Cranberry Ginger Energy Bites
These Cranberry Ginger Energy Bites are the perfect healthy snack to power you through until lunch or dinner! Make them mini and enjoy a few when you need an energy boost!
cup pumpkin seeds
Tbsp chia seeds
- 2 Tbsp grated fresh ginger
cup 100% pure pumpkin puree
- Place the almonds and pumpkin seeds in a food processor and process until well chopped.
- Add dates, cranberries, ginger and pumpkin and process until combined. Taste and add more ginger if desired.
- Roll into balls and store in the freezer.
