindsay says
i agree….it’s way easier for me to eat salads in the summer!
Stefanie @TheNewHealthy says
Yum! I love sweet potatoes in a salad! Especially when said salad doesn’t cost 10 bucks!
Lindsay says
isn’t it the best…i could live on roasted sweet potatoes!
Theresa says
roasted sweet potatoes in a salad?! i cant believe i never thought of that one before 🙂
Lindsay says
omg you MUST TRY!!!! sooooo good.
lisa@thedailyrundown says
It’s a good thing I am horrible at taking photo’s because if my food pic’s looked as good as your’s I would be starving All. The. Time.
Lindsay says
aww, well thank you 🙂 but trust me…it doesn’t all look that pretty!
Sarah K. @ The Pajama Chef says
salads are good, but i definitely have a love-hate relationship with them…i get tired of them after awhile. i need to make fancy salads like yours more often!
Lindsay says
they’re not actually fancy, they just look that way 🙂
Talia @ Bite Size Wellness says
Goat cheese is my favorite. Fruit in my salad is not. I am weird like that…but in any case I am sure yours was way better than the restaurant version any way! I have to say though…in NYC $10 for a salad is cheap. isn’t living here crazy??
Lindsay says
no fruit in the salad? that’s my fav part 🙂
Jen@FoodFamilyFitness says
I for sure need more salads in my life!!! Thanks for the reminder 🙂
Lindsay says
you’re welcome! make them pretty 🙂 more fun to eat!
Charlotte says
I lllllooooovvvee salads! But I ruin their healthiness by using too much dressing & cheese… Ha whoops
Lindsay says
haha i’m not a huge dressing fan…but i looooove cheese!
Lora @ Crazy Running Girl says
I love salads! I actually started eating them for breakfast. This sounds delicious!
Lindsay says
breakfast, eh?! i’m a cereal girl all the way 🙂
Lora @ Crazy Running Girl says
I was too until I made the switch… I never thought I’d make it without cereal to kick off the day! Salad is a pretty good replacement. 🙂
Dena @ 40 Fit in the Mitt says
I’m on a goat cheese in my salad kick right now! Salad prices in restaurants are absolutely ridiculous.
Lindsay says
goat cheese…SO GOOD!!!
Matt @ The Athlete's Plate says
Haha I basically eat a salad with dinner every night!
Lauren @ Lawfully Wedded Wife says
Haha not eating salad definitely does NOT make you a bad healthy living blogger! I love a good salad but I’m not one that eats them every day…cuz you’re right that there are other ways to get your veggies in! 🙂 That salad looks great though!
Lindsay says
it was great! but i’m not a salad every day person either 🙂
